Fried ice cream is a delicious dessert that appeared in Thailand. There, cooks cook it on a freezer table, the surface of which is cooled to -20 degrees. We suggest considering how to make fried ice cream at home, slightly changing the basic recipe.

What is fried ice cream?

In the classic version, fried ice cream is a mixture of natural ingredients (yogurt or cream), which is prepared on the freezer. The cooking process takes no more than 2 - 4 minutes.

The confectioner pours a thin layer of the milk mixture on the surface, which instantly freezes. Then, using special metal spatulas, it begins to crumble the resulting mass. After splitting it into 3 wide strips and twisting each into an ice-cream roll.

Since a freezer for fried ice cream is quite difficult to buy (its cost ranges from 80,000 rubles), some chefs have finalized the recipe and added special flavor notes to it. They offered to really fry ice cream. But how does it not melt during cooking? The secret lies in a special breading, or batter.

To make a classic fried ice cream you will need the following kitchen utensils:

  • flat metal baking dish or tray;
  • spatula (for uniform spreading of the mixture);
  • sharp spatula (for twisting rolls).

You can choose the ingredients:

  • fatty natural cream - 300 ml;
  • yogurt (at least 3.2% fat) - 300 ml.

In the mixture for ice cream prepared according to the classic recipe, it is not customary to add additional components (condensed milk, milk, syrups).

Cooking method:

  1. Place the tray or baking dish in the freezer (for about 1 to 2 hours).
  2. Whip the cream until sour cream. This can be done manually using a whisk or a blender.
  3. Remove the form from the freezer, apply a thin layer of the mixture on it. Try to keep the mass even, otherwise it will freeze unevenly, ice cream will break.
  4. Put the tray in the freezer for 30 minutes. Periodically check the condition of the mixture, it should not freeze too much. Otherwise, fried ice cream will turn into crumbs.
  5. Remove the mass from the refrigerator, cut it into strips (3-5 cm) with a sharp knife.
  6. Using a spatula, carefully roll the ice cream into rolls.
  7. Place each roll in a cup, garnish with chocolate or fruit.

As you can see, making fried ice cream is very simple. The most important rule is not to freeze the mixture. If you are making dessert for the first time, it is best to periodically check the readiness of freezing cream or yogurt.

Cooking in batter

To properly prepare ice cream in batter, you will need a deep fryer. The highlight of the dessert is a hot batter.

Ingredients:

  • natural ice cream - 0.5 kg;
  • flour (wheat or corn) - half a glass;
  • chicken egg - 1 pc.;
  • baking soda - 15 g;
  • vanilla sugar - 1 sachet;
  • boiled water - 200 ml;
  • vegetable oil - a glass.

Cooking process:

  1. Cover the tray on which you will make dessert with parchment.
  2. Make balls from ice cream and put them in the freezer for 1.5 - 2 hours.
  3. Take a bowl for batter, it should be cold.
  4. Add soda and egg to flour. Beat until light foam appears.
  5. Add vanillin and water to the resulting mass, continue whisking.
  6. Warm the oil well.
  7. Dip each scoop of ice cream in a batter and place in a deep fryer
  8. Put the finished dessert on a kitchen towel to clean the extra room.

When making fried ice cream using this recipe, it is important that the oil is well-heated. Bubbles should form on its surface. Otherwise, the ice cream will melt.

With nuts

Nuts are used in almost every dessert; fried ice cream is no exception. To make a delicious treat, you will need a batter again.

Ingredients:

  • creamy ice cream - 400 g;
  • nuts (walnuts, almonds, cashews) - 200 g;
  • cookies (it is better to take a dry cracker) - 150 g;
  • milk (3.2% fat) - 200 ml;
  • flour - 70 g;
  • vegetable oil - 300 ml.

Cooking process:

  1. Use a knife to chop nuts and cookies.
  2. Mix flour with milk, the consistency of the finished composition should resemble thick sour cream.
  3. Heat oil.
  4. Cut the ice cream into small pieces.
  5. Gently dip the ice cream in batter, then in cookies and nuts.
  6. Place dessert in hot oil.

Fry ice cream for 40 seconds on each side.

In coconut flakes

If you add only coconut to the fried ice cream, the dessert will not work. Therefore, chefs suggest introducing an additional component - breadcrumbs.

Ingredients:

  • natural ice cream - 400 g;
  • coconut flakes - 200 g;
  • breadcrumbs for breading - 200 g;
  • chicken egg - 3 pcs.;
  • deep-frying oil - 400 ml.

Cooking process:

  1. Beat eggs. It should make a dense foam.
  2. Separate the chips and breadcrumbs into plates.
  3. Slice the ice cream in portions.
  4. Dip a portion of the ice cream in coconut flakes, then in the egg and crackers.
  5. Put the resulting treat in the refrigerator for at least 40 minutes.
  6. Heat oil.
  7. Dip the ice cream balls in oil for 20 to 30 seconds.

The recipe for fried ice cream with coconut can be modified by adding various ingredients (fruit toppings, berries, chocolate).

With cornflakes

Fried ice cream with corn flakes is very popular, and it is quite simple to make it at home.

Ingredients:

  • ice cream - 400 g;
  • sweet flakes - 300 g;
  • chicken egg - 1 pc.;
  • wheat or corn flour - 45 g;
  • vegetable oil - 100 ml.

Ingredients:

  1. Make balls from ice cream, freeze them well.
  2. Grind the flakes with a blender into crumbs.
  3. Beat the eggs into foam.
  4. Dip each ball in flour, egg mixture and cereal. Put in the refrigerator for an hour.
  5. Heat oil.
