Georgian green tomatoes are an incredibly tasty dish. Having tried it at least once, you will cook this yummy time and time again.

Classic green tomatoes in Georgian

Essential Ingredients:

  • green tomatoes - about 2 kg;
  • pepperoni peppers - up to 10 pieces (depending on how spicy you like the dish) or chili peppers (for greater severity);
  • head of garlic;
  • greens - dill, parsley, cilantro - one large bunch;
  • celery stalk;
  • salt to taste.

Choose sturdy tomatoes, about the same size.

Cooking Technique:

  1. We carefully prepare all the ingredients - wash, wipe to dryness.
  2. We cut the prepared vegetables almost to the base - you should get a kind of pocket. Pour salt into it and rub it, evenly distributing the spices. Then put off the tomatoes.
  3. While the tomatoes are letting the juice, you need to cut the greens as finely as possible, chop the pepper, garlic, and mix everything.
  4. Now in each tomato pocket we lay the resulting aromatic mixture (about a tablespoon for one tomato).
  5. We put the stuffed tomatoes in a jar / bowl, close the lid and send to a cool dark place.
  6. After 10 days, Georgian-style stuffed green tomatoes are ready for use.

Spicy tomatoes without sterilization

Dear hostesses, in order to prepare green tomatoes, it is not necessary to sterilize them. We offer three simple ways.

This amount of ingredients is placed in a 1 liter jar.

We will need:

  • green tomatoes - 500 grams;
  • garlic - 2 prongs;
  • bay leaf - 1 pc.;
  • peppercorns - 4 pcs.;
  • cloves and other spices to taste.

Please note that in two liter cans one liter of brine is placed.

Marinade: for 1 liter of water we take 1 tbsp. l sugar, 1.5 tbsp. l salt, 2 tbsp. l vinegar.

In order to make the brine tastier and the tomatoes more fragrant, instead of the usual vinegar, add wine or apple concentrate.

Cooking:

  1. First, blanch the prepared tomatoes for a couple of minutes.
  2. In parallel, prepare the marinade.
  3. We sterilize the jars first, cool, then spread the chopped garlic cloves, lavrushka, cloves.
  4. We put the tomatoes on top and pour the brine brought to a boil.
  5. Just before sunset, add vinegar.
  6. Wrap up the preservation and store it in the cellar, if possible.

We used to combine tomatoes with pepper in fresh summer salads. We offer to cook green tomatoes for the winter with bell pepper.

The kit includes:

  • green tomatoes - 500 grams;
  • bell pepper - half the fruit;
  • head of garlic;
  • spices and fresh herbs to taste. It can be chili, black, white or pink peppercorns, mustard and cloves.

Marinade: for 400 ml of water it is necessary - 1/3 tbsp. l salt, ½ tbsp. l sugar, 35 ml of vinegar.

Technique of execution:

  1. Initially sterilize the required number of cans.
  2. Cut the half of the pepper in any way you like, and put it in a glass container, where spices, garlic and herbs are sent.
  3. We put tomatoes in a jar.
  4. Pour boiling water, cover and steam for a quarter of an hour.
  5. Pour water and refill the tank with boiling water.
  6. As soon as 15 minutes have passed, we pour the water again, we mix the necessary ingredients for the marinade into it, also about 50 ml of pure water and bring the resulting brine to a boil.
  7. Pour the marinade into the jar, close.

Such a fill (three times) allows you to do without the sterilization process, and the tomatoes are moderately sharp and aromatic.

Beetroot is a natural dye, so adding it to green tomatoes, you can not only diversify winter harvesting, but also give them a beautiful color.

Ingredients:

  • tomatoes - 1 kg;
  • beets - 2 pcs.;
  • hot chili pepper - 1/3 part;
  • garlic - 3 cloves;
  • greens to taste.

Marinade: per 1 liter of water - 2 tbsp. l sugar, 1 tbsp. l salt, 1 tsp vinegar essence.

Cooking method:

  1. Washed tomatoes are poured with boiling water and left for 10 minutes.
  2. Large specimens are cut into smaller pieces, and small ones are pierced with a needle several times.
  3. Grind the garlic, chili pepper, herbs and put the resulting mixture into pre-sterilized jars.
  4. We lay tomatoes, leaving a little space.
  5. Grind beets into thin slices or mugs and also place in a glass dish, distributing around the edges.
  6. We bring the marinade to a boil and pour the vegetables.

Winter preservation

The most delicious recipe.

List of required ingredients:

  • tomatoes - 1 kg;
  • dill - a small bunch;
  • peppercorns - 10 pcs.;
  • garlic, salt (ideally sea) - to taste.

Follow the steps:

  1. Pre-washed tomatoes are placed in jars.
  2. Add pepper, garlic, medium chopped dill, salt.
  3. Pour with cool boiled water, not topping 1 cm to the edge.
  4. Cover the jar with a lid and shake a little.
  5. We leave the jar in a warm room for several days, putting it in a container, since fermentation will begin, and the resulting brine will flow out. Accordingly, you need to store such tomatoes in the cellar.

Cook without cooking with garlic and herbs

Tomatoes prepared in this way are very tasty and piquant, the only negative is that they are not stored for long. Natural preservatives in this case are salt and hot pepper. It is advisable to eat such conservation for several months.

Ingredients:

  • fruits of tomatoes - 1 kg;
  • garlic - a few cloves;
  • parsley - a small bunch;
  • dill umbrella - 1 pc.;
  • black pepper peas - 6-7 pcs.;
  • vinegar essence - 1/2 tsp;
  • bay leaf - 2 pcs.;
  • sugar - 1 tbsp. l .;
  • water - 350 ml;
  • salt - 1 tbsp. l

Cooking method:

  1. Washed tomatoes are cut crosswise (namely, we cut, not cut).
  2. We divide the garlic into cloves, chop the greens. The resulting mass is stuffed with tomatoes.
  3. We put the tomatoes in a jar, where we first place the dill umbrella, bay leaf and peppercorns.
  4. Pour boiling water. We pour the first fill and pour boiling water again.
  5. Once the water has cooled a little, pour it into the pan, add salt and sugar. Bring to a boil and pour the resulting brine into tomatoes. Top add the essence.

Despite such a variety of recipes, green tomatoes can be cooked in different ways. After all, surely every housewife at least once, but canned tomatoes and has her own unique recipe checked by time and taste preferences of relatives.
