An unusual recipe, which, despite the ingredients used, is quite suitable for a family dinner. The most important thing is to eat it in a warm form, since a cooled dish will no longer be so tasty.

  • a pound of pumpkin;
  • 150 grams of rice;
  • about 100 grams of raisins;
  • a piece of butter;
  • a few tablespoons of mayonnaise.

Cooking process:

  1. We start cooking with the preparation of rice. The indicated volume of 150 grams is meant in dry form. Rice must be boiled. To do this, wash it, wait for the water to boil, pour the groats into it and cook for about 20 minutes over low heat.
  2. While the process of cooking cereals is going on, you need to pour raisins for 10 minutes, and then drain the water from it.
  3. The pumpkin, like all other vegetables, and fruits must be thoroughly washed, skinned and cut into squares. We put what we’ve got into a hot pan and fry for at least 10 minutes.
  4. When the pumpkin becomes soft, you can continue to cook further. Pour to it already boiled rice and softened raisins. At this step, you can add all the necessary spices to your liking.
  5. Put the resulting mass into the selected baking dish, spread on top with mayonnaise. It can be replaced with sour cream or, for example, grated cheese. Clean in a hot oven and keep there for at least 30 minutes with a temperature of 180 degrees.

With chicken

A low-calorie dish, perfect for those on a diet. The main thing is to use only chicken. The result is a full dinner.

Necessary ingredients for cooking:

  • one onion;
  • approximately 300 grams of chicken;
  • a little cream with a minimum percentage of fat content;
  • herbs and spices to taste;
  • 50 grams of cheese;
  • 300 grams of pumpkin.

Cooking process:

  1. First, make pumpkin puree. To do this, peel it from the skin, cut it into pieces and send it to boiling water for 20 minutes, so that it becomes soft. After that we turn it into mashed potatoes.
  2. In the resulting mass, spread the grated cheese, butter and pour the cream. All this can be a little pepper.
  3. In a hot pan with a small amount of oil, first fry the onion rings, then add the chicken previously cut into small squares. It is best to cover the lid, reduce heat and simmer for about 15 minutes.
  4. After everything is ready, take a baking dish and turn on the oven 200 degrees. The chicken is laid out in the first layer, and then the pumpkin mixture. If desired, you can still pour cheese on top. Keep in the oven for about 20 minutes.
