It will take two cups of flour, which must first be sifted. The flour will be saturated with oxygen and make the dough more airy. Pour the flour into a bowl, add half a teaspoon of salt and sugar. Stir well. Make a small indentation in the mixture.

Grate 150 mg of hard cheese on a coarse grater. Set it aside.

Kefir must be set in advance from the refrigerator, it should warm to room temperature. Its fat content can be any from 1 to 2.5%. Measure out a glass of fermented milk drink. Stir half a teaspoon of soda in it. Kefir acid neutralizes the baking powder. This is confirmed by an increase in the volume of the mixture.

In parts, about 1/3 pour kefir into a bowl with flour, gently mixing the resulting mass. Add grated cheese to the finished mixture and lay it on the table to knead the dough.

In the resulting mass, make a small deepening and pour 50 grams of vegetable refined oil into it. Knead the dough until it stops sticking to your hands. It should be soft enough, but not fluid.

If the dough is hard, add some more kefir to it. If it spreads and does not stick, a pinch of flour. The finished dough must be wrapped in cellophane and left to "rest" for 30 minutes. During this time, the flour fibers swell, the dough acquires a uniform elastic structure and can easily be rolled out.

A long sausage with a diameter of 5-6 cm is formed from the mass, which is cut with a knife into pieces with equal sides. Balls are rolled from them. Spread the workpiece by hand, bring the rolling pin to a thickness of 0.5-1 cm.

The semi-finished product is fried on both sides in melted butter until golden brown. Finished cakes are removed from the pan and laid out on a paper towel. They will be especially delicious and crispy when slightly cooled.

In a dough, break a medium-sized chicken egg. Add a tablespoon of granulated sugar. Half a teaspoon of salt, 20 grams of melted butter and a glass of kefir (250 ml).

After the dough gathers in one lump, it must be kneaded. It will be quite soft and porous.

Wrap the resulting semi-finished product with cling film and put in a warm place for half an hour. The dough will rise and double in volume. It will need to be precipitated and again left under cellophane for about the same time.

For cooking, you need 200 grams of minced meat. It is not necessary to fry it in advance. But be sure to salt and pepper, mix with a chicken egg, knead and roll into balls, about 5 cm in diameter. It is better to take "home" minced meat, consisting in half of pork and beef.

Pour yogurt (1 cup) into a bowl, warmed to room temperature. We stir in it half a teaspoon of baking powder (soda). There we break one egg. Whisk thoroughly with a whisk.

Pour the floor of a small spoonful of salt to the resulting mixture. We add two tablespoons of vegetable oil to give the test elasticity. Stir the mixture. Pour in portions two cups of sifted flour. At the same time, mix everything well.

We put the lump on the table and prepare the dough. Carefully mixed prefabricated wrap with foil. Cover with a towel. Leave for 30-40 minutes at room temperature.

From the dough we form balls approximately equal in size to the minced balls. Roll out into cakes to a thickness of 1 cm. Put the filling in the middle. We collect and pinch the edges. Flatten the workpiece with your hands. We put the glued side on the table and roll it again to a thickness of half a centimeter.

Kefir tortillas with chicken in a pan

The prototype of this dish is Mexican quesadilla - a tortilla with chicken filling, which has a very rich, rich taste.

 

To prepare the snack, we need to bake a fresh kefir cake. To do this, take a glass of kefir at room temperature, add to it half a teaspoon of soda and salt. Leave the mixture for 10-15 minutes. And then pour it into the sifted flour, which will need about 2.5 cups.

Knead soft but not spreading dough. Set it aside to swell under cling film for at least half an hour. Form thin cakes (0.3-0.4 cm). Fry them on both sides in a hot frying pan without oil. Fold in a stack and set aside.

To prepare the filling you will need:

  • 50 grams of hard cheese;
  • 100 grams of chicken;
  • half a large head of onion;
  • ½ sweet bell pepper;
  • a tablespoon of tomato paste;
  • salt, pepper to taste.

We cut all the ingredients into cubes and fry in olive oil until tender. Put in a saucepan, add tomato paste, salt, pepper, simmer over medium heat without a cover for 3-4 minutes.

Fresh champignons are suitable as a filling. It will take 150 grams of mushrooms. They should never be washed. Carefully brush off the top skin with your hands or a knife.

We cut champignons into thin plates. Add half the onion turnips to them. Fry in vegetable oil. Let the excess fat drain onto a paper towel.
