This sweet and sour berry is used to make juices, compotes and, of course, jam. The result is not only delicious, but also healthy desserts. It’s very easy to make honeysuckle jam. The recipe for the winter will save sweet treats until the cold weather.

Honeysuckle Jam - a classic recipe

For the simplest classic recipe, a minimum of products is used. Only berries (900 g), the same amount of sugar and 250 ml of water.

  1. The honeysuckle for the discussed treat should be fresh, ripe, but not overripe. It is important to select whole beautiful berries without defects. In no case should you add fruit with decay to the jam. In this case, it definitely will not survive until the winter.
  2. Sugar and water are added to the spacious pan. The ingredients are brought to a boil with constant stirring over medium heat. Sugar should be completely dissolved in a liquid.
  3. As soon as the sweet grains of sand cease to be noticeable in the pan, you need to boil the syrup on low heat for another 12 minutes.
  4. Berries gently spill out into boiling liquid. As soon as the syrup boils again, the pan is removed from the heat and removed for the whole night in cool.
  5. In the morning, the mass is boiled again with constant stirring for 12-15 minutes. If necessary, foam is removed from it with a wide wooden spoon.
  6. Ready sweets are poured into sterilized containers of glass and closed with capron lids.

You can taste the jam as soon as it cools.

Five minute

With the right dessert, you will end up with a delicate, jelly-like treat. It will be an ideal filling for pies and cakes. For "five minutes", only 800 g of sugar and berries are used.

  1. It is very important to use enameled cookware for cooking. You can take containers from other non-oxidizing materials. The pelvis will do.
  2. The fruits are carefully sorted, washed and dried with a paper towel. Then they turn into a mess with a blender and are transferred to the selected dishes.

  2. Pure fruits are laid out on a paper towel so that all the water comes out of them. Excess liquid can affect not only the consistency, but also the taste of the treat.
  3. Turn the berries with a blender or meat grinder into a homogeneous mixture.
  4. Cans are washed with soda and sterilized on a kettle, in an oven or microwave.
  5. The berry puree is poured with sugar and thoroughly mixed.
  6. The sweet mass is transferred to banks and rolled up.

Honeysuckle jam without cooking is well preserved for a long time. Therefore, you can cook it for the winter. Delicious containers must be in the refrigerator or cellar.

Cooking with the addition of liquor for the winter

The specified alcoholic beverage can affect not only the aroma, but also the taste of the goodies. We must not forget that jam with liquor is more nutritious. In addition to Amaretto (60 ml), for its preparation you need to take: 900 g of berries, 650 g of granulated sugar, half a lemon, 2 tsp. cinnamon.

  1. Pure and dried honeysuckle is poured into an enameled basin.
  2. Cinnamon, granulated sugar is added to the berries, poured with freshly squeezed lemon juice on top. The amount of sugar can be changed to your taste, given the sweetness of the fruit.
  3. A container with the listed ingredients must be left at room temperature for at least 3 hours. During this time, the berries will give juice and absorb the rest of the fragrant components.
  4. If, after a specified time has passed, there is too little fluid in the pelvis, you can correct the situation with water.
  5. Next, the jam is brought to a boil and cooked over medium heat for 25 minutes. Periodically, the container with it must be shaken.
  6. The foam is carefully removed from the surface. At this stage, you can pour liquor into the berry mass.
  7. Jars rolled up with lids are turned over and wrapped until completely cooled.

Jam is stored in a cool dark place.

In a slow cooker

This recipe is perfect for housewives who know the value of time. It will allow you to make jam quickly and without any problems. To do this, take 800 g of sugar and honeysuckle.

  1. Only whole, strong berries, preferably freshly picked from the bush, will be used in the process. Leaves and stalks are removed from each berry.
  2. The honeysuckle is washed gently with water and then dried with a cloth towel.
  3. Berries are placed in a deep container and filled with sugar. Sand is added in small portions, after each of which the mass is thoroughly mixed.
  4. Dishes with honeysuckle and sugar are left for 9 hours. In this case, the ingredients will need to be stirred periodically.
  5. The resulting mixture is transferred to the bowl of the device and cooked in the "Extinguishing" mode for 65 minutes.

After the sound signal, the mass can be laid out in banks and rolled up.

With citric acid

Citric acid is added to the dish for a reason, it will prevent its sugaring. Enough 2-3 g of lemon. And, besides it, you will need to take: 900 g of berries and granulated sugar, 1 tbsp. pure water.

  1. Sugar syrup is made from liquid and sand.
  2. Pre-washed and dried berries are dropped into boiling liquid. When the ingredients are boiled together for 7-9 minutes, you can remove them from the heat and leave at room temperature for 8-9 hours.
  3. Next, the container with the sugar mass is again sent to the fire and brought to a boil. The delicacy is cooked for 7-9 minutes and left to infuse.
  4. The process is repeated until all the berries are at the bottom of the pelvis or pot.

Only at the last cooking, lemon is added to the products. After that, you can roll jam in jars.

With strawberry

A particularly tasty treat from honeysuckle is obtained with the addition of strawberries. Berries are taken at 600 grams. Sugar will need 2 times more. It is best to cook dessert in a slow cooker.

  1. The washed berries are mixed with sugar and left at room temperature for several hours.
  2. The mass is infused until a sufficient amount of syrup for cooking appears in the container. In this case, the berries and sugar must be constantly stirred.
  3. The resulting mixture is transferred to the multicooker bowl and cooked for 55 minutes in the “Stew” program.

Ready jam is poured into sterilized glass containers.
