Tea rose pleases with its appearance, aroma, healing properties and, of course, taste. For culinary research, its petals are used in fresh, dried or heat treated form. Since under the influence of high temperatures the beneficial substances of the petals are practically unchanged, for winter gatherings over a cup of tea, you can cook jam from rose petals according to one of the proposed recipes.

Classic rose petal jam

In the classic version of rose petal jam, there are not many ingredients, but in aggregate they help to get a tasty and aromatic preparation that will be appreciated not only by sweet tooth, but also by gourmets.

Proportions of products per serving of jam:

  • fresh rose petals - 60 g;
  • filtered water - 300 ml;
  • sugar - 400 g;
  • fresh lemon juice - 45 ml;
  • pectin - 5 g.

Cooking steps:

  1. Sort out the petals, rinse, fill with the prescription norm of water and send to the fire, boil 10 minutes after boiling.
  2. Next, pour 350 g of sugar to the petals and stir with a wooden spatula until completely dissolved. Then pour lemon juice and simmer another 20 minutes.
  3. Pectin mixed with the remaining 50 g of sugar and cook for another 20 minutes, reducing the heat to a minimum.
  4. Pour hot jam into sterile jars, roll up iron lids and put in a cool place for long-term storage.

An important point: the petals of tea roses and rose hips are suitable for jam, but they necessarily grow away from roads that are not treated with pesticides and are not damaged by caterpillars and other insects.

With apples

In the previous recipe, lemon was added to the blank to preserve a beautiful pink color and pectin for a denser consistency, but the last component can be replaced with apples, which are also rich in pectin.

To make jam from rose petals with apples at home, you need to take:

  • tea rose petals - 200 g;
  • large apples - 2 pcs.;
  • medium lemon - 1 pc.;
  • sugar - 250 g;
  • water - 100 ml.

The sequence of actions:

  1. Remove the petals from the bud cups and rinse. Wash apples, peel, cut the core with seeds and cut the flesh into small slices.
  2. Carefully washed lemon with peel to chop in circles, removing the seeds.
  3. Put all the prepared ingredients in a saucepan, sprinkle with sugar and beat in a smooth puree with a blender.
  4. Pour water into the jam and send it to the stove. At maximum heat, quickly bring the mass to a boil, then make heating minimal and simmer the workpiece for 25 minutes.
  5. Pour the hot jam into a sterile jar, seal hermetically and, after cooling, put it into storage in the basement or pantry.

Apples for jam should be selected sweet with a high content of pectin. Usually, by the time the roses bloom, only the apples of the last harvest remain, but they will do.

Shelf life of apple-pink jam - 12 months.

Cooking option with lime

Citrus fruits are often added to the jam from rose petals in the form of juice, so that its color remains as bright. But thin lime circles, saturated with sweet syrup with a floral aroma, will not only not spoil the workpiece, but also decorate it.

To make goodies with lime you will need:

  • tea rose petals - 300 g;
  • granulated sugar - 1000 g;
  • water - 150 ml;
  • medium lime - 1 pc.

Cook lime jam as follows:

  1. Pour the prepared clean and dry petals 300 g of sugar and carefully knead so that the sugar becomes wet from the juice. Leave the mass for two days in the refrigerator, periodically stirring every 10 to 12 hours.
  2. Pour the remaining sugar into a thick-walled vessel, pour water, and then send to a fire and cook until all crystals are completely dissolved and a thick, viscous syrup is obtained.
  3. In lime, send the chopped lime slices, and when the mass boils again, lay out the pink petals. Cook the jam after boiling for 60 minutes. Then lay out in glass jars and roll up.

In the same way, you can make pink jam not only with lime, but with oranges or lemons. It is only necessary to monitor the taste of the workpiece so that it does not turn out too acidic.

Antique Recipe

The technology for making pink jam, described in the cookbook of the last century, is slightly different from the recipes suggested above. The result is candied flower petals in a thick and aromatic syrup.

 

List of required ingredients:

  • petals - 100 g;
  • water - 200 ml;
  • sugar - 1000 g;
  • lemon juice - 30 ml (or 3.5 g of citric acid).

Old recipe step by step:

  1. To sort out the petals, wash them under running water and spread them in a thin layer on a towel to dry.
  2. Meanwhile, combine sugar with water and bring to a boil. Remove the foam that has appeared on the surface with a slotted spoon and lay out the dried petals. After boiling again, remove from the stove and stand for 12 hours.
  3. Bring the jam again to a boil and cook, stirring constantly with a wooden spatula. After 25 minutes, pour in lemon juice or pour in acid, stir, boil for another three minutes and can be sealed in jars.

When preparing petals for jam, it is often advised to cut off the white parts that are located close to the place of attachment to the bud.

We cook without tea leaves

It is no secret that fruits and vegetables that have not undergone heat treatment retain more nutrients. This also applies to rose petals, so many people like jam from tea rose petals, prepared in a raw way.

For him you need to take:

  • fresh tea rose petals - 100 g;
  • sugar - 400 g;
  • lemon juice - to taste.

The sequence of actions:

  1. Prepare flower petals in the same way as the previous recipes, then transfer to an enamel container and pour with sugar.
  2. Knead the preparation a little with your hands so that the juice begins to stand out, and leave everything for 12 hours, stirring occasionally.
  3. After the specified time, add a little lemon juice, beat the jam with a blender until smooth and arrange in banks.

For jam, you can use not only fragrant tea roses, but also ordinary ones without a pronounced smell. In this case, add a few drops of natural rose oil to the blank.

The benefits and harms of jam from rose petals

In rose petals, there are more substances useful for the human body than in any pharmacy, here there are essential oils, vitamins, and organic acids, and fatty oils that penetrate deep into the cells and nourish them.
