Gooseberry berries give a charge of vivacity and good mood, because they have so many useful substances. However, for some reason, many underestimate their benefits. To preserve such fruits until winter, it is best to make gooseberry jam. Everyone will enjoy the delicacy, and our article will help you properly cook this delicious dessert.

What you need to make gooseberry jam

The benefits of gooseberries for the human body are simply invaluable, because such a small berry contains a lot of pectin and fiber. In addition, gooseberries are rich in organic acids and vitamins, which positively affect the work of all organs and systems.

From gooseberries you can cook a real delicacy in the form of jam, which will surely appeal to all the sweet tooth, both adults and the smallest. For such a treat, it is better to take slightly ripened berries of the varieties "Malachite", "Generous" or "Mashenka". And the fruits of "Chernomor" and "Prunes" will allow you to cook a dark treat. Moreover, they have a thin skin, which makes the cooking process faster.

As a rule, gooseberries are collected for spins two weeks before its full maturation. But if the berries are ripened - it does not matter. From them you can make a delicious jam.

Small berries are cooked whole, and so that they absorb sugar better and remain intact during cooking, they are pierced with a needle. It is better to remove seeds from large fruits. To do this, they are simply pulled out with a small amount of pulp through an incision on the side of the berry. To preserve the emerald color of gooseberries, together with the fruits, the leaves of the cherry tree are put in a jar.

Gooseberry Jam - Classic

To make a classic gooseberry jam, not many ingredients are needed. In order for whole berries to be noticeable in it, it is better to boil them in three doses with complete cooling.

For one kilogram of gooseberry, you need to measure out the same amount of sweet sand and prepare half a glass of water. If you do not like too sweet jam, then you can add a little lemon juice to it.

Cooking method:

  1. The washed gooseberry fruits without tails are put in a stewpan. We pour water to them and light a fire.
  2. As soon as the contents of the stewpan boil, wait ten minutes and fall asleep the sweetener. Cook for half an hour, cool.
  3. We turn on the heat again, cook the composition for a quarter of an hour after boiling and cool again.
  4. And boil the third time in ten minutes. After that, we lay out the finished delicacy in sterile containers.

Cooking “royally”

They say that it was gooseberry jam that was the most favorite dessert of Empress Catherine II. At least, such a delicacy was always on her table. Since then, a similar dessert is called royal.

One kilogram of berries will require the same amount of sweet sand, as well as a glass of water, 50 ml of vodka and leaves of a cherry tree.

Cooking method:

  1. We wash and dry the berries and leaves well, remove the stems and tails from the fruits.
  2. If the fruits are large, then we gain royal patience - we take a well-sharpened small knife, make cuts on each berry and carefully pull out the seeds. We try not to pierce the berry.
  3. Now we pour water into a saucepan, pour half of the sand and put fragrant leaves. As soon as the syrup is bubbling, lower the gooseberry for 5 minutes, then quickly transfer the pan with berries into a bowl of cold water. Leave the fruit in syrup for 5 hours.
  4. We repeat the steps described in the previous step two more times. When the royal gooseberry jam has completely cooled down for the third time, it can be laid out on sterilized containers. We put a paper sheet soaked in vodka on top and tie it with twine.

With the addition of orange

Unlike raspberries or strawberries, gooseberries are not as popular among modern housewives as raw materials for jam. But in vain! After all, this berry is very healthy and tasty. And especially if you put other fruits in jars with it. For example, an orange.

So, for the recipe you need to take gooseberry berries and sugar (1: 1 ratio), as well as two oranges.

Cooking method:

  1. We remove all unnecessary from the berries. Cut the oranges into pieces, remove the seeds, do not peel the peel.
  2. Using a blender or meat grinder, scroll the gooseberries together with oranges. The berry and fruit mass is transferred to the pan, mixed with a sweetener and cook for 15 to 20 minutes. For jam cooking, it is better to take a cauldron with a thick bottom or an enameled stewpan, the inner surface of which will not allow the treat to burn.
  3. We roll hot gooseberry and orange jam into the jars processed accordingly.

Green Gooseberry Emerald Jam

Gooseberries are a natural antioxidant that helps keep you young. Jam from it turns out to be sweet, delicate and beautiful emerald color. With the help of various additives - honey, fruits, nuts - you can change the taste of the finished treat.

Take in equal quantities the green gooseberries and granulated sugar, and also prepare the cherry leaves.

How to make jam:

  1. Soak the leaves of a cherry tree for ten minutes in cool water, and then boil for five minutes. The color of the jam will depend on the number of leaves - the more there are, the more “emerald” the color will turn out.
  2. So that the berries do not burst during the cooking process, we pierce them with a toothpick. Put the gooseberries in a pan, put the same cherry leaves there. Do not interfere, the fruits, but simply scroll the container around the axis. Leave the berries for at least five hours.
  3. After that, we get them out with a slotted spoon, and in the resulting infusion we add sweet sand and put the container on fire. After boiling, we return the gooseberry into boiling water and cook for 15 minutes. Then we spread the jam directly with cherry leaves in sterile jars.

You can also cook jam by the method of languishing in three strokes (see the recipe above). So the jam will turn out more viscous and sweet.

How to cook with blueberries

If you like unusual desserts, then cook gooseberry and blueberry jam. The combination may seem strange, but these berries are surprisingly harmoniously adjacent to each other. The jam is not too sweet, with a slight acidity, and most importantly - with an amazing aroma. To prepare it, you will need one glass of gooseberries and blueberries, as well as sweet sand. With walnuts

Unusual gooseberry jam can be cooked with walnuts. The secret of such a treat is that the nuts “hide” right in the berries.

You need to take an equal amount of gooseberries and sweet sand, as well as 150 g of nuts and half a glass of filtered water for every kilogram of berries.

Cooking method:

  1. For jam, you need to choose ripe but dense berries. We rinse them, clean them from their tails and make cuts on both sides.
  2. Using a toothpick, remove the seeds, and instead put a small piece of walnut. He must completely hide in the gooseberry, so that during cooking he could not jump out.
  3. We do not throw out the pulp with seeds, but put it in a saucepan. We pour water here and cook the composition for five minutes. Then we transfer it to a sieve and grind it.
  4. The resulting mashed potatoes are returned to the stove, we fill in the sweet sand and as soon as the syrup boils, we put in it the stuffed gooseberry fruits. Gently mix the workpiece and wait until it boils. Turn off the fire.
  5. We leave the treat for 12 hours, then bring it to a boil again and make the third call, after 8 hours.

We fill clean cans with a hot composition and store them in a cool dark place.

Jam "Five Minute"

If you think that cooking jam is long and tiring, then you are mistaken. There is a recipe that will allow you to cook a tasty and healthy treat in five minutes.

To do this, take a kilogram of berries and the same amount of sweet sand. This amount of food will require a glass of water.

Cooking method:

  1. We prepare the prepared berries in a pan, fill them with part of the sweet granules and leave them for several hours so that the juice is allowed to flow.
  2. Then we put the pan with the contents on the fire, add the sweetener and pour water. Cook the composition for five minutes.
  3. After that, you can already roll jam in jars, but it is better not to be lazy, but to make several repetitive approaches - we cook a treat five minutes after boiling, then we take a break for five hours and repeat.

It is not worth it to ignore gooseberries in their culinary experiments, because it is not in vain that such a berry is also called royal. It is better to use it for winter harvesting and provide your relatives with a tasty supply of vitamins and nutrients for the whole winter.
