For 3 liters of rich soup you will need:

Prepared by the following algorithm:

Cooking royally

The king’s ear is more difficult to prepare, but its taste is appropriate.

Here you will need:

  • burbot carcass;
  • chicken - 1.5 kg;
  • small fish - up to 1.5 kg;
  • potatoes - 4 pcs.;
  • peeled carrots;
  • chicken egg - 2 pcs.;
  • butter - 60 g;
  • spices - salt, pepper.

The method of cooking fish soup royally:

  1. Pour the chopped chicken with water, salt, cook over low heat. Spread the finished meat, you only need the broth.
  2. Small fish is wrapped in a cloth, placed in a pot with broth, boiled until the fish begins to disintegrate. Filter the resulting liquid.
  3. The burbot is cut into medium sized pieces, boiled in the broth for about 15 minutes. The meat is removed from the broth, the liquid itself is filtered, while adding protein of 2 eggs.
  4. Peeled potatoes are cut, placed in soup, boiled for 10 minutes. During this time, frying is made from carrots with the addition of onions.
  5. The fish meat is placed in a clay pottery, cooked potatoes and a side dish are added. Pour the finished broth, the resulting mixture is put in the oven for 30 minutes. The temperature in the oven is 200 degrees.

Slow cooker fish soup

The main difference here is the cooking method. Ear in a slow cooker cooks easier and faster.

 

Required Products:

  • carcass or head, burbot tail;
  • potato tubers - 6 pcs.;
  • leeks - 50 g;
  • peeled carrots;
  • parsley or celery root - ½ part;
  • onion head;
  • seasonings - pepper, salt;

Cooking Method:

  1. Before cooking, turn on the slow cooker, setting it to frying mode.
  2. Chop and green onions.
  3. Wipe the roots in a grater.
  4. Fry vegetables in oil.
  5. The peeled potato tubers are chopped into cubes and placed in a slow cooker.
  6. Washed burbot meat. If the head is used, get rid of the gills and eyes. Put in the bowl of the multicooker.
  7. Add 1 liter of water, salt, pepper, change the mode from "Frying" to "Soup". Set the timer - 60 min.

Essential ingredients for making fish soup from burbot:

  • several heads of fish;
  • potatoes - 4 pcs.;
  • onion head;
  • carrot;
  • salt, pepper, leaf of parsley.

Procedure:

  1. They remove the gills, eyes, thoroughly rinse the head under the tap.
  2. They put a pot of water, after boiling they put their heads. Cook for 15 minutes.
  3. They take it out of the water, set the resulting broth to cool.
  4. The cooled liquid is filtered, the bones are thrown out.
  5. Onions, carrots are chopped into small cubes. Potatoes are cut into pieces.
  6. Chopped onion slices, carrots, potatoes, spices for taste are added to the broth.
  7. The resulting mixture is brought to a boil over medium heat, cooked until tender. After they turn off the stove and let the soup brew.

The readiness of the soup can be checked as follows: the potato easily breaks, but retains its shape.

Finnish first course

Product List:

  • burbot carcass - 0.5 kg;
  • potatoes - 4 pcs.;
  • parsley - 50 g;
  • onion head - 2 pcs.;
  • butter - 30 g;
  • milk cream - 150-200 ml;
  • carrot root;
  • bay leaf - 4 leaves;
  • clove of garlic;
  • spice.

The soup is prepared in Finnish like this:

  1. The carcass of burbot is washed under running water, cut up - cut off the head, tail, cut out milk.
  2. Chop onions, parsley, potatoes, carrots.
  3. Prepare the broth using milk and head. Sliced ​​vegetables and spices are added to the mixture. Keep on fire until the fish starts to boil.
  4. Filter the broth, they pour the chopped cubes of potatoes. Prepare by putting on low heat for about 10 minutes. In the process, the resulting foam is removed.

  6. Roasting is added to the soup, pour cream. Bring to a boil and leave the ear to languish. It will take 10-12 minutes. Add greens, garlic, pepper in a serving.

How to cook with rice

The recipe requires:

  • burbot head and fillet - 2 kg;
  • rice groats - 50 g;
  • dill or parsley;
  • carrot;
  • onion - 2 pcs.;
  • pepper, salt.

Cooking method:

  1. Fillet cut into pieces, cleaned of bones. Boil in a pan with their heads.
  2. An incision is made with a cross on a peeled bulb, carrots are chopped into pieces of medium size.
  3. Transfer onions with carrots to a pan with fish, cook for 20 minutes, periodically removing foam.
  4. Remove the fish, strain the resulting broth.
  5. The second onion is cut into small cubes, fried. Shred potatoes, parsley, washed rice.
  6. After boiling the broth again, rice, potatoes are put in it, after 10 minutes. boiling add fish, onions.
  7. Season with salt, pepper, parsley. Cook for 5 minutes, let it brew for a quarter hour.

Garnish the finished dish with lemon slices and olives. Lemon juice will give the fish a special flavor.
