Silver carp is a very popular fish, whose fillet is often used to prepare various second courses and snacks. But the head, which is initially a pity to throw out, usually ends up in the freezer, where it can lie for a very long time, without waiting for a happy occasion. The ear from the head of silver carp is an excellent dish with an unsurpassed aroma, thanks to which all parts of the cut fish will be involved in the preparation.

Classic silver carp head ear

The basis of the fish soup are parts of fresh fish. The remaining ingredients are intended only to complement and emphasize the fishy taste.

To fulfill the classic recipe at home, you need:

  • 2 heads;
  • 3 potato tubers;
  • bulb;
  • some lavrushki;
  • peppercorns;
  • salt;
  • a few feathers of green onions.

Cooking method:

  1. Gills are removed from the heads, after which the heads are simmered to produce a strong broth.
  2. Next, cubes of pre-peeled potatoes, onion half rings, spices and a little salt are sent to the soup.
  3. 2 minutes before cooking, chopped feathers of green onions are laid out in the ear.

Advice! So that the broth does not cloud, after boiling, foam is removed from it.

Cooking with millet

A rich ear with millet is prepared very quickly.

Prepare a grocery set in advance, consisting of:

  • heads of silver carp;
  • 2 liters of water;
  • 2 large potato tubers;
  • 1 carrot;
  • bulbs;
  • 80 g of millet;
  • a bunch of greenery;
  • spices and salt.

Stages of making soup:

  1. Prepared head without gills is poured with cold water. The broth is being salted.
  2. Cooked broth over low heat. After 15 minutes, the liquid is filtered.
  3. To create a thicker soup, washed millet is added to it.
  4. Then grated carrots, onion cubes, potato sticks and spices are sent to the boiling liquid.
  5. When the ear is almost ready, it is crushed by chopped greens.

Recipe for multicooker

Using a multicooker you can prepare a very rich soup with a bright aroma and excellent taste from a simple food set.

It will become even more saturated if you add a little garlic to the composition of the products.

Ingredients:

  • fish head;
  • bulb;
  • carrot;
  • several potato tubers;
  • a piece of butter;
  • salt and spices.

To prepare a delicious ear, we follow this algorithm:

  1. A washed head without gills is placed in the multicooker bowl. It boils for about 15 minutes in the "Soup" or "Stew" mode.
  2. After the sound signal, the fish portion is removed, and the broth is filtered and poured back into the bowl.
  3. The slow cooker remains in the same mode, but the timer sets the cooking time to 30 minutes.
  4. Shredded carrots and onions are fried in a pan with butter.
  5. After boiling the soup, potato cubes are laid out in it.
  6. After half the designated time, frying, spices and slices of fillet obtained by disassembling the head are added.
  7. When the signal sounds, the soup languishes for another 5 minutes under the lid.

Ear from the head and tail of a silver carp

The silver carp fish does not belong to expensive species, but the price does not in any way affect its taste.

 

Both from steaks and from the head you can cook a very fragrant ear, which will be even more rich if you prepare the broth with the addition of the tail.

Structure:

  • head and tail of a silver carp;
  • 4 potatoes;
  • 1 carrot;
  • bulb;
  • bay leaf, black and allspice peppers;
  • greens and salt.

In the process of creating the soup, we follow this algorithm:

  1. The 3-liter pan contains pieces of silver carp, spices, and a chopped onion without husks.
  2. Ingredients are poured with water.
  3. The broth is cooked for 15 minutes and filtered, fillet pieces are prepared from the head and tail.
  4. When the broth boils again, carrot and potato sticks are laid out in it.
  5. After 20 minutes, the soup is poured and crushed by chopped herbs.

Technology of cooking at the stake

If fishing in the net caught a silver carp, then you must definitely taste the catch.

Steaks can be fried on the grill, and delicious fish soup can be cooked from the head.

In addition to the fish ingredient, you should take:

  • carrots;
  • onion;
  • parsley roots;
  • 50 g of millet;
  • 150 ml of vodka;
  • 300 g of potatoes;
  • 4 tomatoes;
  • ½ lemon;
  • salt and spices.

How to cook an ear from the head of a silver carp:

  1. The head is thoroughly cleaned and freed from the gills, after which, along with slightly cut vegetables and parsley roots, it is poured with water.
  2. The broth is cooked in a pot for about 40 minutes until the whole portion of the silver carp is completely scattered (boiling should be very weak).
  3. Next, the broth is filtered through gauze folded into several layers.
  4. When the liquid boils, salt, spices, pre-prepared potato bars and a little cereal are sent to it.
  5. 10 minutes before cooking, vodka and a little lemon juice are poured into the soup, and then thin slices of tomatoes are sent.
  6. In the finale, the ear is salted (if necessary).

How to cook pearl barley soup

Pearl barley soup is a healthy first course made from:

  • the head;
  • 3 potatoes;
  • 2 carrots;
  • bulbs;
  • 100 g of pearl barley;
  • salt and spices.

The sequence of actions:

  1. While the broth is being prepared from the peeled head, carrots are rubbed into a separate container, and the onion is cut in half rings.
  2. After 15 minutes, the broth is filtered, from the remnants of the head sirloin pieces.
  3. Groats are sent to the newly boiled broth.
  4. After 10 minutes, chopped vegetables are laid out in a pan.
  5. The ear is salted, seasoned and boiled until tender.
  6. In the finale, fish pieces are laid out in the soup.

Ear with rice

Another variation of fish soup, the execution of which will require:

  • fish head;
  • 50 g cereals;
  • 3 potatoes;
  • 2 carrots;
  • as many onions;
  • a bunch of greenery;
  • vegetable oil, salt and spices.

Progress consists of the following actions:

  1. The prepared part of the fish is filled with water. The broth is salted and seasoned.
  2. Incised onion and one of the carrots are also added to the pan.
  3. When the head boils, the broth is filtered and returned to the pan, where chopped potatoes and washed rice are laid out.
  4. After 10 minutes of boiling, roasting prepared from the remaining vegetables is sent to the ear.
  5. When the soup is ready, it is crushed by chopped herbs.
