With the advent of summer, when the weather is hot outside, I want to diversify the diet with vitamin and light foods. An excellent solution would be vegetable dishes, among which stewed eggplants are especially popular.

Stewed eggplant with vegetables

A nutritious and vitamin-rich dish can be prepared deliciously and quickly from:

  • 3 eggplants;
  • 3 tomatoes;
  • 2 pcs. bell pepper;
  • 1 carrot;
  • bulbs;
  • 2 garlic cloves;
  • a bunch of greenery;
  • piles of vegetable oil;
  • 5 ml of vinegar;

  5. Then, every 7 minutes, all the other vegetables are laid out in a pan alternately in the following sequence: peppers, eggplant, tomatoes.
  6. In the final, the dish is salted, peppered and sent to the oven in a saucepan, preheated to 180 ° C for 10 minutes.
  7. Before serving, eggplant with vegetables is chopped with chopped herbs.

In sour cream sauce

To enjoy tender eggplants with piquant notes, just purchase:

  • 4 eggplants;
  • 250 ml sour cream;
  • a piece of butter;
  • greenery;
  • 15 g of flour;
  • salt.

Procedure:

  1. Eggplant is cut into medium cubes, which are boiled for 5 minutes in salted water, after which they recline in a colander.
  2. After they dry, the cubes are rolled in flour and sent to a pan with a thick bottom, where they are fried until golden brown in butter.
  3. Then vegetables are poured with sour cream, salted and sprinkled with herbs.
  4. The dish is stewed under the lid for about half an hour until soft.

With zucchini

Stewed vegetables can be served both independently and serve as an excellent side dish for fish or meat main dishes.

To execute the recipe you should have at hand:

  • 1 carrot;
  • 2 eggplants;
  • onion;
  • zucchini;
  • 3 tomatoes;
  • a head of garlic;
  • some flour and oil for frying;
  • salt and spices.

Procedure:

  1. The root crop is cut into strips.
  2. Cubes are prepared from zucchini, onions and eggplant.
  3. Tomatoes are scalded and skinned, and then cut into slices.
  4. Peeled garlic crushed.
  5. Eggplants are laid out in a pan with oil.
  6. After the vegetables are golden, carrots are added.
  7. After 5 minutes, zucchini is sent to the pan, and onions after the same time period.
  8. When the vegetables are fried, flour is poured.
  9. The stew is overcooked for about 5 minutes and mixed with tomatoes, salt and spices.
  10. Stew the vegetables on low heat until cooked.
  11. Garlic is laid out in the prepared stew.

Eggplant stewed with meat

Meat lovers who cannot imagine a single day without it will appreciate the combination of eggplant and beef.

For cooking you will need:

  • 400 g of beef pulp;
  • 4 eggplants;
  • bulb;
  • 1 carrot;
  • 1 potato tuber;
  • 3 tomatoes;
  • 2 pcs. bell pepper;
  • ½ stack of sunflower oil;
  • some greens.

Stages of preparation:

  1. The meat is cut into large pieces, which are salted, pepper and fried in a saucepan.
  2. Onions are chopped, and carrots are cut into rings, after which the chopped vegetables are sent to the meat.
  3. Potatoes are cut in pieces, peppers are cut into slices, and tomatoes and eggplants are cut into cubes, after which the vegetables are laid out in a container with meat in layers: potato bars, peppers, eggplant and tomatoes.
  4. Stew the dish under the lid until cooked.
  5. In plates, delicious food is crushed by greens.

With tomatoes and garlic

Stewed eggplants with tomatoes and garlic are rich in flavor and unsurpassed aroma.

In preparation are used:

  • 4 eggplants;
  • 2 onions;
  • 5 tomatoes;
  • 2 cloves of garlic;
  • 15 ml of wine vinegar;
  • some olives and capers;
  • olive oil;
  • salt and spices.

Hearty Potato Dish

A hearty dinner of eggplant and potatoes, the preparation of which requires:

  • 4 eggplants;
  • 2 potato tubers;
  • 2 onions;
  • 1 PC. bell pepper;
  • 2 tomatoes;
  • ½ head of garlic;
  • greens, salt, spices and a little oil.

When cooking:

  1. Onions are chopped and fried in a pan with a thick bottom.
  2. Eggplant cubes are laid on the onion pillow, which are salted and seasoned.
  3. Then spread the potato sticks, which are covered with pieces of pepper and tomato rings.
  4. The last cloves of garlic are laid out.
  5. The dish is stewed under the lid for 60 minutes.

Stewed eggplant in a slow cooker

You can stew eggplants in a delicious way using a modern kitchen appliance that turns the cooking process of any dish into a surprisingly enjoyable task that does not require much time.
