A delicious and spectacular-looking dessert without a lot of dough and greasy creams - this is all “Broken Glass” cake. It will not make you stand in the kitchen for a long time, but you need to consider that it takes a lot of time to freeze gelatin. The finished cake will decorate the table and delight you with a delicate taste.

The cake consists of a base - it can be a biscuit or shortbread dough, sour-milk and multi-colored, cut into pieces, jelly. It is colored splashes - “fragments” - that give the cake an unusual look. Usually, sour cream jelly is taken for its preparation.

Broken glass jelly cake with sour cream

You will need:

  • 3 large eggs;
  • 90 g of sugar;
  • 90 g of flour;
  • 500 ml of sour cream 20-25% fat;
  • 150 g of sugar;
  • vanilla sugar;
  • baking powder - 1 sachet;
  • 20 g instant gelatin;
  • 3-4 bags of multi-colored jelly or finished jelly from the store.

Cooking:

  1. First make the jelly. You can buy ready-made, in jars or by weight. Prepare jelly from sachets according to the instructions on the package, it is better to take a little less liquid (20-30 ml out of 100) so that the finished product has a higher density and is easily cut.
  2. While the jelly is setting, bake a sponge cake for the base of the cake. Preheat the oven to 190 degrees. Beat the eggs with sugar with a mixer for about 7-10 minutes, then carefully pour the flour in several stages and mix. Add baking powder. Mix everything well. Lubricate the baking dish with oil, carefully to keep air bubbles, pour out the dough and bake a biscuit for about 25 minutes. Do not open the oven in advance! You can bake cakes in a slow cooker, Baking mode, 30-35 minutes.
  3. Cool the finished biscuit. When the colored jelly hardens, beat the sour cream with sugar and vanilla. Prepare gelatin according to the instructions (it is better to take instant, for 0.5 kg of sour cream - 20 g of gelatin, dilute in 3 tablespoons of hot water and pour into sour cream).
  4. Take a split mold for the torus, line it with cling film. Put sponge cake on the bottom. Cut colored jelly with rhombuses or randomly, mix all the colors, pour on a biscuit. Pour with sour cream mixture and put in the refrigerator to solidify, most conveniently - at night.
  5. If there is no special shape, you can collect the cake in a deep bowl. The sequence is reversed - first you need to put pieces of colored jelly on the bottom, pour sour cream and put a biscuit on top. To easily get the finished cake out of the bowl, hold it for 30 seconds in hot water.

Broken Glass Cake with Cookies

You can make a cake without baking at all, using ready-made cookies as a basis. It can be biscuit cookies, such as "Savoyardi", shortbread or the simplest square in packs. If you take biscuit cookies, the most important thing is to lay out a dense base without holes.

From shortbread cookies you can make a base for cheesecake.

 

On a shape with a diameter of 21 cm you will need:

  • 300 g of cookies;
  • 120 g of butter.

Cookies need to be crushed into crumbs by a pusher or a blender. Pour melted butter, mix. A plastic mass should be obtained, which must be tamped along the bottom of the mold.

If this option seems too fat to you, replace the butter with milk or fruit juice. Less fluids will be needed, about 70-80 ml, so pour it into cookies on a tablespoon until the mass acquires the desired consistency.

Cooking with cottage cheese

Less popular, but with its own advantages, is the “Broken Glass” cake made of cottage cheese. This jelly has a pleasant acidity and less greasy. A delicious cake will even come out of cottage cheese 4-5% fat, and you can take more, from 10 to 18%.

At the heart of the curd dessert can be any sponge cake or cookies and the same pieces of multi-colored jelly. The main difference is that the sour cream filling is replaced with cottage cheese. In this recipe, the dessert will have an even more delicate, soufflé texture due to whipped cream.

You will need:

  • 400 g of soft cottage cheese;
  • 100 g cream 33% fat;
  • 20 g of instant gelatin;
  • 150 g of sugar;
  • vanilla extract to taste.

Cooking:

  1. Whip the cold cream with sugar.
  2. Dilute gelatin according to the instructions, combine with cottage cheese and vanilla extract.
  3. Add cream to the curd and mix very gently with a spatula until smooth. Next, the cake is collected according to the classic recipe.

With yogurt

The easiest to taste version of Broken Glass. To make yogurt jelly, replace sour cream with the same amount of Greek yogurt or any other without fillers. Drinking yogurt will not work. If it is sweet, reduce the sugar in the recipe.

Broken Glass Cake with Fruits and Berries

To make the cake more natural and healthy, replace the finished multi-colored jelly with fresh or canned berries and fruits! It is especially good to cook such a dish in the summer season.

Instead of red and pink jelly, take raspberries, strawberries, strawberries, cherries. Yellow and orange “fragments” are peaches, apricots, bananas. Blackberries, blueberries, slices or slices of citrus will look beautiful.

An important point - kiwi and pineapple, especially in large quantities, will not allow jelly to freeze due to its chemical composition. To make the cake colorful, put a couple of thin circles of kiwi on top.

To make a yogurt cake with fruits and berries, you will need:

  • finished biscuit base;
  • 500 ml of Greek yogurt 9% fat;
  • 25 g of instant gelatin;
  • 200 g of sugar;
  • a can of peaches;
  • 300 g of strawberries;
  • 1 large banana
  • vanilla sugar.

Cooking:

  1. Drain the syrup from the peaches, use it to soak the biscuit. Cut a banana and peeled strawberries into slices.
  2. Dissolve gelatin in 2-3 tbsp. hot water, whisk yogurt with sugar and vanilla sugar, combine both mixtures.
  3. Start assembling the cake - put the soaked biscuit on the bottom of the detachable form, on it - a mixture of fruits and berries, pour in the yogurt mass. Place the cake in the refrigerator until the jelly has completely set.
