  • vegetable oil - 1-2 tbsp. l .;
  • premium wheat flour - 300-350 g.

How to make dough:

  1. Kefir must be warmed up, in cold yeast they will "wake up" for a long time, and the dough will not rise as it should. But do not overheat the liquid, its temperature should be within 35-38 degrees.
  2. Dissolve yeast and sugar in kefir. Pour a third of the prepared flour, mix thoroughly using a fork or whisk.
  3. Cover the bowl with a plastic bag, leave for 30 minutes in a warm place. Thus, we will prepare the dough, thanks to this step the dough will rise quickly, it will turn out fluffy. The dough should foam, if this did not happen, then the yeast was bad - a good test would not work out. Foamed - great, everything is done right!
  4. Drive the egg into the dough, mix.
  5. Sift the remaining flour, pour into the dough, knead the dough. This is best done by hand, laying the contents of the bowl on a flour-dusted table.
  6. Lubricate the dough with sunflower oil, put back in the cup and cover with a bag. Take to a warm place to rise.

When the dough rises well, not sparing, pat it back down. So do 2 more times, and on the third ascent you can start the whitewash oven.

Quick kefir dough for whites

When you want to please your family with homemade cakes, but there is no time to bother with the dough for a long time, cook it according to this recipe. The result will be no worse than in the first embodiment, but it will take much less time.

Products required:

  • kefir - 1.5 tbsp .;
  • flour - 450-550 g;
  • egg - 2 pcs.;
  • baking powder - 1 tsp. (if not, replace with soda - 0.5 tsp., no need to extinguish);
  • salt - 2/3 tbsp. l .;
  • sugar - 1 tbsp. l .;
  • sunflower oil - 4 tbsp. l

The amount of flour is prescribed with such an acceleration, because the eggs can be different - from C2 to selected C0.

Cooking method:

  1. Mix in kefir at room temperature soda / baking powder, sugar, butter, salt and eggs. Mix well so that the dry ingredients dissolve.
  2. Sift flour, add small handfuls to the liquid base, stirring with a fork.
  3. Knead the dough with your hands. It is recommended during this process to beat off a lump on a table, just throw it on the surface, knead again. You need to beat off about 20-30 times.

Put the dough in a bag, leave it to lie down on the table for at least 15 minutes.

Crispy meat baking base

To get a bubbly, crispy dough, you need to cook it as described below. The whites will turn out to be excellent, when biting off the dough it will be nice to crunch.

Structure:

  • kefir - 1 tbsp .;
  • water - 1 tbsp .;
  • flour - 600 g;
  • vodka - 2 tbsp. l .;
  • sugar - 2 tbsp. l .;
  • salt - 2 tsp;
  • sunflower oil - 1/3 st .;
  • raw yeast - 25 g.

 

Cooking:

  1. Kefir slightly warm, dissolve yeast, sugar, salt in it. Add 1/4 of the prepared flour, cover and leave for 30 minutes.
  2. Bring the water to a boil, pour it in 200 g of flour, mix, you get a liquid dough that resembles a paste.
  3. Pour the cooked dough into flour steamed with boiling water, mix. Add vodka, sunflower oil, the rest of the flour.

Knead the dough, coat it with a little sunflower oil, leave to rise. As in the first recipe, you can start to prepare crispy whites with the fourth rise of the dough.

Cooking with Yeast

Prepare the dough for delicious whites using dry yeast.

One tip: do not buy cheap fast-acting yeast: in most cases, they do not work.

Products for the test:

  • kefir - 1.5 tbsp .;
  • dry yeast - 1 sachet;
  • sugar - 1 tbsp. l .;
  • salt - 1 tsp;
  • flour - 350-400 g;
  • sunflower oil - 3 tbsp. l .;
  • egg - 1 pc.;
  • soda - 0.5 tsp.

You can prepare the dough without an egg, and in this case, soda is not required.

Stages of dough preparation:

  1. Heat a little kefir, pour yeast, sugar and salt into it. Dissolve crystals of dry components (yeast does not dissolve). Knead a third of the flour in a liquid base, mix, leave for 15 minutes under a bag.
  2. Drive the egg into the dough, add the soda, the remaining flour. Knead the dough, grease it with butter. Cover the bowl with the dough with polyethylene, remove to heat.

When the dough rises 3-4 times, you can start working with it.

Wak-whitewash on kefir

Some people prefer to cook vak-belashi, rather than simple ones, and there are good reasons for this: there is no yeast in the composition, which allows you to quickly make the dough, vak-whites are not deep-fried, but baked in the oven, and this is much more harmless for health. Component components:

  • kefir - 250 ml;
  • butter - 100 g;
  • flour - 400 g;
  • eggs - 2 pcs.;
  • soda - 0.5 tsp;
  • salt - tsp

There is no sugar in this recipe.

Cooking:

  1. Melt the butter, then cool and mix with the eggs. Pour kefir into the mixture, add salt and soda.
  2. Sift the flour, this will make the dough more fluffy in the end. Introduce into a liquid base in small portions, knead.
  3. The dough should be packaged in a bag, let it rest at room temperature for 15-30 minutes.

Yeast-free dough

And finally, I want to offer another version of the test for whites without yeast. Its taste will vary with what is prepared with yeast, but not for the worse and not for the better: each option is good in its own way. The yeast-free dough is cooked faster at times, it rises well during frying, so it is difficult to distinguish from the appearance of yeast.

Ingredients:

  • kefir - 2 tbsp;
  • egg - 2 pcs.;
  • flour - 500-600 g;
  • sugar - 1 tbsp. l .;
  • salt - 1 tsp;
  • soda - 0.5 tsp;
  • sunflower oil - 3 tbsp. l

Cooking:

  1. Kefir should be at room temperature. If you didn’t get it in advance, then heat it up, because in a cold liquid the flour differs poorly, and the dough comes out stiff.
  2. Dissolve sugar and salt in kefir. Beat eggs, add quicklime soda and sunflower oil. Whisk all the ingredients with a whisk.
  3. It is always recommended to sift the flour before cooking from it, because in this process it will be saturated with air, and the dough will be softer, airier. Pour the flour into the liquid, knead the dough.
  4. Pack a lump in a bag, let rest for about 15 minutes.

When buying kefir for any of the described recipes, focus on its fat content. Do not take fat-free, choose the percentage yourself, but remember that the higher it is, the richer and tastier the whites will turn out!
