Triangles is a special type of national home-made pastry made from dough with meat or mixed fillings. In Bashkiria they are usually called Yesbosmaks, and in Tatarstan they are known as Echposhmaks. The dough for the "triangles" can be different - yeast, fresh or puff, cooked on water or using various dairy products. Consider each of these options in more detail.

Yeast dough for triangles

Experienced Bashkir or Tatar mistresses most often make yeast dough for "triangles". In this case, they use milk or plain water as the liquid base.

Such a dough can be prepared both in a pairwise and in a pairless manner.

In order to make unheated yeast prefabricated in the home kitchen, you need to take:

  • 0.5 kg of wheat flour;
  • 1 raw egg;
  • 25-30 g of fresh pressed yeast;
  • 250 ml of plain water;
  • 100 g of sugar and the same amount of butter;
  • 5 g of table salt;
  • 50 - 85 g of vegetable oil.

It is not at all difficult to prepare dough from these products:

  1. First, the pressed yeast must be dissolved in warm water (36 - 37 degrees).
  2. Separately, grate the egg thoroughly with sugar and salt.
  3. Add this mass to dissolved yeast.
  4. Gradually introducing flour, slowly, knead a sufficiently dense dough.
  5. In conclusion, add part of the vegetable and pre-melted butter. Ready dough should not stick to your hands.
  6. Roll the resulting mass into a ball, and then coat it with vegetable oil, cover with a napkin and put in any warm place for ripening.
  7. As soon as the dough begins to rise, it is necessary to knead it, and then again set aside.
  8. After the repeated lifting of the semi-finished product, you can safely proceed to the formation of blanks.

Baking from such a test will surely turn out to be tender and quite lush.

Fresh home baking base

Fans of crispy homemade pies will like fresh dough more. In addition, it takes much less time to cook. Such a dough is sometimes also called "fast."

To prepare it you need:

  • 100 g butter;
  • 55 g of vegetable oil;
  • 2 raw eggs;
  • 25 g mayonnaise;
  • some salt;
  • 0.65 - 0.7 kg of wheat flour;
  • 100 ml of ordinary water.

The test preparation methodology will be slightly different:

  1. First you need to melt, and then cool the butter.
  2. Add mayonnaise, eggs, salt and vegetable oil to it. Then fill everything with water and mix well. For work, it is better to use a whisk. So the mass will be more homogeneous.
  3. Continuing mixing, slowly introduce flour in small portions. The mass will become more dense, so here you already need to work with your hands. The finished dough should keep its shape well and not stick to the walls of the dishes.
  4. Put the cake mix in the refrigerator for several minutes. At this time, you can cook the filling.

This chilled semi-finished product is easy to process. It rolls well and sculpts perfectly.

No yeast added

The dough for triangles without yeast can also be made from rye flour. Pies in this case are not only tasty, but also healthy.

The composition of such a semi-finished product includes:

  • 320 g rye flour;
  • 100 g margarine (or butter);
  • egg (raw);
  • 250 ml of whole milk.

It takes no more than half an hour to prepare such a test. It is only necessary:

  1. Melt the margarine.
  2. Beat the egg separately with milk.
  3. Combine this mass with the cooled margarine.
  4. Gradually start to pour flour. Mixing can first be done with a spoon, but the final kneading will still have to be done manually.
  5. Wrap the finished dough with foil (food) and let it lie on the table for no more than a quarter of an hour.

Such a semi-finished product also rolls well with a rolling pin into a thin pancake. And after baking in the oven, a product with a fragrant filling and a pleasant crisp turns out.

Tasty puff pastry for triangles

For the preparation of national Tatar "triangles" you can also use puff pastry. Such pies will simply melt in your mouth.

In this case, to prepare the dough you will need:

• 400 g butter;
• 10 g of salt;
• 500 g of wheat flour;
• 250 ml of plain water.

To prepare such a semi-finished product you need to step by step:

  1. First of all, you need to put a part of the oil (300 g) in the freezer - it will be needed later.
  2. In a deep saucepan, combine the flour with salt and remaining oil (100 g).
  3. Pour the food with water and mix.
  4. Cut a frozen piece of butter into slices. Add them to the dough and make the final batch. You need to work very quickly so that the oil does not have time to completely melt.
  5. Roll the prepared dough into a layer with a thickness of about 2 - 2.5 centimeters.
  6. Cover it with foil and send it to the freezer for 60 minutes.
  7. Get the semi-finished product and roll it into an already thinner layer.
  8. Fold it with a “booklet”, wrap it with foil and again send it to the freezer for one hour as well. This operation must be repeated three times.

Original puff pastries with meat or cottage cheese filling will appeal not only to adults, but also to children.

Cooking on kefir

At home, you can make dough for "triangles" on kefir. As an option, sour milk is also suitable.

For such a test, you need to prepare in advance:

  • 200 ml of kefir;
  • 700 g flour (or how much dough can take);
  • 10 g of fine salt;
  • 6 g of baking soda;
  • 200 g butter (can be replaced with margarine).

Make kefir dough in stages:

  1. Pour kefir into a large bowl, add soda to it and mix it all thoroughly. Bubbles should appear on the surface.
  2. Melt a piece of butter separately in a saucepan or in a frying pan. Allow it to cool, and then add it with salt to a bowl of kefir. Mix foods well with a whisk.
  3. Introduce the flour. This must be done very carefully.Add flour should be 1 - 2 tablespoons, stirring the mass until smooth. When the dough becomes thick enough, it must be transferred to a cutting board and continue kneading by hand. Semi-finished product should be soft, but not very dense.
  4. Cover the dough with foil and put it in the refrigerator for a while until the filling is prepared.

In Tatarstan, such a dough is often used for preparing echpochmaks.

On sour cream

 

Very tasty dough for the preparation of the famous "triangles" can be made on sour cream.

To do this, you will need:

  • 1 egg
  • 640 g flour;
  • 100 ml of cold water;
  • 10 g of salt;
  • 125 g sour cream;
  • 100 g of melted butter.

Preparing such a dough is extremely simple:

  1. First you need to sift the flour and pour it into a deep bowl. Make a small indentation in the very center of the formed “slide”.
  2. Into this hole immediately enter all the prepared ingredients. Knead a uniform and fairly elastic dough.
  3. Put it in the refrigerator, after wrapping it with a piece of cling film.

While the filling is preparing, the dough will ripen and reach the desired condition.

This dough turns out to be very plastic, malleable and molds well, without letting the contents of the e-mails out.

How to make triangles from dough

Bashkir esbosmaki or as they are also called "triangles" - an excellent option for home baking.

In fact, these are unsweetened pies, for the preparation of which it is necessary to take into account several important features:

  • baking has a distinctive name due to the fact that the finished products after molding acquire a triangular shape;
  • unlike other pies, for "triangles" only raw filling is used.

The whole technological process can be divided into 4 parts:

  1. Kneading and ripening dough.
  2. Cooking toppings. Traditionally, it consists of three main components: fresh mutton and raw vegetables (potatoes and onions). Products are cut large enough.
  3. Modeling blanks. First, a piece of dough must be divided into parts. Then each of them is rolled out into a thin cake one by one. In the center, put a little pre-prepared filling. Then you need to pinch the edges of the dough so that you get a pyramid with a base in the form of an isosceles triangle. In the middle there should be a small hole where you can add broth if necessary.
  4. Baking pies is made in the oven at a temperature of at least 200 degrees. This will take approximately 50 to 60 minutes. To make the pies more ruddy, it would be good to smear their surface with a beaten egg first.

If all conditions and proportions are met, then the hostess will not have any problems. Fragrant and delicious “triangles” can be washed down with milk, hot tea and even broth.
