Classic pizza dough recipe as in a pizzeria

Classic pizza yeast dough can be prepared according to the recipe below. In this case, the basis is similar to that prepared in pizzerias.

  • flour - 350 gr;
  • water - 200 ml;
  • yeast - 8 g;
  • sugar - 1 tbsp. l .;
  • salt - 1 tsp;
  • olive oil - 40 ml.

Sift the flour into a deep bowl, where the dough will subsequently be kneaded. We attach the yeast to it and mix a little with a spoon.

Separately, we dilute sugar and salt in water, mixing until they are completely dissolved. After pour in the oil and mix a little.

Pour the liquid billet into the flour mixture, knead with a spoon or spatula. When the components are sufficiently mixed, and a more uniform structure begins to form, we begin to knead with hands. After spread on the work surface, continuing to manually knead the dough. We form a ball out of it, cover it with a waffle towel and leave it to infuse for half an hour, come up a little.

If the dough is not suitable, it needs to be heated to 30 degrees, or a portion of fresh yeast is added.

Thin crust for Italian pizza

Thin pizza dough can be prepared according to the recipe of Italian pizza. This will require a few components, and most importantly - they are easy to purchase, the recipe does not use unusual products.

  • the water is a little warm - 500 g;
  • live yeast - 3 g;
  • salt - 2 tables. l .;
  • extra virgin olive oil - 50-70 ml;
  • flour - 900 gr.

Combine water, yeast, salt and oil with a mixer or automatic dough kneader. When the liquid components turn into a homogeneous liquid, we begin to gradually add flour, one spoonful each. When the dough is kneaded, put it on the table and manually knead to make it uniform and smooth.

Divide the finished dough with a knife into pieces of 250 grams approximately. These will be blanks, they need to be rolled into a ball. Leave to come up a little, and then roll out into round bases.

On a note. Excess balls in the form of balls can be frozen.

Cooking on sour cream

Delicate pizza dough can be prepared on the basis of sour cream.

In addition to it, you will also need:

  • sour cream - 200 gr;
  • egg;
  • flour - 500 gr;
  • salt - a few pinches;
  • soda - ½ tsp

Preparation of the test for this recipe will not take much time, since the dough is prepared literally in a quarter of an hour. For him, you do not need to start a dough, which greatly simplifies cooking.

First, beat the egg and salt into the foamy mass.

Then separately combine sour cream with soda and stir a little so that the latter is extinguished. Sift the flour into them gradually, stirring with a spoon.

The last stage is the combination of egg mass with sour cream and flour. After carefully working out the dough with a whisk, you will get a little liquid dough, a similar thing is done for the pancakes. It remains to pour on a baking sheet, put the filling and bake.

Milk dough

Milk dough is very aromatic.

  • flour - 2 cups .;
  • salt - 1 tsp;
  • eggs - 2 units;
  • milk is a little warm - ½ cup .;
  • oil post. refined - 1 tbsp. l

Sift the flour in a wide bowl and mix with salt.

Separately, beat the eggs until the enlightenment of the mass, then pour in the milk and re-beat. Turn on the butter, whisk again.

In the flour we make a depression in the center. Pour a milk stream into a thin stream, kneading with a spoon. Work lightly with a spoon until the flour absorbs the liquid. After that, you can knead manually for about ten minutes - all the ingredients should mix well. The dough turns out a little elastic.

For a quarter of an hour we cover it with a towel and leave it in a warm place - come up. After you can start cooking pizza - cut into small pieces, roll into a circle, put on a baking sheet. Spread the filling on top.

On a note. Before using the test, it is recommended that you always give it a rest of 20-40 minutes.

Quick Kefir Dough

  • 300 ml of warm kefir;
  • a pinch of fine salt;
  • 2 glass of flour;
  • ½ tsp soda;
  • 3 tbsp. l Lent oils.

Combine kefir with salt and soda, mix with a fork, pour in oil and mix again.

Sift the flour into liquid components and continue to mix until it becomes difficult. After we continue to knead manually. Leave the dough to "rest" for an hour.

Lean test with yeast on water

A very simple dough from which you can cook a super-thin base for pizza - lean. For him, there is no need to prepare a dough, the main thing is to give him a little time to soak before using the test.

  • flour - 2 cups .;
  • fast. oil - ½ cup .;
  • water (boiling water) - 1 glass .;
  • salt - ½ tsp;
  • baking powder

Combine salt, water and oil. Mix a little with a spoon.

Next, sift the flour, baking powder. Mix the components manually when it becomes tight - knead on the board. Next, you need to leave for half an hour to relax. To do this, you can wrap the dough in a film or just cover it with a towel.

How to make dough for American pizza?

Three pizzas with a diameter of 30 cm can be prepared from the following quantity of products. The dough turns out to be a little soft, but the base itself is thin enough not to interrupt with its quantity, but only to complement the filling.

  • eggs - 2 units;
  • milk - 250 ml;
  • flour - 500-550 gr;
  • yeast - 1 tbsp. l .;
  • sugar - 1 tsp;
  • salt - 1 tsp;
  • rast. oil.

Milk should be a little warm - this is important for the "revitalization" of the yeast. Thanks to this, the dough is thin and soft at the same time.

We carefully work out milk, yeast, salt and sugar with a whisk (mixer).

Next we drive in the eggs, pour in the oil, work through again.

Gradually sift the flour, kneading the dough. When it begins to thicken, gather in a lump - flour can no longer be added. Cover with a towel and leave to approach for about half an hour.
