Tasty and fragrant pizza is perfect not only for a quick snack, but can also replace breakfast or dinner. It is easy to purchase a frozen version of this dish in the supermarket, but it is better to make it yourself. The basis is usually used yeast-free pizza dough, which can be prepared in various ways.

Classic yeast-free pizza dough

You can find many options for making the base for pizza, but the following recipe is considered traditional.

For cooking you will need:

  • 300 g flour;
  • egg;
  • 250 ml of any fermented milk product;
  • 10 g of soda;
  • 30 ml of olive oil;
  • salt.

Operating procedure:

  1. Beat the egg with a whisk, then add the olive oil, salt, soda and stir.
  2. Introduce the fermented milk product into the resulting mixture in small portions, and then bring it to homogeneity.
  3. Add flour to the dough until it stops sticking to your palms. It may need a little more than indicated in the list of ingredients.
  4. Using a rolling pin, roll the base to the desired size. It is important to remember that thin pizza is required for pizza, otherwise the dish will not bake well.

Important! Salt must be added to the basis for pizza, otherwise it will turn out to be tasteless, which will significantly affect the result.

Italian pizza dough without yeast

Italian pizza dough without yeast is prepared using a minimum of components.

For cooking you will need:

  • 150 ml of water or yogurt;
  • salt;
  • 20-30 ml of olive oil;
  • 220–250 g of flour.

Work process:

  1. Pour salt into water or yogurt and mix until completely dissolved.
  2. Sift flour, pour into a bowl and add salted liquid.
  3. Introduce the olive oil and knead the steep dough, then give it the desired shape.

Traditionally, pizza dough is stretched by hand, but for this you need some skill. In order not to take risks, it is better to use a rolling pin.

The basis for pizza in milk

Another popular base for a delicious pizza is milkless dough. You can use it not only fresh, but also after it is slightly acidified - this dish will not spoil.

For work you will need:

  • 150 ml of milk;
  • 320-350 g of flour;
  • 2 eggs;
  • 40 ml of refined oil;
  • 10 g of salt.

Sequencing:

  1. Sift flour, pour into a bowl and mix with salt.
  2. In another bowl, combine the eggs with milk and vegetable fat, beat until smooth.
  3. Add flour in small portions until the dough becomes firm, and then knead it with your hands and roll.

Attention! You can’t put pizza in a cold oven, the baking process should be carried out only at high temperatures, so it takes at least 15 minutes to warm up the baking compartment before putting the dish there.

Kefir dough

To make the basis for a national Italian dish soft and airy, kefir will help in combination with baking soda.

To prepare, you will need:

  • 180 ml of kefir;
  • egg;
  • 10 g of soda;
  • salt;
  • flour;
  • 20-30 ml of refined fat.

Sequencing:

  1. Slightly warm the kefir, and then pour salt and soda into it. Stir thoroughly until the loose components dissolve.
  2. In another bowl, mix the egg with vegetable fat, beat with a whisk, and then combine with kefir.
  3. Add flour to the base and knead a strong dough so that it does not stick to your hands.

Tip. So that such a base is well baked and does not lose its airiness, do not put too much filling.

Based on sour cream

No less tasty is the dough on sour cream, and it is prepared as quickly and simply as in the previous version.

For work you will need:

  • 180–220 g of fat sour cream;
  • 2 eggs;
  • 380-450 g of flour;
  • 5–7 g of soda;
  • salt.

Cooking process:

  1. Put sour cream in a deep bowl, pour soda and mix.
  2. Beat the eggs and add to the fermented milk product, and then beat with a whisk until smooth.
  3. Sift the flour, add to the mixture and make a cool dough.

This base goes well with any filling, whether it is sausage, mushrooms or seafood.

Sour cream-mayonnaise dough

When there is no time or desire to knead the dough, you can make the basis for liquid pizza.

In the process of cooking you will need:

  • 30 g sour cream;
  • 30 g mayonnaise;
  • egg;
  • 80 g of flour;
  • 5 g of soda;
  • 10 ml of vinegar;
  • salt.

Operating procedure:

  1. Mix eggs, mayonnaise and sour cream in a bowl, beat until smooth.
  2. To extinguish soda with vinegar, add to the mass and mix.
  3. In small portions, add flour so that the dough remains liquid. By consistency, it should resemble the base for fritters.
  4. Pour the composition into a greased form, place the filling on top and bake. The advantage of this dish is that you can cook it not only in the oven, but also on the stove.

Attention! In sour cream-mayonnaise dough, do not pour too much salt, because the sauce contains it in sufficient quantities.

Puffless yeast dough

Pizza from puff pastry is not prepared as fast as the dishes described in previous recipes, but the result of the work will not disappoint.

For work you will need:

  • 200 ml of water;
  • 2 eggs;
  • 250 g butter or margarine;
  • 350-380 g of flour;
  • salt;
  • vinegar.

Sequencing:

  1. Heat the water a little, add salt and wait until it is completely dissolved.
  2. Mix the liquid with beaten chicken eggs, bring the mass to homogeneity.
  3. Sift flour, pour into a bowl, make a depression in the center.
  4. Pour the mixture of salt water and eggs into the resulting “hole”, then add the soda, extinguished with vinegar, and mix the base.
  5. When the dough is ready, roll it in the shape of a ball, press in the middle with your fingers, pour the melted butter or margarine inside, and then mix again.
  6. Place the dough in the cold for 20 minutes, then roll out, put the filling on top and bake.

On a note. You can make pizza on a layered basis only in cases where ingredients that do not flow are used as a filler, since such a dough is quickly saturated with the juice that stands out and burns from below.

Egg-free pizza base

When there are no eggs in the refrigerator, you can prepare the basis for pizza without them.

To do this, you need such products:

  • 150 ml of kefir or yogurt;
  • 30 ml of purified water;
  • 350 g of flour;
  • 10 g of sugar;
  • 5 g of soda;
  • salt.

Operating procedure:

  1. Warm up the fermented milk product, add soda, mix and leave for a quarter of an hour.
  2. Combine the flour with sugar and salt, add seasoning if desired.
  3. Add filtered water to kefir or yogurt, mix again and add to the flour.
  4. Knead the base so that it does not stick to the palms.

Important! The basis for pizza does not need to be made too high, its thickness should be from 15 to 20 mm.

Lean recipe on water without yeast

When the refrigerator is completely empty, and you don’t want to go to the nearest supermarket to replenish supplies, you can make lean dough for water on pizza.

In the process of cooking you will need:

  • 150 ml of water;
  • 250 g of flour;
  • 20 ml of refined fat;
  • salt.

Work sequence:

  1. Sift flour, pour into a bowl and make a depression in the center.
  2. Combine salt with water and vegetable oil, add to flour and knead the dough.
  3. Give the base a ball shape, tighten with foil and leave for a quarter hour.

When the dough is infused, it will need to be quickly rolled out and greased with sauce. After that, it remains only to lay out the filling and send the dish to bake.
