Barley is a type of barley groats, it is a rounded or elongated grains, white or yellowish. On its basis, cereals are prepared, added to soups. But this does not end the use of healthy cereals in cooking. Today I will share 2 recipes for meatballs with pearl barley. I will prepare the first dish from minced meat and baked in the oven, the second - from fish and stew in a pan.

On a note. Before boiling, pearl barley must be soaked for several hours, it is worth considering this when proceeding with the preparation of dishes.

Oven minced meat dish

For meatballs, I take mixed minced meat - pork and beef in equal proportions and a little chicken (about half less than other types of meat). So they turn out dense, but at the same time tender and juicy. And I make gravy from sour cream.

Ingredients:

  • mixed meat - 700 g;
  • barley - 100 g;
  • onion - 1 pc.;
  • garlic - 1-2 cloves;
  • egg - 1 pc.;
  • sour cream 20% - 300 g;
  • water - 500 ml;
  • flour - 2 tbsp. l .;
  • salt, spices - to taste;
  • vegetable oil - for frying;
  • greens - for serving.

Operating procedure:

  1. I wash pre-soaked pearl barley, cook in a large amount of water - the cereal greatly increases in size, about 5-6 times. Therefore, the fluid should be enough. Until fully cooked, it needs to be boiled for at least 1-1.5 hours, but in this case 45-50 minutes will be enough, because the meatballs will then still languish in the sauce.
  2. Finely chop the onion with a knife, let the garlic pass through the press.
  3. I mix vegetables with minced meat, add the cooled cereal and egg.
  4. Salt and season the mass, knead until smooth.
  5. I make 10 blanks in the form of balls and fry over medium heat in preheated vegetable oil for about 5 minutes on each side.
  6. I spread the meatballs in a deep baking dish.Its size should be such that the portions fit tightly, no more than 2 cm apart, and there is almost no free space at the edges.
  7. I breed sour cream and flour in water, stir with a spoon until the lumps disappear.
  8. Pour meat balls with the resulting sauce and put in the oven preheated to 180 degrees for 40-50 minutes. I check readiness by breaking one serving with a fork - there should not be pink spots inside.
  9. I take out the dish, sprinkle with chopped herbs and serve.

As a side dish, meatballs with pearl barley are suitable for potatoes (boiled, fried or mashed potatoes) and a salad of fresh vegetables.

I cook such meatballs from different types of sea fish - I buy fillet of pangasius, hake, pollock. A carcass dish in a fragrant sweet and sour tomato sauce. It turns out to be very thick and perfectly harmonizes with fish.

Ingredients:

  • minced meat from pollock - 700 g;
  • pearl barley - 100 g;
  • onion - 1 pc.;
  • egg - 1 pc.;
  • flour - 3 tbsp. l .;
  • tomato paste - 150 g;
  • garlic - 2-3 cloves;
  • dill - 1 bunch;
  • water - 1 cup;
  • sugar - 1 tbsp. l .;
  • vinegar 6% - 2-3 tbsp. l .;
  • salt, pepper - to taste;
  • vegetable oil - for frying.

How to cook fish meatballs in tomato sauce:

  1. I cook the pearl barley until half cooked for 50 minutes, cool it by spreading it on a flat plate.
  2. I combine minced fish with an egg, finely chopped onions, cereals, salt, pepper and knead until smooth.
  3. I make 8-9 round meatballs, fry in vegetable oil for 7-10 minutes on each side. I make the fire medium.
  4. I spread the balls on the dish, and in the same fat where I cooked them, let the garlic crushed in the press or on the grater until softened. Enough and 2-3 minutes.
  5. I introduce the tomato paste, continue frying, stirring until it turns red-orange. It takes about 5 minutes.
  6. I plant flour, sugar and vinegar in water, pour into a pan, pour chopped dill and let the mass boil.
  7. Reduce the heat to a minimum, spread the meatballs, cover the container with a lid and stew the dish in aromatic sauce for 25-30 minutes. Serving hot.

If you have more or less forcemeat for meatballs than indicated in the recipes, the volume of cereals should also be adjusted. Since it is highly boiled and increases in volume, the ratio should be as follows - by 5-7 parts of meat or fish, 1 part of cereal.
