Classically beet cutlets

Classic cutlets are made from boiled beets. Such cutlets can be served both hot and cold. They taste like squash caviar, only with the scent of beetroot.

For cooking you will need:

  • Boiled beets (beetroot) - 1 kg;
  • Manka - 9 tbsp;
  • Shredded crackers (if necessary);

Cooking process:

  • Pre-boiled beets are cleaned and grated on a potato grater. You can also grate on a larger one, if the presence of large particles in the dish does not bother.

  • In a saucepan, mix the semolina in small portions, not forgetting to constantly stir, otherwise lumps will form. Stew on low heat for 20-25 minutes. Salt and leave to cool at room temperature.
  • Add the eggs. Check if there is enough salt.
  • From the resulting mass we form cutlets, roll them in breadcrumbs.
  • Fry in vegetable oil for several minutes from two sides until crisp.

Simple and delicious cutlets. Lemon juice gives a thin acidity, and pepper some sharpness.

For cooking you will need:

  • Beets (raw) - medium size;
  • White bread or loaf;
  • Lemon juice -1.5 tbsp;
  • Rusks for subsequent breading.
  • Bay leaf, clove (seasoning);
  • Wheat flour - 2 tsp;
  • Salt, black pepper (optional);

Cooking process:

  • We cut the beets into large cubes and cook in a small amount of water. Slightly salt. Add a few bay leaves and six buds of cloves to the water.
  • With a couple of pieces of white bread or loaf, cut the crusts, chop the pulp and pour boiling water.You can check the readiness of beets simply by piercing it with a knife. Cooked beets pierce very easily.
  • Next, you need to grind the cubes. This can be done in any way possible, through a meat grinder, blender or grated.
  • Add crumb, flour, salt and a pinch of pepper to the resulting mass. Add lemon juice. Mix everything thoroughly.
  • We make balls of minced meat and roll them in breadcrumbs. For convenience when frying, it is recommended to first leave the balls in the freezer for 30 minutes, so they will be stronger.
  • Fry in a pan with sunflower oil for 4-5 minutes from each side.

With cottage cheese

Such beetroot patties are hearty and a little bit with a speck.

For cooking you will need:

  • Beet-1kg .;
  • Semolina -120g .;
  • Salt, pepper mixture (to taste);
  • Cottage cheese - 400 gr.;
  • Butter - 120g. (Melted);
  • Egg - 2pcs.;
  • Milk-200 ml .;
  • Garlic - 8 cloves.

Cooking process:

  • Cook washed unpeeled beets until cooked.
  • Grind the finished beets in a convenient and affordable way.
  • We extinguish the resulting mass in a saucepan for 7 minutes and pour liquid warm butter and milk.
  • Gradually add semolina to the stewpan and do not stop stirring, avoid lumps. Stew for another 9 minutes.
  • Leave the resulting mass to cool to room temperature.
  • Next, add to the mass all the remaining ingredients: cottage cheese, eggs, salt, garlic (pre-grind), black pepper. Mix everything thoroughly.
  • We make cutlets from the resulting minced meat and cook it at our discretion, in the oven or for a couple. So they will retain their useful and taste properties. Serve with sour cream.

Sweet option with raisins

This recipe is suitable for both sweet tooth and diet.

For cooking you will need:

  • Beets -2 small or 1 larger;
  • Frying oil;
  • Rice - 200g. (Boiled);
  • Raisins (to taste);
  • Salt (to taste);
  • Egg -2 pcs.

Cooking process:

  • We bake beetroot in the oven, wrapping it with foil. Next, grind and leave to cool to room temperature.
  • Raisins must be left in boiled water for 10-15 minutes. Then dry on a paper towel.

  • We clean the beetroot, grate or grind in a blender.
  • We put the mass in a pan, add warmed melted butter and 110 ml. milk. Salt to taste. Cook for 2-4 minutes.
