Classic meatball soup

Of the ingredients, the following will be required:

  • minced turkey - 300 g;
  • chicken egg - 1 pc.;
  • onion - 1 head;
  • carrot - 1 pc.;
  • potatoes - 2 pcs.;
  • noodles - a handful;
  • greens (parsley and dill) - a small bunch;
  • salt;
  • premium flour - a little, only for breading.

Cooking:

  1. Half the onion should be finely chopped or chopped with a blender. Add it to the minced turkey. Drive an egg here, half chopped greens, salt. Roll the meatballs, roll in flour, so they definitely will not fall apart during the cooking process.
  2. Onions need to be cut in half rings, grate the carrots or chop into cubes. Stir the vegetables in a small amount of oil in a pan. If you cook soup with meatballs for children or people who are contraindicated in everything fried and cooked, skip this step, you can put the vegetables in raw form in the broth.
  3. Pour water into a saucepan, bring to a boil, carefully lay meatballs, vegetables. After boiling again, add salt and pour the diced potatoes. Once again the broth has boiled - introduce the noodles.Stir until the next boil so that the pasta does not stick to the bottom.
  4. Cook until the potatoes are soft, the meatballs are cooked very quickly, they certainly will not remain raw.

Add chopped greens to the finished soup, cover the pan with a lid, pour into cups in 7-10 minutes. You can add mayonnaise and sour cream, but even so the soup is very tasty.

Cooking with mushrooms

An even more dietary soup will turn out if you refuse potatoes, because it contains a lot of carbohydrates. Take mushrooms instead, this is a protein that does not affect the increase in fat. Ideally cook this soup during the “Kremlin” (protein) diet, it is very satisfying and tasty.

Products for cooking:

  • minced turkey - 300-400 g;
  • onion - 1 pc.;
  • carrot - 1 pc.;
  • forest mushrooms or champignons - 200 g;
  • garlic (optional) - 2 teeth;
  • egg - 1 pc.;
  • salt;
  • some sunflower oil.

Cooking:

  1. Chop or chop half the onion through a blender. Enter it into the minced meat, beat the chicken egg, salt. Roll the meatballs, you can roll in flour.
  2. Cut the mushrooms finely (if you took the forest, then boil them beforehand), grate the carrots, chop the onions in half rings, and pass the garlic through a press. Fry all together in a pan with a little oil.
  3. Bring the water in the pan to a boil, salt, put the meatballs. Immediately stir, meat balls should float. Enter the frying of mushrooms and vegetables, set the fire to maximum, after boiling, reduce it and cook for 10 minutes.

Serve the soup with herbs and sour cream, because it is not prohibited with a protein diet.

How to cook with cheese

One of the most delicious and delicate variations of soups. Cooking this first course is very simple, so feel free to take the cook, even if there is no culinary experience at all. Children will especially appreciate cheese soup with meatballs, as it turns out to be creamy in taste, beautiful in color and very satisfying.

The following food package will be required:

  • minced meat from turkey meat - 200-300 g;
  • chicken egg - 1 pc.;
  • onions - 1 large head or 2 small ones;
  • carrot - 1 pc.;
  • potato - 3 pcs.;
  • rice is a handful;
  • processed cheese "Orbit" - 2 pcs.;
  • salt.

If you doubt the quality of the processed cheese, if you don’t know whether it will melt or not, then it’s better not to risk it, but buy a more expensive soft sandwich, it will definitely go into the broth.

Cooking:

  1. Half the onion or one small head needs to be chopped for minced meat. Combine it with the meat base and egg, salt. Chopped greens can be added if desired. Roll the balls, roll in flour if desired.
  2. Chop the carrots and the other half of the onion, lightly fry in a pan with oil.
  3. Rinse and leave to infuse in water. You can not use cereals at all.
  4. Peel the potato, cut into cubes.
  5. Bring water to a boil, add salt, put rice to cook. From the moment of boiling the cereal, cook for 10-15 minutes. If you do not use rice, immediately place the meatballs in boiling water one at a time. Stirring, bring to a boil, pour in the broth potatoes and seasoning stewed in oil vegetables.
  6. After the potatoes are soft, turn off the gas. Enter cheese into the broth, mix well so that it is completely sold. Cover and let stand for several minutes.

Serve hot or warm.

Vegetable Soup with Turkey Meatballs

Of the ingredients, the following will be required:

  • minced turkey meat - 200 g;
  • white cabbage - small forks for 500-800 g;
  • carrot - 1 pc.;
  • onion - 2 heads of small size or 1 large;
  • egg - 1 pc.;
  • potato - 2 pcs.;
  • tomato - 1 ripe;
  • tomato paste - 2 tbsp. l .;
  • Bulgarian pepper - 1 pc.;
  • salt, fresh herbs and seasonings.

Cooking method:

  1. Make meatballs by mixing minced meat with chopped onion, egg and salt.
  2. Peel and dice the potatoes, grate the carrots, chop the second onion in half rings.
  3. Peel the seeds, cut into cubes. Tomato, without peeling, also need to be finely chopped.
  4. Divide the cabbage into two parts, remove the stalk, chop the leaves into thin strips.
  5. Put the carrots and onions in the pan, pour a little oil, lightly let it go.
  6. Enter bell pepper and tomato, simmer for 5 minutes, then add the tomato paste. Fry the ingredients until the sauce in the pan turns orange.
  7. Bring the water to a boil, put out the boiled cabbage and dressing from vegetables with tomato. 7 minutes after boiling, put the meatballs and potatoes in the pan. Cook until cooked, about 5-7 minutes after boiling.

Serve soup with fresh herbs, mayonnaise or sour cream. A lemon slice will perfectly complement the taste of the dish.

With the addition of green peas

With green peas, a delicious soup is obtained. You can use frozen, fresh or canned, in any case it will be excellent.

Soup ingredients:

  • minced turkey - 300 g;
  • potato - 3 pcs.;
  • carrot - 1 pc.;
  • green peas - 200 g;
  • onion - 1 large or 2 small heads;
  • tomato - 1 pc.;
  • egg - 1 pc.;
  • salt.

The cooking is very simple, and looks like this:

  1. Grind half the prepared onion and add to the minced meat, mix with salt and egg. Roll up the meat balls, let it sit for 10-15 minutes, if you do not use breading from flour.
  2. Fry the carrots and onions until soft.
  3. Remove the peel from the potato, wash, cut into cubes.
  4. Put water on the stove, after boiling add salt, potatoes, frying vegetables. Boil the broth, immediately lay out the boiled meatballs from the turkey. After the next boil, introduce peas, cook for another 10 minutes.
