Ingredients:

  • ground beef or pork (to taste), or a whole piece of meat - 400 g;
  • potato - 4 pcs.;
  • carrot - 1 pc.;
  • semisweet bulb - 1 head;
  • small pasta for soups - 6 tbsp. l .;
  • laurel leaf - 2 pcs.;
  • parsley - a bunch of small size;
  • dill greens - a bunch of small size;
  • salt to taste;
  • finely ground pepper - to taste.

Self-prepared or minced meat must be beaten in advance on the working surface of the table so that future meatballs do not boil in boiling water.

How to cook:

  1. We put a pot of water on the fire. After boiling, pour the onion head chopped into slices of potatoes and chopped quarters of the rings into the water.
  2. In vegetable oil, we pass the carrots grated on a grater, then add it to the boiling broth.
  3. The recipe for meatballs for minced meat soup is simple: we make balls the size of a walnut. If it seems difficult to form an even lump, you should add a chicken egg to the minced meat.
  4. Formed meat balls are sent to the pan. There we put a leaf of laurel and vermicelli for soup.

  • carrot - 1 pc.;
  • semisweet bulb - 1 head;
  • sweet pepper - 150 g;
  • small pasta for soups - 200 g;
  • salt - a small pinch;
  • freshly ground black pepper - a small pinch.

How to cook:

  1. Cook the broth from vegetables. In a pot with boiling water, put the peeled whole head of onion and half a carrot. In this case, the broth will be more saturated and aromatic.
  2. At this time, the turkey fillet is passed through a meat grinder.
  3. Peel the potatoes and cut into any usual way.
  4. The remaining half of the carrots are rubbed on a coarse grater and passaged in vegetable oil.
  5. From the vegetable broth, extract the onion and carrot. We make meatballs from minced turkey and toss them into the broth. Pour shredded potatoes and sauteed carrots there.
  6. Cook the soup over medium-high heat for about 10 minutes, then add the pasta and continue cooking for another 3 minutes.
  7. A couple of minutes before turning off, add chopped sweet pepper, salt and freshly ground black pepper to the soup.

Ingredients:

  • minced pork meat - 400 g;
  • sweet bell pepper - 250 g;
  • onion - 1 head;
  • sweet grade tomatoes - 1 pc.;
  • head of cabbage (white cabbage) - 1 pc.;
  • potato - 4 pcs.;
  • tomato paste (permissible replacement for tomato ketchup) - 1 tbsp. l .;
  • fresh dill greens - 1 bunch;
  • laurel leaf - 2 pcs.;
  • Refined oil - for frying;
  • cloves of garlic - 5 pcs.;
  • salt - a small pinch;
  • freshly ground black pepper - a small pinch;
  • black pepper peas - 5 pcs.

How to cook:

  1. In a pan, we pass the minced meat to a state of semi-preparedness.
  2. Stew vegetables in another pan: pepper, onion and 2 garlic cloves for about 7 minutes. Before cooking, add the tomato mass.
  3. We chop the potatoes in the usual way.
  4. In boiling water, dip the roasted minced meat, chopped potatoes and garlic cloves (3 pieces).
  5. Cook the base of the soup until the potatoes are ready, remove the garlic cloves.
  6. We send stewed vegetables to the soup and cook everything for about 10 minutes.
  7. At the last stage, put in a soup chopped cabbage of small size, chopped dill, laurel leaf and season everything with pepper and salt to taste.

Bring the soup to a boil and cook for about 5 minutes.

  • minced beef - 300 g;
  • potato - 3 pcs.;

  • ripe tomatoes - 2 pcs.;
  • garlic cloves - 2 pcs.;
  • laurel leaf - 2 pcs.;
  • refined oil - for frying;
  • salt, pepper - on a small pinch.

How to cook:

  1. We chop the onion with quarters of rings, grate the carrots with medium holes, peel the potatoes and cut them in any usual way.
  2. We pass the onions and carrots in vegetable oil for about 7 minutes. After that, add minced meat to vegetables and fry the mixture until the meat component is fully cooked.
  3. The pulp of a tomato should be ground in a blender to a mushy state.
  4. Pour chopped potatoes into boiling water. When they reach the state of semi-preparedness, we add sautéed vegetables with beef to the soup base.
  5. A couple of minutes before the soup is ready, we put in it the garlic cloves passed through the garlic press, a bay leaf, and also salt and pepper to taste preferences.

Serving soup to the table is recommended, sprinkled with finely chopped herbs.

  • spices to add spiciness and pungency - to taste.

How to cook:

  1. Pre-soak the beans in warm water for 12 hours. After the specified time, cook them for about 2 hours on moderate heat.
  2. We prepare the vegetable component. Finely chop the onion head, carrot, sweet and hot peppers and tomatoes. Chive the garlic through the garlic press. Grind parsley and cilantro as finely as possible.
  3. We pass the chopped vegetables in a pan with the addition of vegetable oil in the following sequence: onions, carrots, 2 types of peppers and add tomatoes before the end.
  4. In a pre-cooked beef broth, lay out the prepared vegetable mixture and tomato juice. Stir the ingredients over low heat for about 10 minutes. After that, we add the washed beans, chopped garlic cloves, salt, granulated sugar and spices to the broth pan to taste.
  5. Before the end of cooking, add chopped greens to the soup and continue to simmer it for about 10 minutes.

To the table, the soup is served in portioned dishes, sprinkled with the remaining herbs. Sour cream or cream is perfect for this dish.

How to cook:

  1. Pre-pour pea beans for 12 hours with warm water.
  2. Pickle the minced meat. Add finely chopped onion head to the meat and send the mixture to a cool place for 2 hours.
  3. Boiled peas are boiled until ready for about 60 minutes.
  4. At this time, the pickled minced meat is fried in a saucepan, and then sent to the soup base. Cook all the ingredients for about 15 minutes on low heat.
