Noodle soup is traditionally considered one of the most popular first courses for lunch or dinner. There are many different options for its preparation and it is not worth mistaking to believe that only a master of cooking can reproduce them at home. Try to see for yourself!

How to make homemade noodle soup?

Making homemade noodles for soup will not be difficult even for a beginner regarding cooking. Just use the following step-by-step recipe.

You will need:

  • flour - 1.5 cups;
  • egg - 1 pc.;
  • salt.

Pour half a glass of water into a bowl, break the egg and add a pinch of salt. Stir the mixture thoroughly with a whisk until smooth. Sift the flour well and gradually start pouring liquid egg mixture into it. Knead the dough of dense consistency. If necessary, you can add a little more flour.

Divide the dough into a couple of parts to make it easier to work with. Roll into a thin, translucent layer and cut into thin strips. Put the noodle blank on a paper towel or napkin and sprinkle with flour. When the noodles have dried, just shake off the excess flour from it and you can add it to the soup.

Chicken Noodle Soup

Soup with noodles and chicken and potatoes is one of the most hearty dishes that can be prepared for lunch.

You will need:

  • chicken fillet - 0.5 kg;
  • carrots - 2 pcs.;
  • potatoes - 2 pcs.;
  • onion - 2 pcs.;
  • celery root - 1 pc.;
  • vegetable oil - 1.5 tbsp. spoons;
  • Lavrushka - 1 pc.;
  • noodles - 200 g;
  • salt;
  • spice.

Boil 2-3 liters of water in a saucepan and boil the chicken fillet in it over low heat. Otherwise, the broth may acquire an ugly muddy shade.

Do not forget to constantly remove foam from the surface. Put whole onion and celery in the broth. In the future they will need to get it.

  1. When the chicken has cooked for more than half an hour, chop the potatoes and add to the soup.
  2. Onions and carrots are chopped and sautéed in a frying pan until light golden. In this case, one carrot needs to be grated and added to the soup in its raw form.
  3. Following is a roasting with bay leaf.
  4. At the same time, remove the onion and celery from the soup. Add the noodles and spices.

To cook meatballs, use ready-made minced meat. Fashion them in a small, even shape in advance.

  1. Pour 2 liters of water into the pan and put the meatballs there. Boil them over medium heat and boil. Constantly remove the foam that forms on the surface of the broth so that it does not spoil its appearance.
  2. Cut onions with carrots and fry them for 5 minutes in a pan until soft. Potatoes are cut into small cubes or cubes.
  3. When the broth boils, put the frying in it.
  4. Grind the greens. Bring the soup back to a boil and add the potatoes.

You will need:

  • dried mushrooms - 30 g;

  • Lavrushka
  • salt;
  • spice.

Rinse the mushrooms and soak them for a couple of hours in warm water. To cook mushroom noodle soup, it is not necessary to cook it yourself, you can take it already ready.

  1. Onions and carrots are chopped and fried in a pan until soft. Potatoes are cut in medium sized cubes.
  2. When the mushrooms are sufficiently swollen, rinse them and pour cold water in the pan. Send to the stove.

  • chicken breast - 0.5 kg;

  3. After that, add potatoes and breast to the frying. Pour them with 2 liters of water and install the “Soup” or “Stewing” program in the device for an hour. Cook the dish with the lid closed.

10-15 minutes before cooking, put noodles, spices and herbs in the soup. Continue to cook and after that let the soup brew a little.

Milk soup for breakfast

You will need:

  • noodles - 200 g;
  • milk - 1 l;
  • sugar - 3 tbsp. spoons;
  • a piece of butter;
  • salt is a pinch.

Pour milk in a saucepan along with a liter of water. Add sugar and a pinch of salt. Immediately after boiling, noodles are put together with butter and cooked until cooked (about 10-15 minutes), and then the pan can be removed from the stove.

Milk noodle soup should be infused in the refrigerator at least at night and by breakfast you will get a full, nutritious and tasty meal.

Beef Noodle Soup

You will need:

  • beef - 0.5 kg;
  • noodles - 180 g;
  • carrots m 1 pc.;
  • onion - 2 pcs.;
  • potatoes - 4 pcs.;
  • vegetable oil - 2 tbsp. spoons
  • greenery;
  • salt;
  • spice.

Cooking like this:

  1. Process the beef, rinse and cut into small pieces. Send them to a pot with 3.5 liters of water, along with a whole onion and half a raw carrot.
  2. When the broth reaches a boil, reduce heat to a minimum and continue cooking for an hour.
  3. Potatoes are cut in small blocks.
  4. When the beef is cooked, remove the vegetables from the soup. They need to be thrown away, since they will not give any useful and tasteful properties to the dish.
  5. Put the potatoes in the meat and cook for 15 minutes.
  6. The remaining half of the carrots is cut together with the second onion and fried in a pan until soft.
  7. When the potatoes are cooked, put the frying, noodles and chopped herbs in the soup.

Continue to cook the dish for about 10 minutes, and then serve it to the table with sour cream.

In Chinese

You will need:

  • chicken fillet - 300 g;
  • tomato - 1 pc.;
  • Chinese cabbage - 150 g;
  • noodles - 50 g;
  • garlic - 1 clove;
  • vegetable oil - 2 tbsp. spoons;
  • soy sauce - 1 tbsp. a spoon;
  • green onions.

Cooking like this:

  1. Boil the whole fillet in 2 liters of water. Then pull it out, cut into medium sized slices and send it back to the soup. Salt to taste.
  2. The tomato is cut into cubes and fried in a pan with butter. A whole clove of garlic and a small piece of ginger are placed there. Pour all this into soy sauce and simmer for a few minutes.
  3. Add the frying to the soup along with the noodles and cook until cooked. Pull out the garlic, ginger and discard just before completion. They have already given away all the taste and smell.

At the end, before serving, chopped Beijing cabbage and onions are placed.

Fancy Tomato Noodle Soup

You will need:

  • canned tomatoes - 400 g;
  • noodles - 100 g;
  • carrots - 1 pc.;
  • onion - 1 pc.;
  • garlic - 1 clove;
  • cream of medium fat content - 2 tbsp. spoons;
  • Lavrushka
  • salt;
  • spice.

Boil one and a half liters of water in a saucepan. Cut the tomatoes into slices and peel them, if any. Put them in boiled water along with chopped garlic, whole onions and carrots. Boil them over low heat.

Salt and spices are placed next, noodles and bay leaves are added. Continue cooking for 5-10 minutes. Before the end of cooking, pour cream into the soup and remove the pan from the stove. Stir and pour the dish into plates.

Pork Noodle Soup

You will need:

  • pork - 1.5 kg;
  • noodles - 100 g;
  • carrots m 1 pc.;
  • potatoes - 3 pcs.;
  • onion - 1 pc.;
  • greenery;
  • salt;
  • spice.

Put the whole pork in boiling water in advance and boil for two hours.

  1. After the specified time, remove the meat and cut it into pieces, and then put it in a separate bowl.
  2. Cut the potatoes, put in a pan and boil over low heat.
  3. Carrots are peeled and rubbed with straws.
  4. The onions are fried with carrots until tender and put in a potato pan.

5-7 minutes before the end of cooking, put the noodles and meat. Cook until fully cooked and already in the plates decorate the dish with chopped herbs.
