  • nutmeg, cloves, zira - 2 g each;
  • hot pepper - 1 small pod;
  • cardamom, salt, coriander - 15 g each;
  • onions - 180-200 g;
  • anise, fennel - 5 g each;
  • paprika, brown sugar, turmeric - 20 g each;
  • ginger root - 130-150 g;
  • strong chicken stock - a whole glass;
  • water - a whole glass;
  • prunes (seedless) - 80-100 g;
  • garlic is a whole head.

Execution Process:

  1. Rinse the prunes, hold it for an hour in hot water. Kill the dried fruits with a blender to a pulp state.
  2. Pour cloves, salt, cardamom into a heated skillet. Warm it and grind the dry ingredients in a mortar.Repeat with coriander, fennel and zira.
  3. Then with the remaining spices. At this point, you can already add a little oil to the pan. You must also fry the whole hot pepper pod.
  4. In the remaining oil, brown small onion cubes. Add to it grated garlic and ginger root. Pour in the broth and simmer for 5-6 minutes.
  5. Transfer previously heated spices into a pan. Continue languishing for 3-4 minutes.
  6. Add sugar and dried fruit paste. Pour in water. Cook the mass for 10-12 minutes.
  7. Cool the sauce, kill it with a blender. Wipe through a sieve.
  8. Bring the mass to a boil and remove from heat.

Instead of broth, you can also take fat cream.

Cooking with pineapple and mayonnaise

This is a very simplified version of the preparation of the discussed sauce.

Ingredients:

  • light / classic mayonnaise - 80-100 ml;
  • curry seasoning - 20-25 g;
  • pineapples in the form of canned food - 80-100 g;
  • onions - 130-150 g;
  • salt, freshly ground pepper.

Cooking:

  1. Fruit extracted from syrup. Let it drain. Cut into very small cubes. Send into the blender bowl.
  2. Chop the onion finely. Pour to pineapple.
  3. Add all other ingredients stated in the recipe. Interrupt them to uniformity and airiness.

Such home-made sauce should be well cooled. Then you can serve it to the table.

With tomato paste and oranges

This version of the sauce produces a very original interesting taste. Best of all he will go with pork.

Ingredients:

  • fresh orange - a whole glass;
  • tomato paste - 100-120 ml;
  • olive oil - 40-45 ml;
  • dry curry seasoning - 30-35 g;
  • cayenne pepper - 1 pinch;
  • broth - a whole glass;
  • salt and pepper - a pinch.

 

Execution Process:

  1. To make curry sauce according to this recipe, the first thing you need to heat the vegetable fat in a convenient bowl. In an already hot liquid, send the tomato paste. Stir and leave the components on fire for 5-6 minutes.
  2. Add all the spices stated in the recipe, pour in the juice. Mix everything and continue cooking for another 8-10 minutes.
  3. Add salt. Gradually introduce the broth. Warm up the mass for a couple of minutes and remove from heat.

Ready sauce will turn out with a very pleasant sweet taste.

What to cook with curry sauce
