Cream of champignon sauce

Incredibly delicate and fragrant mushroom sauce with cream will make any dinner deliciously delicious.

To cook it, you will need these products:

  • fresh champignons - 250 g;
  • butter - 50 g;
  • vegetable oil - 30 g;
  • onion - 1 pc.;
  • processed cheese - 50 g (one package);
  • cream (15%) - 150 g;
  • seasonings - basil, oregano, black pepper;
  • a pinch of grated nutmeg;
  • salt to taste;
  • garlic;
  • lemon - ½ pcs.

Step by step cooking:

  1. Finely chop the onion. Heat a frying pan with high sides, pass the onion in a mixture of oils, salt it a little.
  2. Wash mushrooms under running water, pat dry with a paper towel. Cut into plates or cubes, then the consistency will be more uniform. Add them to the pan, fry so that they are a little browned.
  3. Pass the cheese through a grater or chop finely. Add cream, grated nutmeg and spices to the mushrooms, salt.
  4. 3-5 minutes before the end of the preparation add grated cheese, garlic and lemon juice passed through the press.

Serve the finished sauce in a saucepan or pour over the finished dish.

With spices, it is advisable not to overdo it. It is necessary that they do not interrupt, but complement the taste of champignon sauce with cream.

With sour cream

For this recipe you will need only 5 ingredients and 25-30 minutes to create.

Products:

  • onion - 1 head;
  • vegetable oil;
  • sour cream - 200 g;
  • salt;
  • a bunch of parsley;
  • champignons - 250 g.

How to cook mushroom sauce:

  1. Finely chop the mushrooms and onions, put in a hot pan, add a little salt and cover with a lid. Slightly salted mushrooms will quickly let in the juice, in which they will be stewed, without adding water.
  2. After 5–7 minutes, pour in sour cream and simmer a little more.
  3. Add finely chopped greens, salt to taste.
  4. Put the mass in a blender and mix until a homogeneous mixture.

To make the sauce lighter, you need to take the freshest mushrooms for preparation, which have not yet begun to darken under the hat.

With mayonnaise

Amazing mushrooms in mayonnaise can be both an independent dish, and in addition to the main one.

 

Products:

  • champignons - 350 g;
  • mayonnaise - 100 g;
  • fat-free yogurt without additives - 50 g;
  • garlic - 2-3 cloves;
  • dill;
  • salt, spices;
  • onion - 1 pc.;
  • cooking oil for frying.

Cooking:

  1. Peel and chop the onion in half rings. Fry a little.
  2. Cut the small mushrooms in half, if large, then into quarters. Add to the onion, add a little salt (later mayonnaise is added, it has enough salt).
  3. Simmer until water evaporates and the mushrooms begin to brown. Mix mayonnaise, yogurt, garlic and spices in a bowl, pour into a pan.
  4. Stew mushrooms for 7-10 minutes under the lid.

Put the prepared gravy in a saucepan, sprinkle with finely chopped herbs and serve.

Cooking Lean Mushroom Gravy

For fans of vegetarian food, cooking lean sauce is presented.

Products:

  • champignons - 300 g;
  • flour - a tablespoon with a slide;
  • onion - 1 pc.;
  • small carrots;
  • salt and spices;
  • vegetable oil;
  • water - 450-500 ml.

Cooking:

  1. Finely chop the onion, pass the carrots through a grater. Fry until golden brown.
  2. Separately, fry the champignons until rosy.
  3. Pour flour into a dry frying pan with a side. Constantly stirring, spasser it to a light brown color.
  4. Add water to flour in a pan, stir with a whisk until smooth.

How to cook:

  1. Cut the onion into thin half rings. Mushrooms cut along the plates.
  2. In a well-heated pan, fry the onions in a mixture of oils. After adding the champignons, simmer all together for 4–5 minutes.
  3. Salt the milk, season with spices, pour the mass into the pan. Cover and simmer for 10 minutes.

Pour the meat dish with the ready-made sauce; you can sprinkle with finely chopped parsley or cilantro.

Mushroom champignon sauce for pasta

The original champignon sauce with sour cream, garlic and cheese will go well with pasta or spaghetti.

 

Products:

  • champignons - 300 g;
  • starch - 1 tsp;
  • garlic - 2 cloves;
  • sour cream - 150 g;
  • water - 50 g;
  • butter - 25 g;
  • vegetable oil - 30 g;
  • salt to taste;
  • onion - 1 pc.;
  • hard cheese - 100 g.

Cooking:

  1. Finely chop the onion, cut the mushrooms into cubes.
  2. Pour vegetable oil into a pan and put a piece of butter. Fry the onion for 2-3 minutes.
  3. Add mushrooms, garlic, salt and stew for 3 minutes.
  4. Dilute a spoonful of starch in 0.5 cups of water, mix with sour cream. Pour the mixture into the pan. As soon as the gravy boils, immediately remove from the stove.

Cooked pasta before serving can be mixed with sauce. If served spaghetti, then put them on a plate in the form of a nest, pour the sauce in the middle. Sprinkle the dish with grated cheese.
