A hearty cabbage hodgepodge can be either an independent dish or an interesting option for a vegetable side dish. This treat is being prepared with various additives - mushrooms, meat, potatoes. And its basis can be both fresh and sauerkraut.

Fresh Cabbage Solyanka

Ingredients: 630 g of fresh cabbage, half as much carrot, large onion, 60 g of tomato paste, 4 bay leaves, ground black pepper, salt.

  1. Washed vegetables are finely chopped. Onions are best cut with miniature cubes. This component is fried on any fat until soft.
  2. Next, chopped carrots, salt, pepper pour out to the onion. Together, the ingredients are stewed for another 7-8 minutes.
  3. Cabbage is also sent to the pan. It is advisable to pre-mash it with your hands.
  4. The mass is simmering for another 7-8 minutes.

It remains to put tomato paste in a frying pan, and bring the hodgepodge from fresh cabbage to full readiness.

With the addition of sausages

Ingredients: about a kilo of fresh cabbage, a small carrot, onion, 7 standard sausages, 2 tbsp. tablespoons of ketchup without additives, salt.

  1. Cabbage is washed, peeled from the upper coarse leaves and finely chopped. It is laid out in a pan and poured with olive or other vegetable oil. Vegetable goes to be fried.
  2. In a separate frying pan, chopped onions and carrots chopped in any convenient way are passaged. They are cooked until soft. Next, ketchup is sent to the container.
  3. The roast is transferred to the finished cabbage. At this point, the dish is salted.
  4. Shredded sausages are cooked in the pan remaining from the frying pan. They need to be fried for 2-3 minutes with stirring.

It remains to mix the contents of two pans and the hodgepodge with sausages and cabbage is completely ready.

Cabbage solyanka with mushrooms for the winter

Ingredients: 1.5 kilograms of forest mushrooms and fresh cabbage, 2 carrots, 65 g of salt, 3 ripe tomatoes, 2 onions, 55 g of granulated sugar, 120 ml of tomato paste, any seasonings, 25 ml of table vinegar.

  1. Mushrooms are cleaned, washed a couple of times and boiled 12 minutes after boiling. Then they recline in a colander.
  2. The cabbage is chopped lightly, after which it is lightly fried in refined oil in a large saucepan. Next, a little water is added to the container and the vegetable is already stewed on a minimum fire.
  3. Grated carrots and half rings of onions are passaged in a separate frying pan. This mass also goes to cabbage.
  4. Tomatoes are peeled off. The easiest way to do this is after they are scalded with boiling water. Together with mushrooms, they are laid out in a saucepan to the rest of the ingredients without excess liquid.
  5. The remaining ingredients declared in the recipe are added, except for vinegar. The mass is stewed for about half an hour. It is important not to forget to stir it periodically. A portion of vinegar is poured into the container last.

Solyanka of cabbage with mushrooms for the winter after mixing is laid out on sterilized containers. The treat is kept cool.

How to cook with meat?

Ingredients: a pound of pork, 2 onions, large carrots, a small head of cabbage, 2 tomatoes, 5-6 garlic cloves, 130 g tomato paste, 1 tbsp. spoon of granulated sugar, 3 bay leaves.

  1. Small pieces of meat are fried in any fat until the liquid evaporates from the pan.
  2. Separately, chopped carrots and onions are passivated.
  3. Cabbage is cut into miniature squares, shifted to meat. Salt is also pouring here.
  4. Tomatoes and garlic are finely chopped. They are fried together for 10-12 minutes. The mixture is poured with a small amount of water with sugar and tomato paste. Laurel leaves are also being laid. After boiling the mass, the lavrushka is removed.
  5. Vegetable sauce poured meat with cabbage. On a minimal sauce, the treat is stewed under the lid for 15-17 minutes.

Solyanka with meat will be a full-fledged hearty lunch option for the whole family.

Recipe for multicooker

Ingredients: whole forks of cabbage, a couple of carrots, large onion, salt, ¾ tbsp. filtered water, 3-4 tbsp. tablespoons thick tomato paste without additives, a mixture of peppers. The following describes how to cook a hodgepodge in a slow cooker is tasty and simple.

  1. Cabbage is thinly chopped. The remaining vegetables are randomly chopped with a knife.
  2. First, onions in a bowl of “smart pot” are passaged on any fat, then it is fried along with carrots.
  3. After 5-6 minutes, the cabbage is sent to the bowl.
  4. Products are salted, pepper, filled with water with the paste dissolved in it.
  5. In a program designed for stewing, the dish languishes for about half an hour.

If the indicated time was not enough, you can prepare meals in the same mode for another 12-14 minutes.

Rustic sauerkraut

Ingredients: 620 g of sauerkraut, pickles and onions, a full glass of meat broth, salt, a couple of large spoons of tomato paste, 80 g of lard, 15 g of flour, aromatic herbs.

  1. Cabbage directly with your hands is wrung out from the brine. If it turned out to be too acidic, the vegetable should also be washed with running water.
  2. Onion cubes are fried in bacon. Salt, spices, tomato paste are sent to the same frying pan. And after a couple of minutes - and prepared cabbage.
  3. The treat is languishing over minimal heat. When the vegetables are well softened, you can put in the pan skewers of pickled cucumber without a peel.
  4. In a separate frying pan, flour is fried until golden (oil is not used). Then it is filled with broth. The liquid is mixed until the lumps disappear.
  5. With the mixture from the fourth step, cabbage is poured and cooked for another 15-17 minutes. At the very end, you can add fried bacon or sausages to your treat.

Sauerkraut solyanka will be a delicious side dish for any meat dish.

With potato

Ingredients: a kilo of fresh cabbage, salt to taste, 8-9 potatoes, 1 tbsp.a spoon of tomato paste, onion, spices.

  1. Onions and carrots are chopped randomly. These ingredients need to be fried for about 8-9 minutes on any fat. Next to them is laid tomato paste. It is advisable to take the product without unnecessary additives.
  2. The potato is peeled and cut into cubes. No need to grind, otherwise this vegetable when mixing the components in the end can turn into an unattractive mass.
  3. After 10-12 minutes, in a pan, you can lay slaw. The lid does not cover the dishes. At this point, the products are salted and sprinkled with spices.
  4. Then a small amount of water is poured into the pan.

Solyanka with cabbage and potatoes languishes until all the ingredients are ready.

Lean hodgepodge

Ingredients: 2 medium carrots, half a small cabbage, 2 onions, 1 tbsp. tablespoon of olive oil, 2-3 tbsp. spoons of ketchup, any mixture of spices.

  1. Cabbage is chopped medium. Onion finely chopped. Carrots are grated with medium holes.
  2. Directly in a stewing pan, the onions are steamed for a couple of minutes in olive oil. Then, for 6-7 minutes, it is cooked already with the carrot.
  3. Cabbage is salted, kneading with hands, and only after that it goes to the pot for other products. Extinguishing continues for another 10-12 minutes.

Ketchup is added, a seasoning mixture, and the treat languishes already until ready.
