It is difficult to imagine a Soviet feast without your favorite herring oil. In those years, this “putty” for sandwiches was an incredible success. After the collapse of the Union, this original way of feeding fish was not forgotten. Today it is also actively used for making sandwiches and canapes.

The classic recipe for herring oil.

The name of the dish speaks about its composition. This is a mixture of herring and oil. The taste of this dish is very delicate. Let's cook herring oil together at home with a prescription.

Ingredients:

  • 1 fat herring;
  • 1 pack of butter;
  • 0.5 tsp ground black pepper.

Cooking method:

  1. Wash the fish well and remove all the bones. This can be done using special tweezers, or simply using a knife and fingers.
  2. Hold a pack of oil outside the refrigerator at room temperature so that it melts a little.
  3. Cut the fish into cubes and pass through a meat grinder. You can use a blender. In this case, control the size of the pieces so that they are not too large, but do not turn into mincemeat.
  4. In a container, mix the oil and herring with a fork, add pepper.
  5. Put in the refrigerator so that it grabs a little.

Our appetizer is ready. You can spread on black bread and have fun.

The Brezhnev recipe with egg.

 

Why such a name? Because Leonid Ilyich loved herring oil with an egg and the addition of garlic. Following Brezhnev’s example, such an appetizer option was served on the tables.

What is included in the composition?

  • Herring 1 pc.;
  • Oil 200 gr;
  • Boiled egg 1-2 pcs;
  • Clove of garlic;
  • Chopped greens;
  • Onion (preferably red) - a small head;
  • A little black pepper.

How to make herring oil?

  1. We cut the fish: remove the head, ridge and all bones.
  2. In the meantime, thaw the oil at room temperature.
  3. Cook hard-boiled eggs.
  4. Beat eggs with butter with a blender. If there is no blender, you can mash everything with a fork.
  5. We cut herring and pass through a meat grinder. If desired, you can grind it in a blender.
  6. Chop the onion very finely and pour over boiling water to remove the bitterness.
  7. In the egg-oil mixture, we add the garlic squeezed through the garlic press and chopped greens. We mix everything.
  8. In the mixture mix the herring, onion and pepper.
  9. We send it to the refrigerator for 2 hours.

The resulting oil can be formed into sausages and wrapped in cling film. So it will be more convenient to cut.

Herring butter with carrots.

Adding carrots to the appetizer gives it an orange color that looks like caviar. It is this type of herring oil that is commonly called “herring caviar”.

Products:

  • Herring 1 large oily, or 2-3 small;
  • Carrots 2-3 are not large;
  • Oil 1 pack.

Preparation method:

  1. Chop the carrots. It is possible both on a fine grater and in a blender. The main thing is not large.
  2. Clean, wash, remove all bones of fish. Use tweezers to completely remove all bones. Cut herring into small pieces.
  3. In a blender, mix fish and carrots.
  4. Into the resulting mixture mix a packet of melted butter. It should be soft, but not liquid. To achieve the desired consistency, leave the pack outside the refrigerator for 2-3 hours.
  5. Put in the refrigerator. Serve after cooling.

With milk and mustard.

 

Milk in this recipe is used to soak herring in order to give it a delicate taste and make it less salty.

List of ingredients:

  • 1 barrel herring;
  • pack of butter;
  • mustard about a teaspoon;
  • milk for soaking.

Cooking:

  1. To clean herring, remove all bones, cut into cubes and pour milk so that it completely covers it. Leave on for 2 hours.
  2. After wet the fish with napkins or a towel and grind in a blender (meat grinder).
  3. Add the oil and mustard to the chopped herring. Beat again until smooth.
  4. Leave in the refrigerator until thickened, and then use as directed.

With cream cheese.

This herring oil recipe has a particularly delicate taste and creamy aroma. Cream cheese is doing its job.

Products:

  • oily fish - 1 pc;
  • processed cheese - 1 pc;
  • oil - 1 pack;
  • mustard seeds about 10 grams;
  • some black pepper.

Cooking in steps:

  1. Cut herring. Remove all bones, entrails and skin. Cut into cubes.
  2. Dice the butter and leave to melt at room temperature.
  3. Cut the cheese into slices.
  4. Grind prepared fish in a blender.
  5. Next, add everything else to this bowl: butter, cheese and mustard, sprinkle with pepper. Beat everything up until pasty.
  6. Transfer the finished mass to convenient storage containers and refrigerate.

Herring oil recipe from Julia Vysotskaya.

Julia, in her program Eat At Home, used this recipe to make a breakfast bruschetta. The peculiarity of her recipe is that the oil is not grinded into a paste, but everything is mixed in pieces.

Grocery list:

  • Salty herring - 0.5pcs;
  • Chicken Egg - 1pc;
  • Oil - 1 pack;
  • Mustard - 1 small spoon;
  • Lemon juice - 2 tbsp .;
  • Dill to taste.

Cooking.

  1. Leave the oil to soften outside the refrigerator.
  2. At this time we are engaged in fish. Peel the fillet, remove all bones, entrails and the skin.
  3. We cut the fish very finely, almost into large forcemeat.
  4. Meanwhile, we have a hard boiled egg. After cooling, clean and grind with a fork.
  5. Add butter, fish and mustard to the egg.
  6. Mix everything with a fork and add lemon juice.
  7. Take the foil and sprinkle it with chopped dill. Top with watering our oil and spin the foil.
  8. To do the same with the second half. From this amount of ingredients, two sausages are obtained.
  9. We send everything to the refrigerator.

Serve, spread on Borodino bread, or on dried croutons.
