To enjoy the taste of salad with arugula, cherry tomatoes and mozzarella, you do not need to go to an expensive restaurant. You can easily prepare such a treat at home yourself. All the ingredients of such snacks are quite affordable and are sold in most supermarkets.

Classic Salad Recipe

If you want to have a bite to eat with something very tasty, but at the same time light and low-calorie, you should definitely take such a dessert for yourself. It can also be served in addition to hearty meat and fish dishes.

 

Ingredients:

  • fresh arugula - 1 large bunch;
  • cherry tomatoes - 7-8 pcs.;
  • mozzarella cheese (the Belarusian version is also suitable) - 80-100 g;
  • olive oil - 2 tbsp. l .;
  • balsamic vinegar - half a tablespoon;
  • small salt.

Cooking:

  1. Remove cheese from whey packaging. Put it in a colander so that all the excess liquid comes out of the piece. Otherwise, the snack may turn out to be too watery.
  2. Cut the prepared hard snow-white cheese into neat and approximately the same size cubes.
  3. With miniature tomatoes cut the stalk. Chop the vegetables themselves with a sharp knife in half.
  4. Rinse the arugula very thoroughly with cold running water. Throw all the greens into a colander. You can change the amount of this ingredient in the salad, but it is desirable that it make up the main volume of the dish. Place greens in a large bowl.
  5. Add halves of small sweet tomatoes and prepared cheese.
  6. In a separate bowl, prepare the simplest Italian dressing - combine balsamic oil and vinegar. Add salt to taste. You can use a pinch of ground black pepper.
  7. Pour over the prepared sauce all the ingredients of the appetizer. Gently mix with a spatula.

Immediately serve the finished salad to the table. If there is no balsamic in the house, you can fill the snack with olive oil.

Brazilian Dried Tomatoes

The combination of fresh tomatoes and sun-dried, allows you to achieve a very bright unusual taste of the dish. A note of piquancy appears in it. Sun-dried tomatoes can be used both store-bought and home-made.

Ingredients:

  • fresh arugula - 130-150 g;
  • sweet cherry - 10-12 pcs.;
  • sun-dried tomatoes - 5-6 pcs.;
  • mozzarella in balls - 10-12 pcs.;
  • olive oil - 2 tbsp. l .;
  • balsamic vinegar - ½ tbsp. l .;
  • lime / lemon juice - a few drops;
  • sugar and salt - a pinch.

Cooking:

  1. Prepare a dressing of vinegar, oil, citrus juice. Add salt and sugar to taste. Mix all the ingredients very carefully.
  2. While dressing is infused, rinse fresh cherry and cut each in half. It is necessary to use a very sharp knife so as not to squeeze out all the juice from the fruits and not spoil their mouth-watering appearance.
  3. Put the sun-dried tomatoes on a sieve so that they have excess oil from the glass. Cut the delicacy into small pieces.
  4. Rinse and dry the arugula. You can tear it large directly with your hands or send the leaves to the whole bowl.
  5. Cut cheese balls into 2-4 parts.
  6. In a large transparent bowl, combine all prepared ingredients. Pour them generously with dressing. Gently mix with a spatula.

Beautifully spread the appetizer on a wide flat dish and serve.

Russian version from Julia Vysotskaya

Julia Vysotskaya called her variation of the Tuscan salad under discussion and added white beans to it. This ingredient makes the appetizer even more satisfying and original.

Ingredients:

  • white beans - 70-80 g;
  • mozzarella mini - 8-10 pcs.;
  • stoned olives - 8-10 pcs.;
  • fresh arugula - a small bunch;
  • sun-dried tomatoes - 3 pcs.;
  • Cherry - 4-5 pcs.;
  • garlic - 1 clove;
  • olive oil and balsamic vinegar - 1 tbsp. l .;
  • mustard (sweet or spicy) - 1 tsp;
  • sea ​​salt and freshly ground pepper.

Cooking:

  1. Boil white beans until fully cooked, taking into account the recommendations in the instructions on the package. Drain and cool the beans.
  2. Prepare the sauce in a separate small bowl. To do this, combine sweet or spicy mustard with high-quality olive oil. Add a little balsamic vinegar. Add salt and freshly ground pepper to taste.
  3. Peel the garlic, crush with a knife, after removing the core. Finely chop the remaining parts. Send the resulting pieces to a gas station. Mix everything.
  4. Rinse the arugula thoroughly. Lightly tear with your hands. Combine it with the finished beans.
  5. Chopped dried tomatoes finely, cut fresh into halves. Add to other ingredients.
  6. Pour the last mozzarella slices and halved pitted olives.

Pour the combined ingredients with dressing, mix gently and serve immediately. To make the salad tastier, you can supplement it with quail eggs. The latter should be boiled to a solid center and cut in half.

With the addition of avocados

Avocado makes the taste of the appetizer even more tender, slightly buttery. He also adds refreshments and satiety. A correct step-by-step recipe will help to properly prepare such a salad.

Ingredients:

  • avocado - 70-80 g;
  • Cherry - 100-120 g;
  • any kind of mozzarella cheese - 80-100 g;
  • salt, favorite spices, pepper;
  • arugula - a bunch;
  • olive oil - 1 tbsp. l

Cooking:

  1. Rinse the green leaves of the arugula very carefully. Dry them and tear them straight with clean hands into medium pieces.
  2. Rinse the cherry and chop each into 2 halves.
  3. Cut the cheese into pieces that are neat and about the same size.
  4. Avocado to get rid of hard skin, remove the stone. Cut the soft part into arbitrary slices.
  5. For dressing, you need to combine olive oil with pepper, salt and your favorite spices. You can buy a special salad mix of spices, which goes well with herbs and vegetables.
  6. Combine all prepared ingredients, pour dressing. Gently mix food.

Avocados can not be added to the total mass, but simply beautifully lay the pieces on top. Also, any fresh greens are suitable for decorating treats.

Cooking with seafood and pine nuts

To prepare such an appetizer, you can take a variety of seafood. But shrimp is best combined with the rest of the ingredients.

Ingredients:

  • arugula - 100-120 g;
  • tiger prawns - 270-300 g;
  • Cherry - 130-150 g;
  • mozzarella - 130-150 g;
  • garlic - 1-2 cloves;
  • pine nuts (peeled) - 20-30 g;
  • balsamic sauce - 20-25 g;
  • Dijon mustard - 5 g;
  • orange - a couple of slices;
  • lemon - a small slice;
  • olive oil and parmesan - 20 g each;
  • honey - 1 tsp;
  • marinade oil, salt.

 

Cooking:

  1. Rinse and dry the arugula. Rinse and halve the cherry. Finely chop the garlic. Parmesan turned into fine chips with a grater.
  2. Shrimp clear of all unnecessary. Marinate the remaining parts for a quarter of an hour in oil with garlic.
  3. Combine olive oil, honey, mustard, salt, balsamic sauce, lemon and orange juice for the sauce.
  4. Fry the shrimp directly in the garlic marinade until golden and fully cooked.
  5. Send all prepared ingredients to the salad bowl. Pour cheese last.
  6. Top with a dressing sauce and sprinkle with peeled nuts.
