  • eggs - 4 pcs.;
  • premium flour –150 g;
  • sugar - 100 g;
  • jam - 150 g;
  • icing sugar or cinnamon.

Important! To make the roll as airy and light as possible, flour must be sifted before being added to the dough.

Cooking:

  1. Separate the egg white in the refrigerator.
  2. In a deep container combine the yolks and sugar. Beat with a mixer until a stable foam is formed.
  3. Remove the proteins from the refrigerator and beat with a mixer until a thick foam appears.
  4. Connect both masses. Stir the resulting mixture with a spoon. Movement to produce from the bottom up.
  5. Gradually add flour. The result should be a homogeneous, moderately viscous mass without lumps.
  6. In the prepared form, lay the parchment greased with butter. The volume of the container should be chosen so that the dough layer does not exceed 1 cm. Pour the dough and level it with a knife or a special spatula.
  7. Bake at 180 degrees. Baking time 15-25 minutes depending on the power of the oven. It is important not to dry the dough. The cake should turn out to be slightly ruddy, without burnt edges. Check better match. If there is no dough left when piercing the cake, the biscuit is ready.
  8. Remove the container with the finished cake from the oven.
  9. Put slightly cooled dough on a towel and grease with jam.
  10. Spin the roll.

So that the finished dish retains its shape and does not break when served, the biscuit roll with jam is wrapped in foil and put in the refrigerator for 4-6 hours. After the specified time, remove the foil and decorate the roll with icing sugar or cinnamon on top if desired. A dish prepared in this way has sufficient softness and ductility, it does not crumble and is easily cut.

From shortcrust pastry

Shortcrust pastry is more moody and requires a certain exposure. In order for the roll to turn out friable, but not to fall apart, it is necessary to observe temporary proportions.

Ingredients:

  • wheat flour - 300 g;
  • baking powder for dough –10 g;
  • jam - 4 tbsp. l;
  • eggs - 2 pcs.;
  • sugar - 100 g;
  • butter - 100 g;
  • vanillin;

 

Technology:

  1. Submerge the butter until soft and mix with sugar.
  2. Add eggs, baking powder and vanilla.
  3. Gradually stir in the flour.
  4. Knead the dough well, wrap it with cling film and put in the freezer for 20 minutes.
  5. Roll out a rectangle from the dough about 1 cm thick, put the jam on top, and roll the roll.
  6. Put parchment on a baking sheet, grease it with butter.
  7. Cook at 200 degrees for 20 minutes.

  • puff pastry - packaging (500 g);

  • lemon zest;
  • egg - 1 pc.

Cooking:

  • sugar - 100 g;
  • butter - 100 g;
  • egg - 2 pcs.;
  • dry yeast - 1 tbsp. l .;
  • wheat flour - 0.5 kg;
  • some salt;
  • apple jam - 1.5 cups;
  • cinnamon.

Cooking:

  1. Heat the milk a little, dilute the yeast in it until completely dissolved. Wait 15 minutes.
  2. Using a mixer, bring sugar with eggs to a thick consistency.
  3. Mix yeast with milk, egg-sugar mixture, salt and warm ghee in one large container.
  4. Add flour, constantly kneading the dough. The result is a mass that does not stick to your hands.
  5. To sustain 40 minutes, previously having covered with cling film.
  6. Divide the dough into 2 parts. Roll out layers from each, anoint with jam and roll rolls.
  7. Spread finished rolls on top with a beaten egg and leave for an hour.
  8. Put on a baking sheet covered with parchment.
  9. After 40 minutes, the baking will be ready. The temperature is 180 degrees.

By adding mineral water to the dough, you can get an incredibly tender yeast dough. It is easy to make fragrant pastries from it for a dinner party.

Ingredients:

  • flour - 500 g;
  • fresh milk - 1 cup;
  • mineral water - 1 glass;
  • a tablespoon of dry yeast;
  • sugar - half a glass;
  • butter - 100 g;
  • egg;
  • salt;
  • jam.

Technology:

  1. Pour yeast into warm milk with mineral water.
  2. Add oil, salt, flour.
  3. Knead the dough thoroughly and leave it warm for 2 hours.
  4. Form balls of the same size from the finished dough. Roll out each ball, grease with jam, twist.
  5. Grease a baking sheet with vegetable oil.
  6. Put the products on top, grease with a beaten egg.
  7. The baking temperature is 180 degrees, the time is 30-35 minutes.

During the preparation of the filling, you can add raisins. This will give the dish a fresh taste.

Chocolate flavored

Such buns are sure to be appreciated by sweet tooth. A roll with jam and a touch of chocolate will give an unforgettable pleasure. Cooking it is not more difficult than the classic biscuit option.

How to cook:

  2. Stir the dough by adding flour and cocoa.
  3. Roll the dough into a thin layer, put on a baking sheet with parchment.
  4. Cook for 20 minutes at 180 degrees.
  5. Cool the cake a little, put the jam on top. On a coarse grater, grate the chocolate bar and grate 2/3 of the resulting chips on top of the jam. Roll the roll and sprinkle it with the remaining chocolate.
