Refueling soups - a visiting card of Slavic cuisine. One of them is pickle with chicken. There are different versions of this soup, pickles, most often, cucumbers, are an invariable component.

Pickle with chicken and pearl barley

We cook a traditional pickle with chicken and pearl barley.

  • chicken - 0.5 kg;
  • water - 2 l;
  • pickled cucumbers - 150 g;
  • brine - 0.5 cups;
  • potatoes - 2 pcs.;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • barley - 0.5 cups;
  • passer oil - 30 ml;
  • tomato - 1 tbsp. l .;
  • seasoning as needed.

The process step by step:

  1. From the birds we cook the basis of the future pickle.
  2. We take out the boiled bird, filter the resulting broth. Separate the fillets and put in a bowl for making soup. Pour strained broth there.
  3. Pearl barley well wash and steam. To do this, pour boiling water into the dishes and let stand.
  4. We cook steamed cereal in broth until soft.
  5. Prepare the vegetables. We turn the potato into medium-sized cubes, the onion and cucumbers into cubes, but very small, the carrots into straws.
  6. We fill the potatoes in the future soup, cook until soft.
  7. We pass onion and carrots. Add the cubes of cucumbers and simmer for 5 minutes, making minimal heating. Then add the tomato and continue cooking for another 2 minutes.
  8. In a pot where potatoes have already been completely cooked, transfer the mixture of ingredients from the pan, pour in the brine and simmer for about fifteen minutes, adjusting the heating to a weak level.

Recipe for multicooker

Delicious is the pickle in the slow cooker.

Let's cook it in the traditional way.

  • chicken - 600 g;
  • pearl barley - 1 measuring cup from the multicooker;
  • potatoes - 2 pcs.;
  • carrots - 1 pc.;
  • pickles (cucumbers, green tomatoes) - 2 pcs.;
  • brine - 0.5 cups;
  • spices as needed.

The process step by step:

  1. We rinse the barley, put it in the bowl, fill it with two measuring cups (multi-glass) of water. It includes the program "cereal" or "porridge" and cook barley until cooked.
  2. When the cereal is cooked, put the washed chicken thighs in a bowl with pearl barley, pour boiling water (two liters) and cook for 45 minutes on the “soup” or “stewing” program.
  3. We prepare the vegetables, chop the potatoes into slices, rub the carrots with a thin straw. Cucumbers are either three on a grater, or cut smaller.
  4. We take out the bird, cool it a bit, separate the meat. Dip it back into the broth.
  5. We send potatoes, carrots and cucumbers there. Pour the brine, season to your liking.
  6. Cook on the same program for 1 hour.

Advice! Carefully salt the pickle, given that pickles and pickle already contain salt.

How to cook with rice

You can cook pickle with rice and chicken, it will turn out just as appetizing.

  • chicken - 1 kg;
  • carrots - 1 pc.;
  • onions - 1 pc.;
  • potatoes - 4 pcs.;
  • rice - 0.5 cups;
  • pickles - 4 pcs.;
  • passer oil - 3 tbsp. l .;
  • seasonings to taste;
  • cloves of garlic - 4 pcs. (optional).

 

The process step by step:

  1. Wash the cereals, changing the water at least five times.
  2. Cook the broth from the bird. Separate the boiled fillet and return it to the pan.
  3. Shred the onion, cut into small cubes or three peeled carrots on a grater. Peeled potatoes cut into rectangular cubes.
  4. We pass the vegetables (except for potatoes) in vegetable oil, then put the cucumbers in the pan, simmer for a couple of minutes.
  5. In a broth we lower the potato sticks and rice, salt, simmer for about 10 minutes at moderate heat. Transfer the passions with cucumbers to the soup and pour the brine. Cook the same amount.
  6. Grind the garlic as finely as possible, dip in the soup, stir and immediately turn off the heat. Let us brew.

Soup with mushrooms and pickles

Mushroom soup with pickles and chicken - an unusual, but quite worthy version of pickle.

  • chicken - 500 g;
  • champignons - 200 g;
  • pickles - 2 pcs.;
  • carrots - 1 pc.;
  • onions - 1 pc.;
  • potatoes - 3 pcs.;
  • seasonings as needed;
  • passivation oil - 30 ml.

The process step by step:

  1. Cook the broth. Separated boiled chicken meat from the seeds, pour it with strained broth.
  2. Dip the potato cubes into the broth, salt and cook until tender.
  3. We pass the carrots with the addition of onions. After three minutes, add the mushrooms, reducing the heat, we will simmer until the mushrooms are ready.
  4. Grind the cucumbers with thin plates.
  5. When the potatoes are cooked, put vegetables with mushrooms and pickles in the soup. Cook at a low level of heating for a quarter of an hour.

 

We cook in Leningrad

Rassolnik in Leningrad - a classic of Soviet cuisine. This soup is prepared, both with pearl barley or rice, and with wheat grits.

 

Structure:

  • chicken - 500 g;
  • water - 2 liters;
  • potatoes - 400 g;
  • carrots - 100 g;
  • wheat groats (or rice) - 80 g;
  • parsley root - 20 g;
  • onions - 2 pcs.;
  • leeks - 40 g;
  • pickles - 120 g;
  • passivation oil - 30 ml;
  • bay leaf - 2 pcs.;
  • allspice (peas) - 3 pcs.;
  • pickle according to need.

The process step by step:

  1. We prepare the base of the soup from chicken with the addition of one raw onion, bay leaf and allspice. Filter the cooked broth, remove the poultry meat from the bones and put in the broth.
  2. In the future soup, add cereal (wheat or rice) and potato cubes. Add some salt. Advice! If you plan to use pearl barley, then it is better to boil the cereals in advance and add to the broth when the potatoes are ready.
  3. We clean the vegetables. Thinly cut both types of onions. Cut carrots and parsley (root) into strips. We pass all prepared vegetables.
  4. We chop the cucumbers and stew with a minimum of water in a small saucepan for 10-15 minutes.
  5. In the broth, where potatoes and cereals have already been cooked, add fried vegetables and steamed pickles. We continue to cook another ten minutes.
  6. We try the soup, if the taste seems fresh, add cucumber pickle.

 

Tasty smoked chicken pickle

Especially piquant will be a pickle with chicken and pearl barley, if you use smoked ham for cooking the broth.

  • raw chicken legs - 1-2 pcs.;
  • smoked chicken leg - 1 pc.;
  • pearl barley - 1/3 of a glass;
  • potatoes - 2 pcs.;
  • pickles - 2 pcs.;
  • carrots - 1 pc.;
  • onion - 1 pc.;
  • tomato paste - 1 tbsp. l .;
  • bay leaf - 2 pcs.;
  • frying oil - 30 ml;
  • spices according to need.

The process step by step:

  1. Wash the legs, put them in a bowl for cooking soup. There we send a piece of smoked chicken and water (2.5 l). Cook until raw bird comes to readiness. Then we filter the liquid, separate the fillets from the legs and send it to the soup base.
  2. Boil the cereal with boiling water, rinse well after an hour.
  3. In the boiled base of the soup we put the groats and raw potatoes (cubes). How to boil again, reduce the degree of heating and cook for 20 minutes.
  4. Fry chopped onions and cubes (or cubes) of carrots. When the vegetables are slightly fried, put the tomato and hold on the stove for another three minutes.
  5. We chop the cucumbers. Dip in the soup, where potato cubes have already been cooked. We send the passer there. Cook for a quarter of an hour by adding chopped dill or other herbs.

 

Fragrant chicken pickle is best seasoned with fresh thick sour cream. In addition, serve fresh bread or small puff pastries. And do not forget to add chopped green dill or parsley to the plates. Bon Appetit everyone!
