Mannick is a favorite cake that needs no introduction. But the original recipe has been changed many times. As a rule, the variations of lush manna on kefir differ from the classic version with additional ingredients or, on the contrary, with the absence of one of the main ones.

Classic “Mannik” on kefir in the oven

  • kefir - 1 tbsp .;
  • semolina - 1 tbsp .;
  • sugar - 1 tbsp .;
  • eggs - 2 pcs.;
  • soda - ½ tsp;
  • vinegar for quenching soda - 5 ml;
  • butter - 15 g.

 

Cooking method:

  1. Beat the eggs, mix them with sugar. Beat with a mixer to a white mass. If you don’t have a mixer, you can whisk with a whisk.
  2. Add kefir to the sweet mass. Quench the soda with vinegar and add to the rest of the ingredients. If small bubbles are visible on the surface, you are on the right track.
  3. It is time to add semolina and mix everything until smooth. Leave the mass for five minutes, then pour in the flour. Mix is ​​not a whisk, but a spoon. You should have a viscous mass.
  4. Leave the dough to stand for literally half an hour. But if this is not possible and you are making a quick whip, you can put it in the oven immediately after mixing the ingredients. But if there is time, do not rush: it will turn out more magnificent.
  5. While the dough is infused, grease the mold with butter so that the finished pie is easy to get. Set the oven to heat up to 180 degrees.
  6. Baking a pie costs 35-40 minutes. In order not to miss the moment when the manna is completely ready, after 20 minutes after the start of baking, start to glance at the process. You can get the cake out of the oven when it has a golden crust. For sure that the manna is ready, pierce it with a match or a toothpick. The dough should not leave a trace on it.
  7. Leave the cake in shape to cool for a few minutes.

You can decorate the finished cake as your heart desires, from chopped nuts to powdered sugar or glaze.

Cooking without flour

In the classic version, this is a pretty high-calorie cake. It is for this reason that a manna recipe appeared on kefir without flour. So, the calorie content of the cake is reduced.

Ingredients:

  • kefir - 1½ st .;
  • semolina - 2 tbsp .;
  • sugar - 1 tbsp .;
  • salt - 1 pinch;
  • eggs - 3 pcs.;
  • baking powder - 18 g;
  • lemon peel - 1 tsp.

The proportions of the main ingredients have changed slightly compared to the classic mannica. But here it is important to follow them, otherwise the dough will be denser and the cake will not rise.

Cooking method:

  1. Mix eggs, sugar and salt. Beat them with a whisk or a white mixer so that all the sand dissolves.
  2. It's time to add lemon zest to the mass. To get it, rub the skin of a clean fruit on a fine grater. It is important that the white, the inside of the peel does not fall into the pie: it is bitter, and only yellow particles are added to the desserts. Since the zest acts as a flavor, it can be replaced with any other. For example, take orange zest or some vanilla sugar.
  3. Add baking powder for the dough. If it seems to you that this recipe is too much, do not worry. The fact is that semolina is heavier than flour, and to raise it you need much more baking powder.
  4. When you get a homogeneous mass, it must be left to settle for 30 minutes. During this time, lubricate the mold and set the oven to heat. The cake is baked as much as the classic mannik.

How to do without eggs

It is possible to further reduce the calorie content of a dish if you remove the eggs from the recipe.

Ingredients:

  • kefir - 1 tbsp .;
  • flour - 1 tbsp .;

  • butter - 125 g;
  • soda - ½ tsp;

Ingredients:

  • semolina - 1 tbsp .;
  • kefir - 1 tbsp .;
  • flour - 1 tbsp .;
  • sugar - 1 tbsp .;
  • butter or margarine - 170 g;
  • soda - 0.5 tsp;
  • filling to taste;
  • eggs - 3 pcs.

Cooking method:

  1. To make the cake as lush and tasty as possible, soak the semolina in kefir for an hour.
  2. When time has passed, add eggs and soda.
  3. Next, add melted butter and sugar, flour.

  • baking powder and vanillin - a whole pack.

The secrets of cooking a magnificent "Mannik" on kefir

There are several secrets that will help the cake rise better. The most important thing is not to open the oven door for the first 20-25 minutes from the start of baking.

The second secret is associated with the mandatory ingredient - kefir. It does not have to be fresh at all. Even better if he managed to stand for a week in the refrigerator. A lush cake will be if you add a little acidified milk to kefir.

In addition, kefir and eggs should not be introduced into the dough directly from the refrigerator. Take them out a little in advance so that they get warm and become room temperature.

It is not necessary to extinguish soda, because we prepare mannik using kefir. But in order for the cake with semolina in the oven to become airy, it can be repaid with lemon juice.
