A favorite treat from childhood are pies with cabbage fried in a pan. Fragrant, crispy, with a gentle filling, they will satisfy the hunger between full meals and will appeal to all households. Despite the fact that many people call such pies non-useful food, you can and should periodically treat yourself to them by making various variations of the dough and toppings.

Pies with cabbage in a pan - a simple and tasty recipe

A quick recipe for fried pies with cabbage will please with its simplicity, time saving and very tasty pastries in the end.

For the test and toppings you will need:

  • premium flour - 500 g;
  • serum - 250 ml;
  • yeast - 1/3 of the package;
  • water - 250 ml;
  • salt - 2 tsp;
  • eggs - 1 pc;
  • granulated sugar - 1 tbsp;
  • sunflower oil - 0.5 l;
  • butter - 30 g;
  • onion - 1 pc.;
  • carrots - 1 pc.;
  • cabbage - 0.5 heads;
  • tomato paste - 1.5 tbsp .;
  • spices to taste.

Begin by preparing the filling, which should cool by the time the test approaches. To do this, a small amount of sunflower oil is heated in a pan, into which finely chopped onions and carrots are grated on a coarse grater. When the vegetables are slightly fried, grated cabbage should be added to them. Shredded in this way cabbage will be smaller than shredded and will appeal to everyone, including children. When the last component is in the pan, everything will need to be thoroughly mixed, cover the container with a lid and reduce the heat.

So that the cabbage does not burn, you can add a little boiled water.

When the vegetables are slightly stewed and soft, pour the tomato paste diluted in boiled water and add salt, sugar, pepper and bay leaf over time. Pour the finished stuffing into a suitable container and set aside.

For the test, the sifted flour is poured into a plastic bowl, a small depression is made in the middle and salt is poured out, an egg is added. Separately, hot water and a cheese cream are diluted in the tank, sugar is added and “live” yeast is introduced. In a microwave, butter is melted, which is mixed in the flour along with the egg and salt. The added yeast is added next. If necessary, flour is added, but so that the dough is not tight. At the end, add about 100 ml of sunflower oil to the dough to make it convenient to work with. To speed up the process of raising the dough, you need to put it in the microwave, setting the temperature to 160 degrees and setting the timer for 7 minutes. The dough that has risen several times can be taken out and proceed to frying the pies.

So that the dough during cooking is not sticky to your hands, you need to collect oil in a container and constantly dip your hands there.

Yeast Dough Recipe

 

Yeast for pastry dough can be taken both "live" and dry. With the latter, the dough will turn out not so lush, but more crispy and thin.

Ingredients:

  • flour - 600 g;
  • warm water - 300 g;
  • dry yeast - 1 tbsp;
  • butter - 2 tbsp .;
  • vegetable oil - 30 ml;
  • sugar - 2 tsp;
  • salt - 2 tsp

Cabbage filling is prepared in the same way as in the previous recipe. To prepare the dough, dilute the required amount of yeast, sugar and salt in warm water. After slowly introduce pre-sifted flour. Knead the dough by adding butter and sunflower oil at the end. You need to knead until the base for the pies sticks to your hands. The finished dough should be covered with a napkin and put away in a warm place.

While the dough is suitable, you can start preparing the filling, if this has not been done before. When preparing it, you need to periodically knead the dough, which should rise several times. After that, small dough cakes are rolled out on a clean table, the filling is laid out on them, pies are formed. Spread them on the heated oil with the seams down. This will help to keep the filling inside the dough and not get enough sleep when frying.

Fried pies with cabbage from puff pastry

For those who do not like to mess with the dough, a recipe for fried pies from puff pastry is suitable. It must be purchased in advance in the store, thawed and used to prepare crispy pastries in a pan. The pies with cabbage in the end are small, very tasty and beautiful.

The filling can be prepared from fresh or sauerkraut (to taste). The test will need about 0.5 kg.

Thawing the dough beforehand, it must be laid out on a table and cut into 22 rectangles (it does not need to be rolled out).

  • kefir - 250 ml;
  • flour - about 650 g;
  • soda - 1 tsp;
  • eggs - 2 pcs.;
  • sugar and salt to taste.

A glass of kefir should be poured into the container, eggs and all other components except flour should be added. Knead everything thoroughly, gradually introduce flour and knead the dough. It should be infused for about 30 minutes, so that the reaction of kefir with soda begins.

From the finished dough you need to roll the rollers, a little thicker than the dumplings, cut them into portioned pieces. Each soen should be rolled out, filled with cabbage filling and fry in sunflower oil.

With sauerkraut

In the pan, you can cook pies with sauerkraut, which will be especially relevant in the winter.

For the test you need to take:

  • milk - 250 ml;
  • flour - 300 g;
  • dry yeast - 2 tsp;
  • sugar - 1 tbsp;
  • salt - 1 tsp;
  • sunflower oil - 20 ml;
  • sauerkraut - 300 g.

In warmed milk, stir yeast with sugar and wait for it to rise. Then salt and sifted flour are added, oil is poured. The dough is kneaded and set aside to insist in a warm place.

Meanwhile, sauerkraut should be stewed in a pan for 15 minutes, after squeezing out excess juice. The dough rolled out into small cakes is filled with cabbage, the edges are plucked, and the workpiece is sent to the pan, straight into the heated oil.

Egg recipe

The dough according to this recipe can be prepared in a bread machine or knead by hand.

To prepare it, you should stock up:

  • flour - 600 g;
  • warm mineral water - 250 ml;
  • refined vegetable oil - 100 ml;
  • salt - 2 tsp;
  • sugar - 1 tbsp;
  • dry yeast - 2 tsp

For the filling you will need a small cabbage, hard-boiled chicken eggs, onions, garlic, salt and spices. Preparing the dough in a bread machine is quite simple by filling the bowl alternately with all the products and turning on the desired mode.

While the base is being prepared, the cabbage is finely chopped, the onion is cut into cubes, and the carrots are rubbed on a coarse grater. Onions, carrots and cabbage are fried alternately in a pan, spices and salt are added. Cook cabbage should be on low heat, adding water, for 15 minutes. At the end, add a little garlic, mix and put in a bowl. Add finely chopped eggs to the cabbage.

Form balls from the dough, roll them out and fill the cakes with filling. Form a pie and fry it in oil. Ready-made pastries should be covered with a clean towel so that it becomes soft.
