Yeast cake is definitely considered the king of pies. With meat and fish, rice with mushrooms and cabbage, sweet, cheesy. But yeast dough is a laborious thing. So you want a pie, but no time? You can bake a great pie with cabbage on kefir! The dough will not be sour, but fresh, but no less tasty and soft. Kefir allows you to cook different types of dough - soda and yeast, aspic and shortbread.

Jellied cabbage pie

It does not take much time to prepare, and the dish will turn out to be tasty, hearty, it can be served to unexpected guests and cooked for a family dinner.

Jellied cabbage pie with kefir is cooked very quickly. Its essence is that the dough turns out to be quite liquid, the filling is poured with it. By the way, you can use anything you want to fill the jellied cake. For example, canned fish with boiled rice, fried chicken, stewed or fried vegetables, etc. are perfect. But the classics of the genre are cabbage.

Since the dough is cooked and baked pretty soon, first prepare the filling.

Procedure:

  1. Dissolve a tablespoon of butter in a pan.
  2. Put the chopped half of the cabbage into oil and then open it.
  3. In principle, such cabbage can already be used as a filling. If you want to further refine and soften the taste of the vegetable, do not regret a couple of boiled and chopped eggs and young fresh dill. Mix and salt everything to taste. Add black pepper or a little grated nutmeg.

Important: During the preparation of fresh cabbage (for frying or stewing in a pan), it is not recommended to cover the dishes with a lid. Otherwise, the cabbage will acquire a bitter taste.

For the test you will need:

  • kefir - one and a half glasses. Instead, you can use any dairy product;
  • a pair of eggs;
  • 1.5-2 cups of premium flour;
  • a pinch of salt and as much soda.

Working process:

  1. Pour kefir into a deep container and add eggs to it.
  2. Salt and pour soda.
  3. Mix well.
  4. Add flour in portions, focusing on the density of the dough. It should not be too tight.
  5. On a greased frying pan with high sides, put the cabbage, level it and pour dough on top.
  6. By this time, you should already have a preheated oven up to about 180 degrees. At this temperature, continue to bake the cake until cooked.

Recipe with sauerkraut on kefir

Sauerkraut is suitable for jellied pie on kefir. This is probably the fastest cabbage pie because you don’t have to cut vegetables for frying. The filling is sour-sharp, brackish, it goes well with jellied dough.

 

Squeeze the cabbage, if it is very acidic, then rinse with cold water.

Next, fry the finely chopped onion in a pan with vegetable oil until the onion becomes transparent. Transfer the squeezed cabbage into the pan with the onion and simmer until tender. As soon as all the excess water comes out, you can sprinkle with black pepper and a little flavor the filling with sugar if it is excessively acidic.

Next, the process is repeated by analogy with the previous options: the filling is placed at the bottom of the mold and filled with liquid kefir dough. The cake is baked the same way.

Lazy cabbage pie

The dough for such a pie is made from the following products:

  • a glass of kefir (200 grams);
  • a pinch of salt;
  • a small spoon of soda;
  • 3 small tablespoons of sugar;
  • three eggs;
  • 7 tablespoons of flour (take as much as the spoon takes, with a slide).

For filling:

  • forks of cabbage weighing about a kilogram;
  • parsley, dill, spinach leaves;
  • salt to taste;
  • butter.

Working process:

  1. Put the oven to heat.
  2. Prepare the filling by chopping the cabbage and stewing it in oil in a pan. Add salt. You can limit yourself to this at this stage, but for a bundle of the main component, we recommend adding one raw egg to the cabbage filling. Mix all components for the test.
  3. Place half of the dough on a well-oiled form, then lay cabbage on top of the dough. Then cover the filling with the second part of the test.
  4. Put in a hot oven and leave to bake at 180 degrees. Willingness to determine as usual - by sticking a dry toothpick into the pie.

Kefir pie with kefir - a classic recipe

Very quickly, literally quickly, you can make a yeast-free cabbage pie. For it, you need a couple of eggs, beaten with a glass of kefir, half a teaspoon of salt, three tablespoons of butter - cream or vegetable. After mixing, add two cups of flour mixed in advance with half a teaspoon of soda. You will get a simple dough that will rise due to the reaction of kefiric acid with soda.

You can make any filling for such a pie - cabbage or rice.

On kefir with yeast

With kefir, an excellent fluffy yeast dough is obtained. A little more troublesome preparation will be rewarded with an appetizing look of the product and the excellent spirit of a real yeast cake. You can prepare the dough, both on a dough and in a gingerless manner. The difference is that with the dough method, the dough is first prepared in a small amount of liquid on water with the addition of flour. With the unpaired method, all components are connected simultaneously. But kefir gives ordinary yeast dough even more lightness and airiness.

Here's how to make a classic yeast dough with kefir.

Would need:

  • a pound of sifted wheat flour;
  • 200 g of kefir;
  • 100 g of purified sunflower oil;
  • a teaspoon of sugar and salt;
  • a small bag of dry yeast;
  • cabbage and carrots for cooking toppings.

Sequencing:

  1. In a small saucepan, heat kefir to curl a little.
  2. Add vegetable oil to warm whey with cottage cheese and mix. Pour sugar with salt.
  3. Pour yeast into the sifted flour, mix the dry mixture and add it to the butter-kefir base. Knead the dough. It should not be too cool, otherwise the product will turn out to be tough.
  4. Leave the dough in the form of a kolobok in a packet to rise.
  5. When the dough rises, divide it in half.
  6. On an oiled parchment or baking mat, place a rolled sheet of one part of the dough.
  7. Put cabbage overcooked with carrots on top of the dough.
  8. From the second part, roll out the same workpiece and cover it with the cabbage filling on top. Pinch the edges.
  9. After half an hour, when the dough in the pie rises, grease the surface with any mixture so that a beautiful crust forms during baking. You can moisten with milk, sugar water, grease with a loose egg.
  10. Bake when the oven is heated at 180 degrees until cooked, it's about half an hour.

Pie with kefir in a slow cooker

A simple and successful recipe, prepare for it:

  • a pound of shredded cabbage,
  • a glass of flour,
  • a little salt - salt the cabbage and put a pinch in the dough,
  • 100 grams of butter,
  • a little less than 1 tsp baking powder;
  • three eggs;
  • a glass of sour cream of any fat content.

Procedure:

  1. Beat kefir (or any fermented milk product) with eggs.
  2. Put softened butter, salt and sugar into the mixture.
  3. Pour baking powder into sifted flour and stir. Combine the dry mixture with the liquid part. Mix.
  4. Cut the young cabbage (you can also winter, but grate it well with salt).
  5. In a slow cooker, generously grease the bottom of the wall with oil, pour half of the dough.
  6. Put the filling on top of the dough. If there is a lot of juice, squeeze a little cabbage. Top up with the rest of the dough.
  7. Set the oven to Bake for an hour.
  8. After the end of the program, set the cooking for another 20 minutes. Then open the lid and remove the cake.
