  • sugar - 2 tbsp. l .;
  • dry (fast-acting) yeast - 1 tsp;
  • vodka - 2 tbsp. l
  • premium flour - 0.5 kg.

For filling:

  • meat (pork) - 500 g;
  • onion - 1 pc.;
  • carrot - 1 pc.;
  • bell pepper - 1 pc.;
  • salt and ground pepper.

Additionally:

  • egg yolk - 1 pc.;
  • flour - 3-4 tbsp. l .;
  • sunflower oil - 2 tsp

First of all, prepare the dough, as this procedure is the most painstaking and lengthy.

Preparation of puff yeast dough:

  1. Heat the milk to 35-38 degrees, add sugar, salt, yeast and a third of the prepared flour to it. Mix well (if there are lumps, do not worry), cover with cellophane and leave to insist for 10-15 minutes. So prepare the dough - the basis of the yeast dough, so that then it starts to rise well and quickly.
  2. When bubbles begin to appear actively in the dough, add eggs, 50 g of softened butter. Whisk these ingredients with a whisk.
  3. Add the remaining flour, knead the dough with your hands.Let lie down for 10-15 minutes, covering with cellophane.
  4. Roll out a thin layer from the whole dough, distribute the rest of the softened butter over it (for this, remove it from the refrigerator in advance). Grease the surface of the oil with vodka, powder with flour. Fold the formation in half, then in half, pinch all the edges. Sprinkle with flour, roll. Fold again, doubled, doubled again, powder with flour and roll - so 4 times.
  5. When you finished folding and rolling, wrap the dough in a plastic bag, put it in the refrigerator for an hour. Then you can work with him.

Preparing the filling:

  1. Twist the meat with onions in a meat grinder, salt and add a pinch of pepper. Pour in half a glass of water, mix, let stand for 15 minutes, so that the meat absorbs water. If the stuffing is too thick, add another third of a glass of water.
  2. Peel the carrots, grate on a fine grater. From the bell pepper, remove the seeds, the stalk, cut into smaller cubes. Fry vegetables in a pan with two tablespoons of sunflower oil, salt a little.
  3. Combine minced meat and vegetable frying, taste it, if necessary add salt and pepper.

Putting the pie together:

  1. Put the dough on a flour-dusted board, cut into two halves, and roll each. Put one part on an unlubricated baking sheet, nothing will burn, since puff pastry has a lot of oil.
  2. Put the filling on the dough, distribute in an even layer. Cover with the second part of the dough, pinch the edges. Lubricate the top with egg yolk, set to bake at 160-170 degrees to a blush.

Puff pastry yeast cake is ready! You can serve it both hot and cold.

With chicken twisted meat

Let's bake a pie with minced meat using yeast-free puff pastry, which we also prepare ourselves.

This baking will be lower in calories than in the first version, but still it cannot be called diet. Too much butter is used to create puff pastry!

It is simply impossible to refuse such a treat, the aroma and taste of meat pie will conquer everyone!

For the test:

  • water - 1 tbsp .;
  • premium flour - 500 g;
  • chicken egg - 2 pcs.;
  • butter sweet butter - 250 g;
  • salt - 1 tsp;
  • vodka - 1 tbsp. l .;
  • vinegar 9% - 3 tbsp. l

For filling:

  • chicken fillet - 500 g;
  • onion - 1 pc.;
  • greens (dill and basil) - a bunch;
  • salt and ground pepper.

Additionally:

  • flour - 3-4 tbsp. l .;
  • egg yolk - 1 pc.

Cooking the dough:

  1. In a cup, mix the egg with water, salt, vodka, vinegar. Stir so that there are no crystals left.
  2. Add sifted flour to the liquid base in small portions, constantly stir with a fork. When it becomes difficult to work with the tool, put the dough on the work surface, pour in the rest of the flour, continue to knead with your hands. Knead at least 5 minutes, if necessary, adjust the density of the dough, adding flour.
  3. Wrap the dough in cellophane, leave it to rest for 30 minutes, this is a mandatory procedure, without which it is very difficult to roll out a thin layer.
  4. Soften the oil with a fork or in a blender.
  5. Roll the dough thinly, put butter on it, sprinkle with flour. Double up, double again, powder with flour, pinch the edges and roll. So you need to fold and roll out 6-7 times (you can and more).
  6. Wrap the dough in a bag and put in the refrigerator for an hour.

Preparing the filling:

  1. Twist the minced chicken and onion.
  2. Finely chop the dill, and pick the basil with your hands, combine with the minced meat. Add salt and pepper, a third of a glass of water, mix.

Putting the pie together:

  1. Divide the dough into two parts, but one should be a little more. Roll out the bigger one, put it in an ungreased form.
  2. Spread the minced meat over the dough.
  3. Roll out the second part of the dough, cover the minced meat with a layer, connect the edges with the edges of the lower part, pinch.

Lubricate the top with whipped yolk, put the cake to bake at a temperature of 160-180 degrees.

Cooking from the base without yeast

  • beef meat - 400 g;
  • chicken egg - 2 pcs.;

  • hard cheese - 200 g;
  • cottage cheese - 100 g;
  • greens (basil and dill) - a bunch;
  • salt and pepper;
  • egg yolk - 1 pc.

Cooking:

  1. While the dough is resting in your refrigerator, you can slowly fill up the filling. Twist only the meat into minced meat, fry it until tender.
  2. Finely chop onion and garlic, fry.
  3. Grate cheese, chop finely.
  4. Combine minced meat, onions with garlic, herbs, cheese and cottage cheese. Beat in raw eggs, salt and pepper. The filling is ready.

Collect the pie, grease the top with yolk and bake until blush (at 170 degrees it takes about half an hour).

Layer cake with minced meat "Snail"

This is not only a very delicious cake, but also quite beautiful! Children will especially like the baking option!

Ingredients:

  • puff pastry (cook according to any of the prescribed recipes);
  • pork meat - 200 g;
  • beef meat - 200g;
  • onion - 1 pc.;
  • bell pepper - 1 pc.;
  • tomato paste - 2 tbsp. l .;
  • salt and pepper;
  • 1 egg yolk

 

Cooking:

  1. Roll the meat with onions through a meat grinder.
  2. Peel and finely chop the pepper.
  3. Sauté the minced meat until tender, add the tomato paste and let it simmer for another 2-3 minutes.
  4. Mix the minced meat with bell pepper, salt and ground pepper.
  5. Roll the dough thinly, cut it into ribbons 10-15 cm wide.
  6. Put the stuffing in the center of each tape with a long strip, connect the edges and pinch.
  7. In a form (preferably round) with a snail put the rolls of dough with meat, grease the top with yolk.

Bake the “Snail” puff pie until the crust is browned, this takes about 20-30 minutes.

From the finished puff pastry

If you need something quickly, without too much hassle to prepare for tea, buy a ready-made puff pastry in the store. Leave it to defrost, and prepare the filling yourself at this time.

For filling a quick pie you will need:

  • meat (any, you can chicken) - 400 g;
  • onion - 1 pc.;
  • garlic - 2 cloves;
  • cheese - 100 g;
  • yolk - 1 pc.;
  • salt and ground pepper.

Cooking:

  1. Twist the meat with onions and garlic. Salt, pepper, add a third glass of water (for chicken) or half a glass of water (for pork and beef), mix.
  2. Grate the cheese.
  3. Divide the dough in half, roll both sides. Put one on a baking sheet, distribute the minced meat on it so that the edges are empty (2-3 cm). Put cheese on top of the meat.
  4. Cover the filling with the second half of the dough, pinch the edges, brush the yolk on top.

Bake the puff pie with meat filling until cooked, which is determined by the rosy upper crust.

With the addition of potatoes

A more satisfying variation of meat pie - with the addition of potatoes. The recipe will enjoy the ease of preparation, the availability of ingredients.

The following products will be required:

  • puff pastry (any) - 0.5-0.7 kg;
  • pork meat - 300 g;
  • potato - 4 pcs.;
  • onion - 1 pc.;
  • salt and pepper.

Cooking:

  1. Twist the meat with onions. Salt and pepper, add 1/4 cup of water.
  2. Peel the potato, cut into thin circles.
  3. Divide the dough into two halves, each roll out.
  4. Put one part of puff pastry into a mold, distribute potatoes on it. Put the minced meat on the potatoes, cover with the second half of the dough, pinch the edges.
  5. With a fork, pierce the top of the cake several times, steam will escape through these holes.
  6. Lubricate the cake with yolk, bake for about 40 minutes, determine the readiness by crust.
