Basic shortcrust pastry for pie

This is the main recipe, which is quite simple and versatile, and most importantly - is suitable for absolutely any dish. Such a dough will be crispy, but tender inside, as well as strong enough and will withstand any filling, even liquid.

To give this base additional flavor, citrus zest, vanilla or spices can be added to the composition.

However, for a basic recipe, you need to take:

  • 750 grams of butter;
  • 15 grams of salt;
  • 40 grams of chicken yolks;
  • 15 grams of powdered sugar or fine sugar;
  • 200 grams of whole milk;
  • 1 kilogram of flour.

In cooking, the temperature of the food is especially important. So, the oil should be cold, but not frozen, that is, it should keep its shape and not blur, but be a little malleable and cut well with a knife. But the yolks are used only at room temperature.

Cut cold butter into cubes, in a separate bowl, grind butter and flour with your hands until crumbs are obtained. Add to it all the yolks, as well as sugar and salt. Stir and then pour milk into a bowl and knead the dough with your hands. It will turn out soft, uniform and elastic. This kind of test will be beneficial to lie in the refrigerator for about an hour. The main thing is to wrap it in a bag, otherwise its surface will wind off.

Lemon Pie Base

This is exactly the recipe when the dough can be flavored with zest so that it harmonizes well with the filling. It is also distinguished by the presence of baking powder and starch in it. The first will give greater splendor, and starch will make the finished dough more crumbly.

  • flour - 400 g;
  • plum oil., fat content not less than 82% - 200 g;
  • an egg of category C1 - 2;
  • baking powder - 1 tsp;
  • lemons - 2;
  • sugar - 250 g;
  • potato or corn starch - 1 table. a spoon.

This dough is prepared in a different way and does not require grinding cold oil with flour. First you need to remove the zest from lemons. Then mix it with flour that has been sieved and combined with the baking powder. Next, soft butter should be thoroughly ground with sugar. After that, introduce the eggs to the oil one by one, mixing them well. Then pour the flour into the butter and egg mixture and immediately knead the dough with your hands. Let it rest on the shelf of the refrigerator under the film for about 20 minutes, after which it can be rolled out and filled with lemon filling.

Grated shortcrust pastry cake

In fact, behind this name is a dessert that is well known to all of us from childhood. Traditionally, currant jam is taken for the filling, which is sprinkled on top with crumbs of shortcrust pastry.

To recreate this recipe, take:

  • 4 cups without a hill of premium flour;
  • 200 g unsalted plums. oils;
  • a little vanillin;
  • 2 village eggs;
  • 1 tbsp. fine sugar;
  • half tsp soda;
  • half tsp vinegar
  • 1 tbsp. currant jam with berries.

To prepare the dough, first you need to cut the butter into a cube and soften a little. You can get it in advance and put it on the table, or you can put it in the microwave for several seconds. It is important not to melt it, but only to soften it. Using a mixer or manually mix the oil with vanilla and sugar. To a homogeneous mass, break the eggs and mix everything again. In a small container, extinguish the soda with vinegar and mix in the dough.

Pour half a glass of the total amount of flour, and sift the rest of the flour and slowly enter into the dough, kneading it thoroughly. When it is ready, divide it into 2 parts, one of which will be a little more. On a baking sheet, lay a sheet of baking paper and spread it on your hands, stretching - you get the base of the pie. Put jam on it evenly.

Add the remaining half a glass of flour to the second piece and knead until a uniform, denser and drier dough. Rub it through a coarse grater on top of the jam to get chips. How to make shortcrust pastry without eggs?

The basic recipe includes eggs, but it happens that you have to refuse them. You can make shortbread dough without them. The taste will be slightly different from the classic, but not at all for the worse.

Components:

  • 3 cups sifted flour;
  • 200 g of quality plums. oils;
  • 4 table. spoons of sour cream;
  • 1 tbsp. Sahara;
  • a quarter teaspoon of salt.

Mix soft butter with granulated sugar and grind with your hands to melt the grains. Add salt and flour to the butter, knead the dough. Then add sour cream and mix it in the dough. After that, wrap it in film and put it in the cold for a couple of hours.

Yeast shortcrust pastry can be the highlight of your home baking. This dough is unusual, it took the splendor of yeast, the fragility of sand and became an ornament for any muffin.

To make a shortcrust pastry with yeast, take:

  • 25 g of fresh yeast;
  • table. a spoonful of sugar;
  • half of Art. milk;
  • egg;
  • 250 g plums. oils;
  • 3 tbsp. flour.

First you need to take the yeast, grind with sugar, and then dilute them with warmed warm milk. Leave the bowl for a while. In the meantime, do butter - put it on a board with flour and chop with a wide knife into crumbs. Drive an egg into flour and butter, beat with a fork and mix well. Transfer the resulting workpiece into a bowl, pour in the yeast mixture and knead the dough. If it is too sticky, add a little flour. Knead and, as usual, wrap it in film, put in the cold for an hour. After that, the dough can be rolled out and a pie based on it can be prepared.

Sand base for cottage cheese pie

Another ingredient that will give the dough a pleasant creamy taste and a variety of textures is cottage cheese. From such shortcrust pastry, you can make a pie with curd filling. To fully reveal the taste of a dairy product, you can make a filling of fruits or even unsweetened, for example, cheese with herbs.

For the curd dough, take:

  • 225 g of flour;
  • 150 g of cottage cheese;
  • 150 g plums. oils;
  • 1.5 tbsp. l Sahara;
  • a pinch of salt.

In this recipe you will need cold butter, cut into cubes. If you rub it with your hands, then they should also be cold enough so that the oil does not melt before the process begins. Therefore, hold your hands under cold water, and then mash the butter with flour, cottage cheese, sugar and salt. Due to the fact that the cottage cheese may be less or more fat, the consistency of the test can also change. If the dough is too thin, add a little flour. If the lump does not roll, and the dough looks more like dry crumbs, add a little ice water. When the dough mixes well and an elastic homogeneous lump forms, wrap it in a bag and leave it in the refrigerator for an hour or even a couple of hours.

How to make chocolate dough for a berry pie?

For berry pie, any of the above cooking options is suitable. However, you can add components to the composition that will make the taste of the finished baking richer, for example, chocolate. The combination of shortcrust pastry with juicy berries, for example, with cherries is a real pleasure.

The easiest way to make shortbread dough with chocolate is to replace part of the flour with cocoa. Only in no case can you add cocoa to the base recipe without removing part of the flour. Extra components will make the dough too dry.

But there is a way to make shortbread dough not just brown, but really chocolate, with a bright rich taste.

To cook it, take:

  • 270 g of baking flour;
  • 200 g of fresh plums. oils;
  • category C1 egg;
  • 3 table. tablespoons of cocoa;
  • 30 ml of milk;
  • 6 table. tablespoons of sugar;
  • salt.

To begin with, put 50 grams of butter in a small bucket, as well as sugar and milk. Keep on low heat until the butter and sugar melt. Add cocoa to the mixture and, stirring, bring it to a boil. Without stopping to stir, cook the mass for a couple of minutes until thickened.

Next, remove the bucket from the stove and cool. Prepare the base of the dough at this time. It is convenient to do this in a food processor. His knives will quickly grind the remaining oil, flour, egg and salt into crumbs. Add chocolate mass to the crumbs and mix everything. The finished dough will be very tender, but will not be able to keep in shape and will not be plastic. In order for it to acquire such qualities, it needs to ripen in the refrigerator.
