Pearl barley has long held a place of honor on the table. They called it imperial and cooked with great pleasure. Adding vegetables to pearl barley can significantly diversify its taste.

The easiest recipe:

  • pearl barley - 350 g;
  • onions - 2 pcs.;
  • small tomatoes - 2 pcs.;
  • bell pepper - 1 pc.;
  • parsley - 1 bunch;
  • spices, salt - to taste.

It is possible to significantly reduce the time for preparing barley if you rinse and soak the cereal in warm water for 7-9 hours, preferably at night.

Cooking Option:

  1. Drain the water in which the barley is infused, rinse. Pour it into the pan, add a liter of water and salt.
  2. Bring to a boil, simmer for 30-40 minutes on low heat. After throwing the cereal in a colander, excess fluid will go away.
  3. Prepare the vegetables. After clearing the seeds, finely chop the pepper into cubes. Chop the onion into thin half rings. Chop the tomatoes with medium cubes. Finely chop the parsley.
  4. Fry pepper and onion in a well-heated pan with vegetable oil for 10-15 minutes. Pour barley to them, fry for another 5 minutes. Do not forget to constantly stir!
  5. Pour tomatoes and parsley into porridge. Season with black pepper and other spices to taste. After 2-3 minutes, remove from heat. Barley porridge with vegetables is ready.

With chicken in the oven

Barley porridge is a universal product. It goes well not only with vegetables, but also with meat. It is very tasty if you bake it in the oven with chicken.

 

Product Composition:

  • whole chicken - 1.5 kg;
  • pearl barley - 1 tbsp .;
  • carrots - 1 pc.;
  • onions - 1-2 pcs.;
  • prunes - 9-10 pcs.;
  • spices, salt - to taste;
  • sleeve for baking.

Cooking:

  1. Pour raw cereal with 4 cups of cold water and cook for half an hour. Drain, cool slightly.
  2. Dice onions and carrots. Pour boiling water over prunes. Mix everything with pearl barley. Add to taste salt with spices.
  3. Rinse the chicken, grate it inside and out with salt and pepper. Top with a mixture of pearl barley and vegetables.
  4. Put the chicken in the sleeve along with the rest of the porridge. Bake for an hour in an oven preheated to 180 degrees.

Prescription composition:

  • pearl barley - 1 tbsp .;
  • fresh champignons - 250 g;
  • onions - 2 pcs.;
  • carrots - 1 pc.;
  • dried parsley - 1 pack;
  • vegetable oil - 3-4 tbsp. l .;
  • salt to taste.

Cooking process:

  1. Soak the cereal overnight, after draining the water, rinse thoroughly.
  2. Finely chop, then fry the onion. Cut the carrots into small cubes, and the mushrooms into thin plates. Mix everything with pearl barley.
  3. Arrange in pots. Pour half a teaspoon of salt into each, then a tablespoon of vegetable oil. Grind dried parsley.
  4. Pour with hot water to cover the porridge by 2 cm. Put in the oven, preheated to 200 degrees, for an hour and a half. Garnish with fresh sprigs of dill.

Champignons can be replaced with any other mushrooms, and fresh - dried. Optionally, 10 minutes before the readiness to grind with grated cheese.

Salad with barley and vegetables for the winter

Mistresses often use porridge for conservation. Preparing a salad for the winter from barley and vegetables is not difficult. It compensates for at least a little vitamin deficiency in the winter.

 

The recipe consists of:

  • tomatoes - 5 kg;
  • onions - 1 kg;
  • carrots - 1 kg;
  • pearl barley - 2 tbsp .;
  • bell pepper - 7 pcs.;
  • vegetable oil - 1 l;
  • sugar - 1.5 tbsp .;
  • salt - 4 tbsp. l

Cook sequentially:

  1. Chop vegetables. Tomatoes - pieces of medium size, pepper - in small cubes, and onions - thin half rings. Rub carrots on a coarse grater.
  2. Rinse the barley, mix it with vegetables in a deep saucepan. Pour in oil, add salt and sugar.
  3. Wait until it boils, then simmer for 2 hours over low heat. Stir so that the salad does not stick to the bottom and does not burn.
  4. Arrange the finished dish in jars, roll up hermetically.

It is important to remember that canning is only necessary in sterilized jars, after thorough heat treatment!

When serving, you can season with black pepper for spiciness. This salad will add bright colors to gray winter days.

Tasty risotto with meat

Having prepared Italian risotto, you can turn a simple pearl barley porridge with vegetables into a gourmet dish. This idea will add variety and add a new sound to the familiar pearl bar.

Components:

  • pearl barley - 300 g;
  • beef - 250 g;
  • mushrooms - 400 g;
  • white wine - 250 ml;
  • shallots - 2 pcs.;
  • garlic - 2 cloves;
  • butter and olive oil - 1 tbsp. l .;
  • meat broth - 1 l;
  • dry thyme - 1 tbsp. l .;
  • grated parmesan - 3 tbsp. l

Cooking sequence:

  1. Take a deep pan with thick walls or a cauldron. Heat oil at the bottom, add finely chopped onion and garlic. Fry for 5 minutes.
  2. Cut the beef into strips, cook for another 5 minutes.
  3. Rinse and pour in the cereal. Pour in wine, simmer for a couple of minutes.
  4. Add diced mushrooms and thyme. Pour all 3/4 of the broth.
  5. Boil for about an hour, pouring the remaining broth, mix well. A minute before the readiness to fill in grated parmesan.

It should turn out to be a viscous porridge, which is preferably immediately served to the table. Rub the parmesan on top and garnish with green onions.
