Barley with mushrooms in the oven

  • 160 g of fresh champignons;

  1. We wash the barley grains and steam with boiling water.

Many gourmets do not consider pearl barley to be an exquisite cereal, so dishes from it do not find a place in their menu. But it is important to remember that such porridge is very useful, and if you know how to cook it correctly, you can get a very tasty and satisfying meal. We offer you to cook barley with mushrooms, onions and carrots - a delicious dish that will be an excellent side dish for any meat, fish and even offal.

Ingredients:

  • two cups of barley;
  • a pair of medium onions and carrots;
  • 230 g of mushrooms;
  • spices, oil

We will cook like this:

  1. Pour barley grains with water and leave for two-thirds of an hour. Then we pour four glasses of water into the pan, and as soon as the liquid boils, we pour the grains and salt. We introduce a spoonful of oil and after 20 minutes the cereal will be ready. To enrich the taste of porridge a little, put butter in it.
  2. We take a frying pan, heat the oil and start frying vegetables and mushrooms. First, put half the onion rings, then add the grated carrots and after five minutes add the plate of mushrooms. Salt, pepper and simmer the ingredients for ten minutes.
  3. After, we take a large clay pot or several small ones, put fried vegetables with mushrooms in it, and fill up the porridge. We cover everything and simmer the dish in the oven for 20 minutes (temperature - 180 ° C).

With frozen mushrooms

Barley can be prepared not only with fresh, but with frozen mushrooms. The dish turns out the same juicy, satisfying and aromatic.

For the recipe, do not use a large number of seasonings that can kill the mushroom taste, just add a little salt and a little black pepper.

Ingredients:

  • a glass of cereal;
  • three handfuls of frozen mushrooms;
  • two tablespoons melted butter;
  • bulb;
  • 110 ml of white wine;
  • 35 g of Parmesan.

Cooking method:

  1. Soak barley grains in water for 40 minutes. To make the porridge friable, before sending the grains into boiling water, they need to be fried in a dry frying pan.
  2. In slightly salted water, boil frozen mushrooms for 20 minutes. It’s not worth pouring the broth from them, it can be used further in the recipe instead of water.
  3. To softness, we pass onion cubes in ghee, then we fill in the cereal and after five minutes pour the wine. As soon as the alcohol evaporates, pour a glass of mushroom broth and wait for its complete evaporation.
  4. After, lay the chopped mushrooms, salt and pepper the dish to taste. Pour the broth or water in a ratio of 1: 2. Stew food for a couple of minutes, then remove from heat, mix with grated Parmesan. We transfer the resulting composition to a mold or a pot and send it to the oven for 40 minutes (temperature - 180 ° C).

When serving, the dish can again be sprinkled with cheese.

Dried mushroom soup with barley in a slow cooker

Dishes with the addition of dried mushrooms turn out to be more flavorful, therefore, we strongly recommend cooking an appetizing soup with dried mushrooms and pearl barley. So that the cooking process does not take much effort, we cook the dish in a slow cooker.

  • 160 g of dried mushrooms;
  • three potato tubers;
  • carrot and bulb;
  • three tablespoons of barley grains;
  • oil, spices.

Cooking method:

  1. Before cooking soup from dried mushrooms, they must first be soaked in water for at least an hour. And then just chop finely. It is better to strain the water in which the mushrooms have been soaked, but not to pour it - it will still be useful to us.
  2. We turn on the appliance, select the “Frying” mode, pour oil into the bowl, heat and pass onion cubes, grated carrots and chopped mushrooms.
  3. As soon as the vegetables are soft, we throw the cubes of potatoes and fill in the cereal. Pour water from under the mushrooms and about two liters of boiling water, salt, and pepper.
  4. You can cook soup in the same mode, it will take an hour to prepare. But it’s better to choose the “Stew” mode, then the dish will be cooked an hour longer, but the result is worth it. So the ingredients will languish, and the finished meal will turn out as if from a Russian oven.

Cooking with Chicken

Mushrooms and cereals are, of course, delicious, but many gourmets cannot live without meat. Especially for them we offer the following recipe for pearl barley with chicken.

Ingredients:

  • 320 g of barley;
  • 280 g bird fillet;
  • 245 g of mushrooms;
  • onions and carrots;
  • two garlic cloves.

Cooking method:

  1. Pour barley grains into ordinary water and insist 40 minutes.
  2. We turn on the device in the "Frying" mode, pour in the oil. While it is warming up, we cut the bird fillet into small cubes, and then fry until golden.
  3. After we put chopped onions, garlic and carrots to the meat, we simmer the products together until the vegetables are ready.
  4. Pour cereal, pour water in a ratio of 1: 2, go to the "Extinguishing" mode and prepare the dish for an hour.

Meat recipe

For those who are not very fond of dietary meat, we offer a recipe with beef. We will also prepare the dish in the slow cooker.

Ingredients:

  • 280 g of barley grains;
  • 380 g of beef;
  • 180 g of champignons;
  • large onion and carrot;
  • 110 g of green peas.

Cooking method:

  1. In the “Frying” mode, we fry the beef slices in hot oil until golden. Then we salt, pepper, pour the meat with water and simmer for about 40 minutes in the “Stew” mode.
  2. We cut the champignons into four parts, cut the carrots into strips, and the onions into cubes.
  3. As soon as the meat is stewed, put the mushrooms in it and after ten minutes add the vegetables.
  4. If they become soft, we fall asleep peas, and after two minutes we spread the barley soaked at night. Mix and continue cooking in the same mode for an hour.

Barley cutlets with mushrooms

Barley can not only be cooked, but also cutlets can be made from it. Such products are called a vegetarian burger.

Ingredients:

  • a glass of already cooked barley;
  • 265 g of mushrooms;
  • one carrot and onion;
  • celery (root and stems);
  • spices, oil, cornmeal.

Cooking method:

  1. In the bowl of the blender, pour the already boiled cereal with mushrooms and vegetables. Grind to the consistency of minced meat.
  2. Add the spices. Here you can use not only salt, but also paprika, as well as masala spices (Indian).
