Scones are the oldest type of bread on earth. Traditionally, they are cooked in ovens, and only water, flour and salt are included. However, the modern kitchen offers many recipes, complemented by other ingredients and cooked in an ordinary pan. One of the most popular options is cheese cakes. Making dough for flat cakes: varieties and recipes

For the first time, cheese cakes began to be prepared in the Caucasus. Each nation has its own variety of dishes. For the traditional method, wheat or corn flour is used, however, cheese cakes are also prepared from rye, oat, buckwheat flour.

The dough for flat cakes is fresh or rich. The latter is prepared using yeast.

Knead the dough on tortillas only by hand. There is an important nuance in the preparation of the dough for flat cakes: it must be allowed to ripen.

It can reach within 2-3 hours, and not on the table, but in the refrigerator. Such manipulation significantly improves the quality of the dough, and products from it will be more magnificent. In the refrigerator, not only yeast-free, but also yeast dough is placed. Slow fermentation makes it airy, obedient.

In addition to products, for baking cheese cakes, you will need the following utensils:

  • deep bowl for dough;
  • sieve:
  • rolling pin;
  • knife;
  • two hundred gram glass;
  • pan.

Cheese Pancake Recipe

This basic recipe is extremely simple.

  • 2 cups of grated cheese are taken, combined with a teaspoon of salt, the same volume of soda and sugar to taste;
  • 2 cups of sour milk or water are added;
  • with continuous stirring, 800-900 grams of sifted flour are poured in parts;
  • the product is exposed to cold for two hours.

Then the rested dough is taken out, a thick sausage rolls from it and is divided into equal “koloboks” with a knife. Each of them is flattened, taking the form of a cake. Everything is fried on both sides without adding oil.

Tortillas removed from the pan are poured with hot oil. Using this technology, the fastest cheese cakes in a pan are obtained.

Kefir cheese cakes

Tortillas in a pan on kefir with cheese are prepared in this way:

  • in 2 glasses of kefir 1 teaspoon of soda is quenched;
  • a small amount of salt and sugar is dissolved there (to taste);
  • 2 eggs are driven in, the mixture is shaken with a whisk with vegetable oil;
  • 1 kilogram of flour is sprinkled in small parts;
  • the dough is placed in the cold.

After two hours, the pastry dough is laid out on the table, kneaded, rolled up the sausage and divided into buns. Each is rolled into a centimeter-thick flat cake.

The cheese is cut into small cubes, laid out on flat cakes and pressed into their surface. Then the products are fried and poured with hot butter.

Tortillas with cheese and herbs

 

This recipe is a variation on the theme of the previous one. The ingredients are needed the same and in the same quantity, but instead of hard cheese they take soft, like suluguni. Additionally, a bunch of various greens - cilantro, dill, basil, parsley, is included in the set of products.

The dough is prepared using the same technology as for ordinary kefir cakes. Then they act like this:

  • cheese is chopped with herbs;
  • form lumps from the cheese mass;
  • in the middle of each rolled cake they put a cheese ball;
  • collect the edges of the cakes with a kulochka, glue them;
  • turn the products over on the other side and slightly pass with a rolling pin.

Tortillas in a pan with cheese and herbs are also fried without oil. They are served in the heat of the heat, not allowing to cool, with hot oil.

Cheese and ham flat cakes

The technological scheme for the preparation of cakes looks like this:

  • in 2 glasses of kefir 1 teaspoon of soda is quenched, sugar and salt dissolve (to taste);
  • pour 2 cups of grated cheese;
  • 4 cups of wheat flour is added in small parts;
  • the dough goes to ripen in the cold;
  • after 2 hours, cakes form;
  • a little ham is placed in the middle of each, the edges are gathered with a bag and glued together;
  • the product is again slightly flattened with a rolling pin.

Georgian cheese cakes

The most famous cheese cakes in the world are khachapuri. For the classic recipe, they take Georgian cheese imeruli. But since finding it on sale is not easy, you can experiment with combinations of cheeses:

  • feta cheese and suluguni;
  • Adyghe cheese and feta cheese;
  • Adyghe cheese and mozzarella;
  • fat non-acidic cottage cheese and mozzarella.

Another necessary but inaccessible product for khachapuri is yogurt. However, it is well replaced by a mixture of sour cream and kefir in equal proportions.

Before kneading the dough, some preparatory manipulations are performed. 100 grams of butter is kept warm. It should become soft, but not spread. Then 2 tablespoons are deposited on the filling, and the rest is melted.

Heavily salty cheese is steeped in cold water for several hours.

The further course of action is as follows:

  • in 250 ml of kefir-sour cream mixture (or in the same amount of yogurt) half a teaspoon of soda is introduced;
  • salt and sugar dissolve there;
  • melted butter is poured in;
  • slowly, in small parts flour is added in a volume of 300 grams;
  • the dough ripens in the cold.

The filling is prepared in a couple of minutes: 350 grams of cheese is ground with 2 tablespoons of sour cream and soft butter.

The dough is divided into quarters. A cake is made from each, and a quarter of the filling is placed in the middle. The edges are gathered in a bag. The product is flattened by hand and slightly smoothed with a rolling pin. The final thickness is about 1.5 centimeters.

Khachapuri is fried without fat and served with butter.

Abkhazian cheese cakes in a pan

 

An incredibly tasty cheese cake in a pan comes out according to the Abkhazian recipe. In Abkhazia itself, this dish is called "achash."

The first step is preparing the leaven:

  • 1 teaspoon of fast-acting yeast, a little sugar and flour are dissolved in a small volume of heated water;
  • mixes and leaves for 20 minutes.

When the sourdough starts bubbling, you can start preparing the dough:

  • 1 kilogram of flour is sifted slide directly into the bowl;
  • a hole is made at the top;
  • leaven poured into the hole;
  • everything is salted;
  • 2 eggs are driven in;
  • 500 milliliters of fat yogurt and 200 grams of melted butter are poured in small parts;
  • the dough is set in the cold to ripen.

Meanwhile, the filling is being prepared: 800-900 grams of Adyghe cheese is chopped and salted if necessary. The same koloboks are formed from dough and cheese separately. Dough koloboks roll out, lumps of filling are stacked on them. Edges rise kulchek and pinched. Still rolling out 1-3 cm thick.

Achash is fried under a lid in oil. The product is very lush.

Tomato cheese cakes with greens in a pan

Original, tasty and bright cakes are obtained from custard dough prepared on the basis of tomato juice.

The dough for tomato and cheese pancakes is done like this:

  • 400 ml of tomato juice, 400 ml of water and a little salt are brought to a boil with 8 tablespoons of vegetable oil;
  • the mixture is removed from the fire;
  • 800 grams of flour is gradually poured into the hot liquid;
  • everything is well kneaded and cooled.

The dough is divided and small cakes are formed. In the middle of each is placed a portion of the filling prepared from 600 grams of grated cheese and a bunch of any chopped greens. The edges rise and pinch. The product is flattened by hands. After frying it is poured with hot oil.

Italian flatbread with cheese and herbs in a pan without oil

 

Italian tortilla called focaccia. This traditional Mediterranean dish is easy to prepare, and a selection of products for it is very affordable.

Focaccia is prepared using the following technology:

  • 2 teaspoons of fast-acting yeast are dissolved in 1 cup of heated water, salt and sugar are added in an arbitrary amount;
  • 200 grams of flour are mixed, covered and left in a warm place for a short time;
  • 200 grams of flour and 4 tablespoons of olive oil are added;
  • everything is kneaded to homogeneity, covered with a napkin and stood in the heat a little more;
  • the risen dough is crushed for the last time;
  • cakes are rolling out.

Then they are fried on one side and turned over. On the toasted upper side lay a filling made of 300 grams of grated cheese mixed with chopped herbs and marjoram. Focaccia comes to readiness under the lid.

Spicy tortillas with smoked cheese and herbs

 

This is another version of cakes in which cheese is added directly during frying. The consistency of dough for them is more like dough for fritters.

It is prepared by simply mixing 6 cups of wheat flour, 900 ml of kefir, 2 eggs, salt and sugar. In kefir, 2 teaspoons of soda are pre-repaid.

While the dough is standing in the cold, 600 grams of smoked cheese is rubbed and mixed with a bunch of chopped greens. An arbitrary amount of hot pepper is added to the mixture to taste.

Vegetable oil is poured into the pan, warmed well. The dough is laid on it. When it is slightly browned and bubbly, the cheese mixture is placed on top. Then a few more spoons of dough are poured, and the cake turns over.

Serve such a product with sour cream.

Curd cheese cakes

The combination of cottage cheese and cheese in the filling of cakes is unlikely to leave indifferent, and the dough for this product is prepared very quickly:

  • 450 grams of wheat flour mixed with salt and 1 teaspoon of soda;
  • 2 tablespoons of melted butter and 300 milliliters of kefir are poured into the flour, kneaded;
  • kneading is done with adding flour;
  • the dough goes to rest for 15 minutes.

Meanwhile, the filling is being prepared. 150-200 grams of feta cheese are removed from the brine and kneading with 1 packet of cottage cheese. A bunch of greens and a few feathers of green onions are crushed and added to the cheese-curd mixture.

Flat cakes are formed from the dough. On each laid out a little filling. The edges are plucked with a kulchek. The cake is rolled out with a rolling pin and sent to the pan.

After frying, served with hot oil.

Cheese tortilla with meat in a pan

A tortilla fried with cheese and meat is a very hearty meal that can replace dinner. To implement the recipe, you will need 2 cups finely chopped boiled meat of beef or pork.

In some versions of the recipe, chopped boiled meat is proposed to be replaced with raw minced meat. However, in the filling it is not baked too well, so it should be pre-fried.

Cheese and meat cake is prepared in the same way as a cheese and ham cake.

  • in 2 glasses of kefir 1 teaspoon of soda is quenched;
  • sugar and salt are dissolved in kefir (to taste);
  • pour 2 cups of grated cheese;
  • 4 cups of wheat flour is added in small parts;
  • the dough goes to ripen in the cold;
  • after 2 hours, cakes form;
  • in the middle of each, the meat filling is placed, the edges are gathered with a bag and pinched;
  • the product is again slightly flattened with a rolling pin.

After roasting, serve hot by pouring oil.

Cheese cake with chicken in a pan

A little less nutritious, but no less satisfying, is a tortilla with cheese and chicken.

The dough is kneaded according to the same technology, and for variety and an additional reduction in calories, instead of a portion of wheat flour, you can take rye:

  • in 4 cups kefir 2 teaspoons of soda are quenched;
  • sugar and salt are dissolved there (to taste);
  • pour 4 cups of grated cheese;
  • 4 cups of rye flour are added in small parts;
  • in the process of kneading, wheat flour is gradually poured in such a volume that the dough is well away from the hands;
  • the dough goes to ripen in the cold;
  • after 2 hours, cakes form;
  • in the middle of each is a filling made from chopped boiled chicken meat (about 3 glasses will be required) and chopped dill;
  • the edges are collected with a pouch and plucked;
  • the product is again slightly flattened with a rolling pin.

Scones are sprinkled with sesame seeds and after frying served with hot oil.
