In the classic version, the dish is prepared on the basis of:

  • beef meat - 500 g;
  • potatoes - 5-7 tubers;
  • carrots - 3 medium-sized root crops;
  • tomato - 8 pcs.;
  • sweet pepper - 3 pcs.;
  • zirs - a teaspoon without a slide;
  • Lavrushki - a couple of pieces;
  • hot ground pepper - 0.5 tsp;
  • sun hop hops - 1 tsp;
  • salt.

The classic Lagman recipe will help you prepare a dish that is closer to the traditional one, without any innovations. On a stove in a cast iron cauldron or deep frying pan, you need to warm the sunflower oil well. When it reaches the desired temperature, you should lower the meat into it, cut into neat squares and fry until golden brown. You can slightly add the meat product, stew for several minutes under the lid and add chopped onions. Stew meat with onions for about 8 minutes under a lid, then add diced carrots and potatoes. Simmer for about 20 minutes.

Following are fresh tomatoes, diced and bell peppers. All products are poured with broth (you can boiled water) and when the liquid begins to boil, you need to pour spices, cover and cook for 30 minutes. 12 minutes before the end of cooking, chopped garlic teeth are introduced and the noodles are boiled. You can purchase store noodles or cook them yourself.

Serve the dish as follows - a little noodles are laid out on the plate, vegetables and meat on top. All this is poured into broth and served at the table.

In a slow cooker

When the lagman appeared, there were no multicookers. Nevertheless, a dish prepared in a miracle machine turns out to be no less tasty than on a stove in a cauldron.

To prepare the meal, you should stock up:

  • meat broth - 1.4 l;
  • beef or veal - 400 g;
  • special noodles - 230 g;
  • sweet bell pepper - 350 g;
  • a large white onion;
  • carrots;
  • butter - 4 tbsp. l .;
  • tomatoes - 3 pcs.;
  • small zucchini;
  • salt, spices;
  • dried or fresh garlic.

The onion is peeled and cut into half rings. Carrots with pepper are chopped into strips, tomatoes - in large cubes. Beef washed and peeled should be cut into small portions.

In the slow cooker, choosing the "Frying" mode, fry the onion in oil, then the meat, followed by carrots and pepper. Next, tomatoes are introduced (can be replaced with tomato paste), zucchini, salt and spices. After pouring all this into the broth, select the “Stew” mode and cook the dish for 60 minutes.

Boil the noodles in a separate bowl, in slightly salted water, and then put them on a serving plate. Then it is filled with importance (stewed vegetables with meat and broth) and sprinkled with herbs.

Uzbek beef lagman

In Uzbekistan, lagman is a national dish. It turns out to be a little spicy, with a garlic flavor, a slight sourness, and rich spicy odors.

  • beef pulp - 280 g;
  • onions, carrots - 1 pc.;
  • sweet pepper;
  • hot pepper;
  • green radish - 1 root crop;
  • cabbage - 140 g;
  • tomato - 2-3 pcs.;
  • tomato paste - 30 ml;
  • garlic - a couple of cloves;
  • ground coriander - 0.8 tsp;
  • dry adjika - half a teaspoon;
  • celery;
  • non-aromatic oils - 80 ml;
  • dry paprika - tsp. without a hill;
  • lagman noodles - 220 g;
  • salt.

Cut the beef pulp into small pieces, carrot into cubes, onion into thin strips. In hot oil, fry the meat, add salt, carrots and onions. Fry for 7 minutes. To prepare a lagman, it is better to prepare products in advance - it is so convenient to add them.

Tomatoes and pepper (you can take red or green) are cut into cubes, sharp - in small squares. They are introduced into the pan after frying the onions and carrots. When the vegetables and meat are slightly darkened on the stove, spices, tomato paste and chopped garlic are added to them. Then radish and cabbage, cut into squares, chopped celery (spine or greens) are added. Everything is mixed, poured with water or broth, and then stewed for 12 minutes. Salt to taste, add sugar.

In a separate bowl, the noodles are boiled and laid out in a special bowl for serving. Top is added meat, vegetables, broth and fresh herbs.

With chickpeas and udon noodles

You can prepare a hearty Central Asian dish from:

  • beef - 350 g;
  • boiled or canned chickpeas - 60 g;
  • udon noodles - 90 g;
  • potatoes - 2-3 pcs.;
  • Bulgarian pepper;
  • tomato - a couple of pieces;
  • carrots, onions;
  • vegetable oil.

First prepare all the products. Rinse the canned chickpeas, peel the potatoes and cut into small cubes. Carrots, peppers and onions are cut into strips. Garlic cloves - pass through a press. Blanch tomatoes, chop coarsely.

Taking a large cast-iron skillet, heat oil in it, fry onions, carrots and peppers. After the vegetables are laid out on a plate, and meat is fried in the same oil. When it is browned, the vegetables are returned to the pan, everything is salted and filled with liquid so that it only slightly covers the products. The components are stewed under the lid for 25 minutes.

Next is added noodles, sliced ​​tomato, potatoes, chopped garlic.Next is added water - about 200 ml, salt, pepper. Cook the lagman for another 18 minutes (until the potatoes are cooked). Serve the finished dish hot.

Homemade noodles cooked at home are separately boiled, laid out on plates, seasoned with stewed vegetables with meat. Garnishing with greens, the dish can be served to the table.

A delicious first course, similar to a thick soup, can be prepared at home in a cast iron cauldron.

The beef meat is finely chopped, the onion is chopped into thin strips, and the garlic is cut into small cubes. Fry the meat in oil until golden brown, add sliced ​​onion and garlic. Each beef lagman recipe contains noodles that can be easily cooked at home.

To do this, take:

  • premium flour - 0.5 kg;
  • 3 yolks;
  • warm water - 1 cup;
  • salt;
  • some olive oil.

Combine all products and knead cool dough. Knead for a long time. After the dough, having formed a lump, it is coated with oil and placed in polyethylene for 40 minutes.

Roll the ball on the table, cut strips 0.5 cm wide. From each strip form a long noodle, greasing it with oil. Finished products are boiled in salted water for 8 minutes, recline in a colander. Cooked noodles are placed on the bottom of a portioned plate, after which fry with gravy is added.
