I offer a recipe for delicious “hedgehogs” from mackerel fresh-frozen (or fresh if you live in a region where you can buy it in this form) in golden potato chips.

Ingredients:

  • mackerel - 2 pcs.;
  • medium-sized potatoes - 10-12 tubers;
  • onion - 1 pc.;
  • egg - 1 pc.;
  • paprika, turmeric or curry - ½ tsp;
  • salt, pepper - to taste;
  • vegetable oil - for frying.

How to cook a dish:

  1. Remove heads, tails and fins from the carcasses, open the abdomen with a knife, and scrape the insides. Remove the peel.
  2. Rinse the fish and cut along in half. Remove the ridge and small bones. For convenience, you can use tweezers. But if you didn’t succeed in pulling them all out, don’t be discouraged, they will grind during the process of grinding the minced meat, and during heat treatment their fragments will become much softer.
  3. Leave the pulp to thaw, and at this time peel and grate the potato tubers on a fine grater, put in a colander to drain the juice.
  4. Scroll the mackerel and onions in a meat grinder, salt, pepper and mix thoroughly.
  5. Put the potato chips in a deep bowl, beat the egg, sprinkle with salt, spices. Stir until smooth. And then do not forget to periodically drain the juice that will stand out, otherwise the "hedgehogs" will turn out to be watery and will burn.
  6. Heat vegetable oil in a pan until a haze appears.
  7. Take in your palm about 1 tbsp. l potato mass, distribute so that the diameter of the "cake" corresponds to the desired size of the patty.
  8. Put the minced fish on top, cover with another portion of grated potatoes so that the filling is not visible, align the edges, flatten. You should get a rounded flat piece, which must be immediately put in a pan.
  9. Blind the remaining hedgehogs and fry for about 10-12 minutes on each side. At the same time, the fire should be slow so that the portions reach readiness not only from the outside, but also from the inside.
  10. Serve golden cutlets hot with your favorite sauces, fresh or canned vegetables.

On a note. "Hedgehogs" can be prepared not only with mackerel, but also with any kind of sea or river fish. And also the dish turns out to be no less tasty with a meat or poultry filling.

Ingredients:

  • rice - 100 g;
  • egg - 1 pc.;
  • starch - 1 tbsp. l .;
  • large onions - 3 pcs. (if small, then 4-5);
  • carrots - 2-3 pcs.;
  • tomatoes - 2-3 pcs.;
  • water - 150 ml;
  • salt, pepper - to taste;
  • vegetable oil - for frying and lubricating the mold.

Step by step recipe:

  1. Peel and gut the fish, remove the skin, separate the pulp from the bones. Let it thaw completely.
  2. Cook rice in salted water until half cooked. It will reach the desired “condition” after 10 minutes of boiling. Then strain it in a colander and let it cool.
  3. Pass the defrosted mackerel pulp through a meat grinder along with half the onion. And if you have small “turnips”, take the whole.
  4. Season and salt the minced meat, add the cooled rice, starch, egg, knead until smooth.
  5. Form round patties, put in a greased form with high sides and send to the oven preheated to 170 degrees for 15 minutes.
  6. During this time, cook the frying - fry the onion sliced ​​in half rings and grated carrots for 10 minutes.
  7. When the vegetables have a golden hue, add chopped tomatoes.
  8. Sprinkle the mixture with salt and pepper, fry for another 3-4 minutes.
  9. Now remove the browned fish cakes from the oven, evenly distribute the frying between them.
  10. Pour water into the mold and return to the oven for another 25-30 minutes.
