Kefir Korzhiki is a simple and affordable pastry that is equally suitable for both tea and milk or fruit juice. Baking them is so simple that even a schoolchild will cope with this task.

Classic kefir pastries in a pan

These cookies do not stale for a long time, so they can be prepared in large quantities for several days at once. The main advantages of such baking are the speed of preparation, a low level of complexity and a wide variety of assortment.

Necessary components:

  • kefir - ¾ cup;
  • sugar - 100 g;
  • egg - 1 pc.;
  • vanillin - to taste;
  • soda - ½ tsp;
  • flour - as needed.

Sequencing:

  1. Drive an egg into a deep bowl, add kefir and all other ingredients except flour. Mix.
  2. Pour flour in small portions and knead soft dough. Cover with a clean towel and let it brew for half an hour.
  3. Divide in half. Roll each half into a rectangle (thickness should be no more than 15 mm) and cut into squares or short strips.

It remains only to fry the workpieces in a pan from two sides. Serve with sour cream or berry jam.

With the addition of sour cream

Kefirs on kefir in the oven with the addition of sour cream are tender and crumbly. As additional components, you can use any dried fruits, nuts, sesame, coconut, poppy seeds, and for decoration - powdered sugar, chocolate or fruit glaze.

What do you need:

  • flour - 4 tbsp .;
  • sour cream - 100 g;
  • kefir - 100 ml;
  • margarine - 150 g;
  • sugar - 1 tbsp .;
  • egg - 3 pcs.;
  • soda - 1 tsp;
  • salt to taste.

How to cook:

  1. Remove margarine from the refrigerator in advance.
  2. Separate the squirrels from the yolks. Combine the latter with kefir, sour cream, margarine. Add the rest of the loose components except sugar.
  3. Form a ball, wrap with plastic wrap and refrigerate.This is necessary so that as a result of gas evolution during the interaction of soda with lactic acid, a porous structure is created.
  4. Beat whites with sugar.
  5. Roll out the dough, grease with a protein mass, optionally sprinkle with crushed chopped nuts. Cut into squares. If you have time, you can cut the layer into long strips and make rolls of them.

Put on a baking sheet and bake for half an hour.

Milk dessert, as in childhood

Classic shortcakes are cut out with a special shape for cupcakes with a wavy edge. It can also have a cut in the middle or be solid. If there is no such mold, you can use the usual saucer, glass or glass.

Necessary components:

  • kefir - 150 ml;
  • flour - 450 g;
  • sugar - 200 g;
  • milk - 100 ml;
  • soda - 5 g;
  • butter - a 50 gram piece;
  • egg - 1 pc.;
  • cinnamon, salt.

 

Recipe for shortbread from childhood:

  1. Grind butter with sugar (3/4 of the total). Shake the egg in a bowl (it is not particularly necessary for the dough, just too much to lubricate it. To prevent the residue from disappearing, it is better to use it as an ingredient for the dough).
  2. Pour into a suitable container 1.5 tbsp. flour, soda and salt. Add the butter mixture, part of the beaten egg, kefir and milk. Gradually introduce flour.
  3. Knead the dough. It should turn out soft and pleasant to the touch. It does not need to be disturbed for a long time.
  4. As soon as the mass stops sticking to the palms, form a ball from it, put it in a bag and refrigerate for half an hour.
  5. Roll out into a layer, about 1 cm thick. Cut blanks. Lubricate with leftover beaten egg, sprinkle with leftover sugar and cinnamon.

Bake no more than 15 minutes. Typically, 12-14 minutes is enough, since you do not need to wait for the crusts to lightly brown. Inside, they should remain soft and tender.

Korzhiki on kefir and lard

Korzhiki at home can be done on lard.

What do you need:

  • kefir - a glass;
  • Lard - about 175 g;
  • egg - 1 pc.;
  • sugar - 175 g;
  • flour - about 4 tbsp .;
  • soda - ½ tsp;
  • salt, vanillin, cloves, ginger - at will and taste.

You can make such cookies chocolate by adding the right amount of cocoa powder.

Preparation process:

  1. Melt lard and let it cool slightly.
  2. Redeem soda in kefir. Beat in an egg, add sugar, salt, melted fat.
  3. Pour flour in small portions, season with ginger and cloves.
  4. When the mass becomes difficult to mix with a spoon, put it on a table sprinkled with flour and mix well, adding the right amount of flour. But the main thing here is not to overdo it.
  5. Wrap in a bag and refrigerate for an hour.
  6. Roll into a layer. Cut blanks.

Put on a baking sheet and bake for about 20-25 minutes.

Cooking with cottage cheese

Baking on cottage cheese always turns out to be surprisingly mouth-watering. The main thing is to choose the right product. The cottage cheese should be soft and not very grainy so that it dissolves well in the dough.

Necessary components:

  • kefir - ½ cup;
  • flour - 2.5 tbsp .;
  • sugar - 100 g;
  • butter - a 75 gram slice;
  • cottage cheese - 350 g;
  • eggs - 2 pcs.;
  • soda - 1 tsp;
  • icing sugar - for sprinkling.

If there are no eggs, it does not matter. They can be replaced with additional butter (50 g will be enough).

Sequencing:

  1. Mash the cottage cheese with a fork or grind through a sieve. Add sugar and knead well.
  2. Beat in eggs, add kefir and add soda.
  3. Melt the butter, pour into a common container. Add sifted flour.
  4. Knead elastic dough. Wrap it in a bag and put in the refrigerator.
  5. After an hour, remove the workpiece and divide into several parts. Roll them into layers with a rolling pin.
  6. Cut circles or squares. Sprinkle a little sugar. Put on a greased baking sheet and bake for no more than a quarter of an hour.

Sprinkle the cooled products with powdered sugar.

If you have time, you can make Goose Feet cookies instead of simple shortcakes. To do this, round blanks need to be rolled up four times with an envelope, then a small notch should be made from the round side. Such cookies need to be baked for about 20 minutes, as it is more voluminous.

In order for the crusts to have a beautiful color, before putting them into the oven, they must be greased with fat milk or cream.
