The benefits of this amazing berry are hard to overestimate. It contains a whole storehouse of useful trace elements and vitamins. Since aronia has a rather tart sweet and sour taste, it is added to the composition of certain dishes, canned, frozen, dried. In the article, we will consider several recipes for making compote from aronia.

Classic chokeberry compote

Chokeberry goes well with many berries and fruits, but perhaps the classic option would be a drink consisting only of chokeberries.

To prepare it you will need:

  • chokeberry - 500 g;
  • sugar - 400 g;
  • juice of 1/2 lemon;
  • water - 3 l.

Stages of work:

  1. Sort the berries, tear off the brushes, rinse and drop in a colander.
  2. Boil water in containers of a suitable size, add sugar, mix until dissolved.
  3. Pour berries into boiling water. After boiling again, cook over low heat for 2-3 minutes.
  4. Turn off the heat, add lemon juice and leave to cool completely.
  5. Pour the finished compote into glass containers and store in the refrigerator for 3-4 days.

The uzvar is also made from dried or frozen berries. If cooked from a dryer, it is better to pre-soak it in warm water for 30 minutes.

How to make a drink for the winter

For longer storage, there are many recipes for making compote for the winter. The most popular of them is a drink from aronia and apples.

 

For one three-liter jar of compote, you will need the following ingredients:

  • aronia - 300 g;
  • apples - 350-400 g;
  • sugar - 250-350 g;
  • water - 2.5 l.

Stages of work:

  1. Prepare berries: sort out, rinse.
  2. Wash apples, cut into 4-6 parts, depending on the size of the fruit. Remove the core. Sprinkle sliced ​​apples with lemon juice so that they do not darken.
  3. Put apples in a sterilized jar. Top with berries of chokeberry. Pour boiling water, and let stand for 15 minutes.
  4. Then, carefully drain the water using a special cover with holes, and put on fire again. When the water boils, add sugar, mix until dissolved.
  5. Pour the fruit jar to the brim. Cover with a sterilized lid and plug.
  6. Turn the jar upside down on a towel or bedspread. Wrap preservation and leave to cool completely.
  7. Keep this blank in a cool dark place until the next season.

Apples are very well combined with chokeberry, so this compote is tasty and fragrant. Varieties "Antonovka" and "Semerynka" are suitable here, which ripen at the same time as mountain ash at the end of September.

With the addition of plums

Another equally popular and tasty drink is chokeberry with plum. For its preparation, red or blue plums are used, this gives the compote a beautiful rich color. But, if desired, you can take a white plum. It is sweeter, which means it will pleasantly soften the astringency of mountain ash. Such a drink can also be prepared for the winter.

Ingredients:

  • plum - 400 g;
  • chokeberry aronia - 250 g;
  • sugar - 350 g;
  • water - 2-2.5 liters.

Stages of work:

  1. Prepare and rinse berries and fruits. Cut the plum in half and pull out the stone.
  2. Boil the water, meanwhile prepare and sterilize the cans and lids.
  3. Put plum and mountain ash at the bottom of the prepared container.
  4. Pour boiling water just above the fruit level, and leave to warm for 10 minutes.
  5. Drain and boil again. Add sugar, mix.
  6. Pour jars of hot syrup to the top, leaving no air. Cover, roll up.
  7. Turn over the rolled up jar and wrap it with a towel or blanket. Leave for 1-2 days until completely cooled. Store in a cellar or other cool place.

The taste and color of the compote of black rowan and plum is very rich and pleasant. There is almost no astringency.

Aronia drink with pears

If aronia berries are added to the pear compote, the taste is emphasized. Pears contain little acid, high sugar content, do not have a pronounced taste and color, so chokeberry will be a bright addition.

 

To brew 3 liters of drink, you will need:

  • pear - 3-4 pcs.;
  • Chokeberry - 250 g;
  • sugar - 350 g;
  • juice of half a lemon or ½ tsp. citric acid.

Stages of work:

  1. Prepare the ingredients: peel, sort and wash the berries. Washed pears cut into 4-6 parts, cutting seeds.
  2. Put pears, then berries in prepared sterilized jars.
  3. Pour boiling water, and let it brew for 15-20 minutes.
  4. Gently drain the water and put again to boil.
  5. Add sugar, bring to a boil. After the sugar has dissolved, add lemon juice or acid to the syrup.
  6. Pour the resulting liquid into cans, and roll up in the usual way.
  7. After cooling completely under a blanket or a thick towel, send the drink for long-term storage.

For compote, the wild pear is suitable, it is very fragrant, it can be preserved whole without cutting.

Useful compote of chokeberry and sea buckthorn

A real vitamin cocktail can be obtained by making a compote of these two types of berries. After all, the beneficial properties of sea buckthorn also have a wide spectrum: it normalizes the work of the gastrointestinal tract, improves vision, has wound healing and other properties. It is worth noting that such a cocktail is not only healthy, but also very tasty!

Ingredients:

  • sea ​​buckthorn - 450 g;
  • chokeberry - 200 g;
  • sugar - 350-400 g;
  • water - 2.5 l.

Stages of work:

  1. Prepare the berries in the usual way.
  2. Boil water, pour berries into 1/3 of the volume of the vessel in sterilized jars.
  3. Pour boiling water twice, add sugar for the second time, and seal the jars with sterile lids.
  4. Cover with a blanket until completely cooled.
