A Bellini cocktail was first prepared in the first half of the last century in Venice. He quickly became popular and is now served in bars around the world. The drink combines sparkling wine and fresh peach puree.

The story of the cocktail

Bellini is also a unique cocktail because the name of its creator and the history of its appearance are reliably known. It is rare for alcoholic beverages.

He came up with the recipe under discussion by the famous restaurateur Giuseppe Cipriani. The Italian was very fond of conducting experiments at the bar. Once he decided to mix sparkling wine (Prosecco), peach puree and ice. So it turned out the famous refreshing cocktail.

At first, they managed to try the drink exclusively in the warm season, when peaches ripened in Italy. As soon as the import of fruits into the country from abroad was adjusted, the cocktail ceased to be tied to the season. Today you can try it in the bar year-round.

Interestingly, Cipriani gave the name of the drink in honor of the Italian painter Giovani Bellini. The restaurateur found similarities in the pale pink shade of the cocktail and the artist's works. It was Bellini who became the first painter who began to draw in this color the clothes of saints in his works.

Classic Bellini Cocktail Recipe

Today, bartenders know many different interesting options for a Bellini cocktail recipe. But the most popular of them is still classic, without any extra ingredients.

Original composition

The original composition of the drink must include fresh peaches. You need to choose white fruits, which are less common than fruits with a bright skin and pulp. If you could not find such peaches, you can take any that are at hand.

And in an extreme case, peach juice with pulp.

The second main ingredient of the cocktail is dry sparkling wine. In the original recipe, this is fresh prosecco fruit. The strength of the alcoholic beverage should be from 9 to 13 percent. Sugar content - up to 15 g per 1 liter. If you can’t buy Prosecco, you can take another dry sparkling wine. Champagne is often used for homemade cocktails.

Ice is necessarily added to the drink. First it needs to be split into small parts.

Correct proportions

If we talk about the ideal proportions of the ingredients of the cocktail, then you need to remember the recipe of the author of the drink, Giuseppe Cipriani. The restaurateur used three parts of wine and one part of fruit puree.

The amount of ice is determined by taste. But it should not be too much so that the drink does not turn out to be very diluted.

All the ingredients of the cocktail just need to combine and whip in a shaker.

Simplified home-made drink

Ingredients:

  • 1 large peach (weighing approximately 80 - 100 g);
  • 150 ml of sweet champagne;
  • 3-4 ice cubes
  • 20 g of granulated sugar.

Cooking:

  1. Wash the fruit thoroughly. Cut in half and remove the stone. With a sharp knife, thinly cut the skin.
  2. Mash the resulting peach pulp in mashed potatoes. But it is much more convenient to use a special blender nozzle.
  3. Pass the fruit puree through the smallest sieve. This will remove small lumps of peach pulp.
  4. Sugar is added to mashed potatoes only if the fruit is acidic. When using sweet peaches, this ingredient can be discarded.
  5. Put the resulting mashed potatoes in the cold for 60 - 80 minutes.
  6. Send ice, chilled fruit mass and champagne to the shaker. Shake the ingredients well.
  7. Pour the drink through a fine sieve into the glasses.

Garnish each serving with a peach wedge and serve to guests. Drinking a cocktail is very cold.

Soft drink

For children, you can make a delicious Bellini cocktail even without the use of alcoholic beverages. They will be replaced by a sprite, any lemonade or even the most ordinary mineral water. The result is a delicious refreshing drink.

Ingredients:

  • 5 pieces. ripe soft peaches;
  • 50 g of white sugar;
  • several ice cubes;
  • 750 ml of sprite or any other clear sparkling water.

Cooking:

  1. Peel thoroughly washed peaches. Cut it off very thinly with a sharp knife. Remove bones. Knead the remaining pulp with your hands and pass through a sieve. You can use any kitchen assistant - a blender, mixer and others.
  2. Add sugar. Its amount must be regulated depending on the sweetness of the fruit itself.
  3. Send the resulting mashed potatoes cool. It should stand there for at least an hour.
  4. Send cold mashed potatoes and the selected carbonated drink to the shaker. Shake the ingredients well.
  5. Pour the resulting cocktail into champagne glasses.

Finely crush the ice and pour it into the drink.

Bellini cocktail with peach juice

Ingredients:

  • 150 ml of thick peach juice with pieces of mashed potatoes;
  • 70 ml of sparkling wine (prosecco);
  • ice and granulated sugar to taste.

Cooking:

  1. In winter, for homemade Bellini cocktails, you can use peach juice with pulp instead of fresh fruit. Even a packaged drink in the store will do.
  2. Cool the champagne glass. Pour the selected juice into it.
  3. If the drink is not sweet enough, you can add granulated sugar to it.
  4. Pour sparkling dry wine from above. Gently mix the components.
  5. Optionally, add ice in whole slices or in crushed form.

Serve the drink chilled. You can decorate it with canned peaches or cocktail cherries.

Experienced bartenders note that French champagne wines are the worst suited for the cocktail in question. They do not combine with bright peach sweetness. Therefore, it is better to choose Italian or other options for drinks.Men prefer to combine peach puree with gin or even vodka. This is one of the strong variations of the popular Bellini.
