Making coffee in Turkish at home is quite difficult, but you can still try. It is enough to know a few nuances of proper cooking, to get a Turk of a suitable volume, and then at least the classic recipe can be realized with your own hands.

A small digression into the history of the drink

Coffee is a must for breakfast in Turkey. It is believed that coffee beans were first brought to this country by merchants from Syria, tentatively in the 15th century. But only a century later, during the reign of Sultan Suleiman the Magnificent, coffee gained immense popularity among the nobility, and eventually among ordinary citizens of the country.

A special person was appointed to make the drink in the kitchen of the Sultan. The coffee preparation process is as follows: green grains were roasted in large pans, then manually grinded to a powder state, and after that, the resulting mass was poured with water and boiled.

There are other versions about the appearance of coffee. For example, they say that it was first used in the countries of North Africa and in Asia. But the drink nevertheless owes its incredible popularity to the Turks. They also invented a container for brewing coffee, called a Turk, or cezve.

The most "coffee" place in the world to this day is the city of Istanbul. Even today there is a street where Turkish coffee of the highest quality is sold.

Turkish Coffee Set

To prepare a drink in Turkish, you need the following specific set:

  1. Capacity for making a drink. Coffee is brewed in the usual narrow-necked Turks.In Turkey they are called "cezva". It is necessary to use exclusively copper.
  2. Sand. The preparation of real coffee is not allowed on an open fire, the container is installed on heated sand.
  3. Porcelain coffee cups for serving.

Making Turkish coffee has a few secrets:

  1. Proper preparation of the drink does not involve the use of pre-ground beans. They must be fried and grinded immediately before brewing a drink. Only in this way will its taste be saturated with the aroma of oils. An important nuance is that grains should not cool down after frying. Coffee powder is sent to the Turk still warm.
    In pre-ground coffee coffee, oils are not stored in the same volume that can be obtained with the above method of preparing raw materials.
  2. Water for the drink should initially be cool.
  3. The foam, which necessarily forms during cooking, is poured into small cups in which coffee will be served. Gourmets note the special flavoring note that it gives to the drink.
  4. Coffee cannot be brought to a boil, otherwise it will acquire a hint of bitterness. The liquid is brought only to a slight boil, but then 2 to 3 times. Each time a foam appears, which must be used in the manner described above.

Important! The volume of the turk should correspond to the estimated volume of coffee output. Water must be poured to the level of the neck.

Turkish coffee - a classic recipe in Turk

At home, preparing Turkish coffee in the sand is not very convenient, so we will consider an affordable option - on the stove.

The classic Turkish coffee recipe involves the use of the following ingredients:

  • 150 ml of cool purified water;
  • 1 - 2 teaspoons of ground coffee beans (depending on the preferred strength of the drink).

The cooking is quite simple:

  1. We pour ground coffee into the Turk and put it on the slowest fire so that the container warms up.
  2. Literally in a minute we fill in water.
  3. We wait until it begins to boil, periodically stirring the contents with a spoon. However, it should not scratch the walls and bottom of the Turks.
  4. At the first boil, foam will begin to collect. We leave it in place and remove the Turk from the fire. Let the drink stand for several minutes so that the foam drops. Then we put the Turk to bask again. The process should be repeated three times.
  5. Rinse the cups with boiling water so that they heat up.
  6. We pour the drink, after collecting the foam with a spoon, and lay it on the surface of the coffee.

On a note. If you prefer a sweet drink, you can add sugar to it. Crystals fall asleep in the Turk along with ground grains. Stir sugar in already brewed coffee is considered a bad taste.

With garlic and honey

  • 1 teaspoon freshly ground coffee;
  • 100 ml of cold water;
  • ½ garlic clove;
  • ½ teaspoon of sugar;
  • 1 teaspoon of honey.

This recipe suggests using preheated water almost to a hot state.

  1. Mix coffee with crushed garlic.
  2. The mixture is placed in a Turk and filled with water. Cook in the usual way.
  3. In a heated cup we put honey and pour fresh coffee.
  4. Pour sugar over the decor foam. The drink does not mix after being poured into a cup.

Cooking with spices

A very spicy drink is obtained according to the following recipe:

  • 200 ml of water;
  • 2 teaspoons freshly ground coffee;
  • 1 inflorescence of carnation;
  • 1 teaspoon of vanilla sugar;
  • 1 pod of cardamom;
  • 1 teaspoon of cinnamon chips
  • 2 teaspoons of brown sugar.

The cooking process is not much more complicated than those already described:

  1. In a warmed Turk combine spices with sugar.
  2. We warm the mixture for several seconds, after which we add coffee and fill the contents of the container with water.
  3. We brew the drink on very low heat, stirring occasionally to dissolve sugar and vanilla. We carefully monitor the foam - it should not run away.

This coffee is incredibly aromatic. However, we can say that this drink is a rare lover of rich tastes.

We offer two more options for spiced coffee in Turkish.

With ginger

  • 150 ml of water;
  • 1 tsp ground coffee;
  • a pinch of ground ginger;
  • ¼ tspSahara.

The cooking process is the same as in the classic version. Coffee with spices and sugar is warmed up in the Turk, and after that, the contents are poured with water. A small amount of sugar makes the bright spicy taste a little softer.

Cinnamon

  • 150 ml of water;
  • 1 ½ tsp ground coffee;
  • ground cinnamon on the tip of a knife or 2 - 3 chips with cinnamon sticks.

The preparation of a coffee drink takes place in the same way as with ginger. It is believed that it is better to use cinnamon chips - in it the taste and aroma are preserved better than in ground spices.

Turkish coffee in a sand coffee maker

Today you can buy a special device for making coffee in the sand. The coffee maker with sand includes a brazier, Turk and, in fact, quartz sand itself. The device is connected to the mains. The sand warms up quickly, it remains only to put a Turk with the contents in it and make a drink in just a few minutes.

 

There is only one drawback of this method - the rather high cost of the entire set for cooking, compared with a conventional Turk or an automatic coffee maker.

An alternative could be an ordinary deep frying pan, separately purchased sand and a suitable copper turk in volume. Thus, coffee can be brewed in a Turk on sand without acquiring a special expensive device.

With orange juice

An unusual drink with a citrus flavor is obtained if the water is replaced with freshly squeezed juice from fresh oranges:

  • 100 ml freshly squeezed orange juice;
  • 1 teaspoon of coffee;
  • ½ teaspoon sugar.

First of all, we warm up an empty Turk a little. Then we fall asleep coffee with sugar, mix and pour juice. Boil, almost bringing to a boil, three times.

Fancy Chicken Yolk Recipe

This coffee brewing option is considered very tonic and nutritious:

  • 1 teaspoon of ground coffee;
  • ½ egg yolk;
  • ½ teaspoon of sugar;
  • 100 ml of water.

Beat the yolk until foamy. We brew coffee in the same way as in the classic version of the preparation. Foam is placed in a cup, and then, pour its coffee.

Note! Such coffee can be served both cold and hot.

Turkish coffee with pepper

  • 1 teaspoon of coffee;
  • a pinch of ground pepper;
  • 5 g butter;
  • 100 ml of water;
  • a pinch of fine-grained salt.

First we make coffee. After the first signs of boiling add pepper, oil, salt. Mix until we bring to a boil for the second and third time.

Proper serving of Turkish drink

 

Certain nuances of serving coffee, according to coffee lovers, make its taste even more interesting. So, for example, it is considered good form to slightly warm the cups in which the drink will be served. By the way, it is customary to pour real Turkish coffee into small porcelain cups called “finjan”.
