We cannot but rejoice at the fact that cranberries prepared for the winter without sugar practically do not lose their beneficial properties without boiling, so you should not waste time in the season of its collection, but it is better to make tasty and healthy preparations.

Cranberries, mashed with sugar without cooking for the winter

For such a roll, only sugar and cranberries are needed. The ratio of berries and sugar can vary from 1: 1 to 1: 1.5. Raw cranberry jam should be stored only in the cold in a sterile container with a capacity of not more than 500 ml.

The composition of one serving of mashed cranberries:

  • 750 g “peat” berries;
  • 750 - 1125 g of sugar.

Procurement Method:

  1. You need to start with the preparation of berries. This procedure needs special attention. First, cranberries are poured in small portions on a cutting board and spoiled berries, leaves and other large litter are selected.   • 850 - 900 g of sugar, including 600 g is added directly to the berries, and the rest is used for sugar cork.

How to rub cranberries with sugar:

  1. Knead clean and dry berries with sugar in a wood pulp in an enameled pan with a wide bottom. Leave the workpiece for several hours at room temperature, allowing sugar to completely melt.
  2. In the meantime, wash, sterilize and dry half-liter glass jars and their lids. From parchment cut circles with a diameter equal to the neck of the cans.
  3. Distribute the jam on the prepared container, put a parchment circle on top, on which pour 2 to 3 tablespoons of sugar. Cover each jar with a lid and you can put them in the cold for further storage.

For storage in the freezer

The beneficial properties of cranberries are leveled by heat treatment, but low temperatures do not cause them any harm.

To save cranberries with sugar in the freezer, you will need:

  • 1000 g cranberries;
  • 1000 g of sugar;
  • dense packages for freezing with the Zip-Lock lock.

  1. After all the manipulations for preparing cranberries for further harvesting, chop the berries (in a meat grinder, blender or using a potato masher).
  2. Mix sugar and crushed berries, achieving complete dissolution of all sweetener crystals.
  3. Fill the bags with the mixture, lock them and send them to the freezer, laying them on a flat surface, for example, on a cutting board.

So that later it would be easier to use small portions of the frozen billet, a slightly frozen substance right in the bag can be divided into squares by pushing longitudinal and transverse grooves with a long ruler.

With oranges

Sometimes they pee on a “peat” berry for an unpleasant bitterness in taste. If you cook the usual jam, then during the heat treatment the unpleasant notes in the taste will disappear, as, unfortunately, most of the useful vitamins.

In raw jam, you can get rid of bitterness if you cook it with oranges.

Cranberries, mashed with sugar and oranges, are prepared from:

  • 1000 g cranberries;
  • 1000 g of juicy oranges;
  • 2000 g of sugar.

The sequence of actions:

  1. Rinse the “peaty beauty” berries from litter, select damaged and spoiled specimens. Dry the rest by spreading a thin layer on a towel. Then twist them in a meat grinder.
  2. Thoroughly wash the oranges in hot water using the hard side of the dishwashing sponge. After that, cut them into small slices, so that it is convenient to remove the seeds and grind the pulp in a meat grinder. Grind and send oranges to cranberries.
  3. Pour sugar into the resulting orange-cranberry mixture and stand the jam for 24 hours at room temperature, often stirring to melt all the sugar.
  4. Next, distribute the workpiece in banks and put it in the cold.

Cranberries with sugar in a blender

A blender is convenient for chopping cranberries in that juicy sprays do not scatter throughout the kitchen, but are held back by the lid of the device. You can also beat berries into gruel immediately with sugar, which will ensure its quick and complete dissolution.

In this way, you can make a harvest only from berries and sugar, or you can with the addition of ginger, as in this case:

  • 500 g cranberries;
  • 600 g of sugar;
  • 70 g of ginger root.

We prepare as follows:

  1. Pour the prepared berries with sugar, mix and beat in small portions in a blender.
  2. Peel the ginger root and finely chop. This can be done with a knife, fine grater or again with a blender.Instead of sugar for raw jam, you can use bee honey. Better from rapeseed or sunflower due to its more uniform crystallization and lack of pronounced aroma. The shelf life of such a workpiece is no more than 6 months.
  3. Mix the crushed cranberries with ginger and then the workpiece can be poured into glass containers for storage.

With lemon

To make raw cranberry jam with the addition of lemons, it will take quite a bit of time, but then in the cold season, eating a small portion of this treat with tea will save the whole family from colds.

For one serving of such a prophylactic, you need to take:

  • 1000 g cranberries;
  • 1000 g of sugar;
  • 3 lemons.

How to make a blank:

  1. “Peat” berry, previously sorted, washed and dried, grind to a state of gruel. You can do this in a blender or in a usual potato masher potato shredder.
  2. Pour the lemons with boiling water, then cut each fruit into four parts along and remove the seeds. Grind citrus fruits in a meat grinder with a fine wire rack or using the same blender.
  3. Combine cranberries, lemons and sugar. The sweetener must be introduced in small parts so that it can completely dissolve. Distribute the blanks over the disinfected containers, close them with lids and put them in a cooler place.

Candied Cranberries with Whole Berries

Beautiful large cranberries can be candied whole. In the future, such a workpiece can be used for the preparation of fruit drinks, compotes, and also as a filling for various baking.

Proportions of ingredients for sugaring whole berries:

  • 700 g of cranberries;
  • 500 g of white crystalline sugar;
  • 50 ml of orange liquor.

Working process:

  1. Grind approximately 150-200 g of prepared cranberries with a blender into a homogeneous slurry - this will be a preservative base.
  2. Carefully, so as not to damage the whole berries, combine the rest of the cranberries, orange liquor and gruel from the “peat beauty”.
