Cheese quesadilla is a classic variation of a traditional Mexican dish. Previously, it was prepared only with a filling of islet cheese, which melted well when frying the tortillas. Today, there are other options for preparing an original snack, for example, quesadilla with chicken, vegetables or mushrooms.

Classic Quesadilla with Chicken and Cheese

Mexico is not only tequila, fancy cacti and vibrant sombrero, but also a colorful cuisine. One of the national dishes of this country is quesadilla. This is a fried corn tortilla (tortillas) with cheese filling. True, today other products are added to such a dish.

Prepare in advance:

  • cakes;
  • lean meat - ⅓ kilo;
  • onion head;
  • hard cheese - ¼ kilo;
  • from spices: paprika, chili, salt, pepper;
  • sprigs of parsley.

Cooking method:

  1. Fill the fillet lightly, sprinkle with spices and fry until golden in oil. Then cool and cut into cubes.
  2. Chop the onion and fry it until soft.
  3. Grate the cheese, and chop the greens finely.
  4. Put the flat cake in the pan, put the filling in the following order and quantity: half the cheese, half the meat, onions and herbs, on top again half the cheese.
  5. As soon as the lower cheese layer begins to melt, cover the filling with a second cake and press lightly. The main thing is that the filling does not go beyond the edges.
  6. Using wide shoulder blades, turn over the quesadilla and cook until golden.
  7. We spread it on a dish, cut in portions and serve.

With mushrooms and salsa sauce

Vegetable spicy salsa sauce also belongs to Mexican cuisine.It is a great addition to meat and fish dishes, it can be served with toast, crackers and chips, and, of course, used in the preparation of quesadillas with chicken and mushrooms.

Ingredients:

  • tortillas;
  • 280 g of chicken;
  • 380 g of champignons;
  • 130 g of cheese;
  • three ripe tomatoes;
  • onion;
  • five cloves of garlic;
  • hot pepper pod;
  • lime juice;
  • a bunch of cilantro.

Algorithm of actions:

  1. First, prepare the sauce. For this purpose, peel the tomatoes, and chop the fruits themselves and mix with chopped onions, garlic gruel, cilantro (parsley) and hot pepper. Fill the resulting composition with citrus juice, spices and send for 40 minutes in the refrigerator.
  2. For the filling, fry the mushrooms, meat and chop the cheese.
  3. Quesadillas can be fried in a pan or baked in the oven. In the latter case, distribute the filling one cake, cover it with the second, gently press down and place in the oven until browning.
  4. The finished appetizer is served with a bowl filled with salsa sauce.

  • 100 g of poultry meat;
  • 80 g of cheese;
  • three tablespoons of sweet corn;
  • spoon of mayonnaise.

Cooking method:

  1. Season the meat with salt, pepper and fry until cooked.
  2. Put the flat cake on a baking sheet, grease with mayonnaise, sprinkle with grated cheese, lay out the meat and add the corn.

Cooking method:

  1. Slices of chicken season with salt, black and red pepper, and then fry until ready in olive oil.
  2. Put the tortilla in the pan. We spread the grated cheese on one half, on top the meat, beans and cheese again. Cheese should be both below and above, because thanks to it the cake sticks together.
  3. Close the filling with the second half of the tortilla and fry the quesadilla on both sides until the cheese is completely melted.

With boiled chicken and egg

Today, quesadillas are prepared not only with cheese, but with other ingredients. For example, with the addition of meat, vegetables, mushrooms and even fruits. And we offer to cook a Mexican appetizer with chicken and boiled eggs.

Ingredients:

  • tortillas;
  • 140 g of chicken and cheese;
  • boiled egg;
  • 1 tsp. mustard and mayonnaise;
  • greenery.

Cooking method:

  1. Boil the meat until tender and chop it into small pieces.
  2. Chop the boiled egg as well, and simply chop the cheese on a regular grater.
  3. We mix mayonnaise with mustard and soak the cake in the prepared sauce.
  4. Then sprinkle it with cheese, spread chicken slices on it with an even layer, on which we form a layer of boiled egg. Again, crush cheese and herbs.
  5. Fold the cake in half and fry on each side for two minutes.

Cooking with Bacon

Bacon is a versatile product that has become one thanks to its unique taste and aroma. This delicacy goes well with many products, so quesadillas can also be cooked with bacon. It will turn out to be very satisfying and tasty.

Ingredients:

  • Mexican tortillas;
  • 80 g Cheddar cheese;
  • Chile;
  • 90 g of bacon;
  • Cherry tomatoes;
  • green onion feather;

Cooking method:

  1. Cut the cherry into quarters, chop the feather of the onion finely.
  2. Cut the bacon into thin strips, chop the chili very finely. Mix all the prepared ingredients.
  3. We spread the cake on a dry pan, sprinkle it with grated cheese. On top of it we put chopped vegetables with bacon and again crush everything with cheese chips.
  4. We close the filling with another tortilla, squeeze the workpiece a little and fry quesadilla on both sides for two minutes.

With chicken and vegetables

Chicken and vegetables are one of the best flavors. And if you add to them a blend of Mexican seasonings and put all this beauty in a corn tortilla, you get a real quesadilla.

Ingredients:

  • corn tortillas;
  • chicken breast;
  • 380 g of cheese;
  • two tomatoes;
  • bell pepper;
  • onion;
  • three garlic cloves;
  • Mexican seasonings;
  • parsley, butter.

Today in every store you can find a variety of spices, including the collection of Mexican seasonings. If you could not find such a blend, then you can do it yourself.

To do this, mix the following spices: dried garlic and onions, black and cayenne peppers, as well as chili plus a wig, oregano and cumin.

As you noticed, the pepper here - at least turn it down. But this is not surprising, because we are talking about Mexican cuisine. Therefore, having mixed all the ingredients, you can grind them several times in the mill - it will not turn out so sharply.

Cooking method:

  1. Now let's move on to the cooking recipe itself. Let's start with the onion - we just chop and fry it. Then add pieces of meat to it, sprinkle with Mexican seasoning.
  2. After, we add to the browned ingredients cubes of sweet pepper and a plate of garlic. The last to go into the pan are chopped pulp of tomatoes and greens. Stew meat with vegetables until soft.
  3. The cake is slightly heated, sprinkled with cheese and spread the filling on it. Once again, crush everything with cheese, cover with a second cake and fry on one side and the other for a minute.

By the way, you can buy tortillas ready-made or cook it yourself. For the test you only need half a glass of water and flour, a pinch of salt and a spoonful of oil. It takes one minute on each side to fry the cakes.
