Potato pancakes are considered to be a national treasure of Belarus. But few people know: in many countries this dish is adored, and everywhere it is called differently. In Israel, rosy latkes are often eaten, raggmanas in Sweden (the name translates as "bristly monk"), in the Czech Republic bramboraki, and in Ukraine - potato pancakes. The essence of the dish is the same everywhere: grated potatoes are mixed with flour, and then the mixture is fried in a pan in a large amount of vegetable oil. And in all countries, potato pancakes are prepared simply elementary!

For pancakes we need:

  • several large potato tubers (6 and no less!);
  • flour - a few tablespoons;
  • egg - 1-2 pcs.;
  • onions (optional) - the middle head;
  • salt, pepper to taste.

We do everything this way: we clean the potatoes and grate. Quickly add salt, grated onion, pepper, egg, flour, stir in there. While preparing the “dough”, heat the pan, and pour the vegetable oil there. Once the oil has warmed up, quickly spread a spoonful of pancakes, and squeeze, giving the shape of pancakes.

Potatoes and onions usually produce a lot of juice. But speed is important here: if everything is done quickly, then the potato does not have time to give water, everything grasps perfectly on a hot frying pan. Once again, do not try to pry off the fritters with a spatula - they should be well cooked from below. And yes, do not spare vegetable oil - otherwise they will stick and fall apart, if you touch them.

Potato variety is of great importance: red varieties contain less sugar and potatoes stick together.

It takes two or three minutes to cook one side, no more. Next, we turn it over to the other side and let it brown. Put the finished pancakes on a paper towel and eat, dipping in fresh sour cream or pouring cream. We do everything again quickly: the right pancakes are eaten instantly!

How to cook mashed potatoes?

If there is a little boiled potato left in the fridge in the evening, then it's time to make mashed potato pancakes. To do this, preheat the potatoes, pour warm milk and thoroughly knead a blender so that there are no lumps left. Mashed potatoes should be warm: as it is more plastic, it is very convenient to work with it.

We make flat cakes from mashed potatoes. Sprinkle each with flour or bread crumbs - with this method, all the pancakes will get a crispy crust, and inside will remain tender and juicy. They are cooked on high heat, quickly frying on two sides in vegetable oil. Serve pancakes with greens and thick cream.

Potato pancakes with minced meat

Potato pancakes with minced meat are delicious and very satisfying. By the way, they won’t be able to eat them, but they can be easily served as the main course for Sunday lunch or dinner. Potato pancakes with meat will turn out to be much tastier, if not greedy, but put homemade minced meat from lean pork or chicken. Be sure to rub a small onion in the minced meat.

Potato and meat pancakes are very tasty with sour cream, herbs, and certainly, slightly salted herring.

Now we prepare the minced potato in the same way as in the classic recipe. We form small koloboks and put some meat in the center. Carefully pinch the edges so that the filling does not spill out when frying. Fry on both sides over high heat. With mushrooms

From raw potatoes, blind neat cakes, and in the center of each we put a tablespoon of mushrooms. Putting a lot of filling is not worth it: otherwise the products will fall apart and not bake.

The best mushrooms for the dish are white, they are the most fragrant.

We fry the koloboks over medium heat until cooked, and in the end we must cover everything with a lid so that everything bakes evenly. Such pancakes are ideally combined with sour cream sauce, herbs, and are tasty even when cold. It is better to drink them with hot tea with mint or broth from rose hips with honey.

In Belarus, raw potato pancakes are called pancakes, and there they are a symbol of national cuisine.   • four large potatoes of a white variety;
  • large onion;
  • egg;

Salt, pepper and leave for a few minutes. The potato will secrete juice, and it must be squeezed through cheesecloth. Now we’ll break the egg and some flour into the minced potato. Quickly stir.

We spread potato pancakes on a frying pan, heated over medium heat. Fry for 4 minutes on one side, and then turn it over and fry on the other. Put the finished pancakes on a paper towel - it absorbs excess oil. Draniki serve with sour cream, herbs and eat until they have time to cool.

Cheese Option

American hash browns (hash brown) at home

Hashbrowns, popular in America (and now Russia, with the light hand of the popular fast food chain) are essentially the same potato pancakes, with the only difference being that grated potatoes are slightly boiled in boiling water. It is important to remember: in the American version there is neither onion nor flour, only salt and potatoes.

We follow the steps:

  1. Grate potatoes on a coarse grater.
  2. Simultaneously boil water and slightly add salt to it.
  3. Put potato “flakes” into boiling water, cook them for a couple of minutes.
  4. We recline in a colander, doused with ice water (so the cooking processes in the root crop stop).
  5. Add potatoes.
  6. Mix the whole mixture thoroughly.

And now we put it in the oil boiling in a frying pan and fry it, like our pancakes. It will turn out delicious and crunchy "hashes", so adored by the capricious children in taste preferences. The pancakes are very good in the form of heat, and the cold ones are not so tasty. Keep that in mind.

Zucchini and potato pancakes

Zucchini and potato pancakes have the main advantage: they contain fewer calories, and in general they are much more tender. At the same time, the taste of zucchini is not felt at all, so this version is easy to prepare for those who hardly eat vegetables. Children who are harmful in food will never recognize zucchini in their products (and most of them frankly do not like it).

We act simply:

  1. Three zucchini (if it is mature enough to clean the seeds) and potatoes in equal proportions.
  2. Three onions.
  3. We add.
