  2. Boiling water is added, about 30 - 50 g. Water is needed not only in order to dilute dry ingredients, but also in order to balance the taste of the drink. According to standards, it should be moderately sweet, with a touch of milk and chocolate.
  3. Cocoa and sugar should be ground in boiling water into a homogeneous mixture. If the ingredients are thoroughly mixed dry, there will be no problems. If there is a layer of cocoa powder left in the bowl, you will have to fight the lumps.
  4. Milk is heated separately. At a temperature of 50 ° C, inevitable and irreversible changes occur in it: protein albumin coagulates; calcium and phosphorus become hydrophobic; milk fat is saturated with the resulting solid compounds. As a result, a film forms on the surface of the milk, which becomes dense and spoils the appearance of the drink after it cools.In addition, most of the useful substances will pass into it, the composition of the product will become poorer.
  5. So that a film does not immediately form in the pan, the milk is whipped with a whisk, not allowing it to boil vigorously.
  6. The chocolate mass is injected into the milk in a thin stream, without stopping mixing the contents of the pan.
