Green borscht is a wonderful dish, spicy, hearty and healthy. So that at the dinner table there are no dissatisfied, it is important to know how to cook green borscht correctly. Sorrel is added to some of its variations, and nettle to others. It is worth considering the most popular and delicious recipes for this interesting first course.

Classic green sorrel soup

This summer soup is very light and tasty.

To cook a delicious chowder, you will need the following products:

  • chicken - 1 carcass;
  • onion - 1 head;
  • carrot - 1 pc.;
  • sorrel - 2 bunches;
  • potatoes - 4 tubers;
  • greens - 1 bunch;
  • spices and salt.

We start cooking:

  1. We cut the carcass and set it to cook. In the process of cooking, be sure to remove the foam that has appeared.
  2. An hour later, we lay a whole onion, salt and seasonings.
  3. Peel and chop potato tubers and carrots. We chop sorrel.
  4. We put vegetables in the broth, and as soon as they become soft, we add chopped sorrel and greens.
  5. After 15 minutes, turn off the stove and let the broth brew.

In the finished green cabbage soup, you can add sour cream and decorate the dish with half a boiled egg. Then his taste becomes much brighter, and the look is more appetizing.

How to cook without meat

Vegetarians or fasting people can cook green borscht without adding meat. It turns out very easy and useful.

First you need to prepare the ingredients:

  • water - 2 l;
  • carrot - 1 root crop;
  • onion - 1 head;
  • celery root - 1 pc.;
  • celery stalks - 2 pcs.;
  • sorrel - 3 beams.
  • garlic - 3 cloves;
  • salt - 2 tsp;
  • spices (thyme, lavrushka and fennel).

To properly prepare the first dish, you need to follow these steps:

  1. Cut prepared vegetables.
  2. Pour them with water and cook the broth.
  3. Cut the sorrel medium-sized, add greens to the soup.
  4. After 30 minutes add spices and salt.
  5. Cook the broth for another 15 minutes and turn off the heat.

If you want to cook more nutritious cabbage soup, then you can add porcini mushrooms to them.

Recipe for multicooker

For those who have a catastrophic lack of time for cooking, you can cook the first dish in a slow cooker. It will be enough just to prepare the products, and then the device will do everything on its own.

 

The list of required components includes:

  • beef - 0.4 kg;
  • meat broth - 2.5 l;
  • carrot - 1 pc.;
  • onion - 1 head;
  • potatoes - 3 tubers;
  • sorrel - 1.5 beams;
  • chicken eggs - 3 pcs.;
  • vegetable oil - 1 tbsp. l .;
  • greens, salt and any spices.

Step by step recipe:

  1. Grind the onion and carrot.
  2. We put the vegetables in the multicooker bowl, pour the oil and turn on the “Frying” program.
  3. Add the pieces of meat and fry them until a golden crust appears.
  4. Pour meat broth into the bowl and add chopped potatoes.
  5. Set the "Soup" mode.
  6. After 40 minutes, chop the sorrel and prepared greens, add them to the liquid and cook for another 20 minutes.

Separately, boil the eggs, cut them in half and add to each plate.

Based on Chicken Broth

There is another recipe for green borsch with sorrel and an egg.

To prepare it, you will need the following products:

  • chicken - 0.6 kg;
  • water - 2.5 l;
  • carrots - 1 pc.;
  • potatoes - 3 tubers;
  • sorrel - 50 g;
  • spinach - 50 g;
  • egg - 3 pcs.;
  • onion - 1 pc.;
  • fat cream - 100 ml;
  • spices.

Now you can start cooking:

  1. Cut the chicken, fill it with water and cook for an hour, not forgetting to remove the foam.
  2. Cut vegetables: potatoes - into bars, carrots - into strips.
  3. Add the whole onion and chopped vegetables to the broth and cook them until soft.
  4. Chop the sorrel with spinach, put them in a pan.
  5. Boil for another 5 minutes, after which pour raw eggs with cream into the broth, and also pour the prepared spices.

After 10 minutes, green cabbage soup will be ready, but they must be allowed to brew for 15 to 20 minutes.

Green cabbage soup with nettles

You can cook green cabbage soup according to an old recipe that our grandmothers used.

To do this, prepare:

  • fresh beef - 0.8 kg;
  • bulbs - 2 medium-sized;
  • carrot - 1 pc.;
  • potato tubers - 6 pcs.;
  • sorrel - 0.3 kg;
  • nettle - 0.1 kg;
  • allspice, salt and spices.

Step-by-step cooking process:

  1. Put the boiled meat. During cooking, remove the resulting foam (this can be done using a slotted spoon).
  2. After 1.5 hours, add salt and seasonings to the broth.
  3. Add one onion and carrot. Cook for another half hour, then add 3 whole potatoes to the soup.
  4. Cut the second onion and fry it in a pan.
  5. Cut the remaining potato tubers into pieces and send them to the meat.
  6. Rinse nettles and sorrel. To do this, they must be folded in a colander and doused with boiling water.
  7. Cut all the greens and send to cook.
  8. Remove the whole potato from the broth, mash it to a puree condition and return to the meat.
  9. It remains to make the fried onions and bring the broth to a boil. Boil another 20 minutes and turn it off.

Green cabbage soup should stand for about 15 minutes, after which they can be poured on plates, season with sour cream and serve.
