  • cilantro, basil, rosemary;
  • salt.

Cooking method:

  1. Put the beef and pork in whole pieces without slicing, so the meat remains juicy. You can put both types of meat together in a slow cooker, it will be faster. If you cook in a pan, then first of all boil the beef, and after an hour, put pork to it.
  2. Boil the tongue separately, then slice and fry in olive oil. As for the broth, it can be added to the pan to pork and beef as the liquid decreases.
  3. When the meat is cooked, cut it into pieces that are not small, but convenient for eating. Put boiled meat and fried tongue in one pan, fill with broth.
  4. It is advisable to cut carrots in small cubes, but you can also grind them on a grater. Onions - half rings.Sauté the vegetables until soft in a greased olive oil pan, add the tomato paste and continue to fry until its color turns orange.
  5. Peel the potato, cut into cubes.
  6. Place the pot with meat and broth on the stove. After boiling, put the potatoes, frying from carrots, onions and tomatoes, pour the brine from a jar of olives. Determine the degree of readiness for potatoes - it should become soft.
  7. Turn off the gas, put chopped greens in the pan, do not mix! Cover, let it brew for 10-15 minutes.

Before serving, place several olives, a slice of lemon, sour cream (mayonnaise) in a bowl with soup.

Smoked Soup Recipe

There are tons of recipes for making hodgepodge! One of the most delicious options is considered to be a soup with smoked meats. It can be prepared when there is no desire to spend a lot of time at the stove, but you want to eat faster.

It will be required:

  • raw smoked sausage - 100 g;
  • Cervelat sausage - 100 g;
  • a pair of smoked pork ribs;
  • a little boiled sausage for a change;
  • large carrot;
  • bulb;
  • a pair of potatoes;
  • tomato paste or ketchup without additives "Tomato";
  • salt and seasoning;
  • olives;
  • lemon;
  • sour cream;
  • fresh greens.

Cooking Instructions:

  1. Put the ribs on for 30-40 minutes, then separate the meat from the bone, chop, return to the broth.
  2. Chop the onion in half rings or even smaller, grate the carrots on a coarse grater, but slicing with cubes is more preferable. Send vegetables to fry until soft.
  3. Peel the sausages from the skins, cut the smoked and cervelat into strips, and the boiled - into cubes, send them to be fried to vegetables.
  4. As soon as the sausage begins to toast, it will have a blush, add tomato paste, fry until beautiful orange.
  5. Peel and chop the potatoes, send them to the pot with the broth. Next put the roast of smoked meats, drain the brine from olives. Cook until cooked.
  6. Remove the zest from the lemon, send it to the pot with soup, cover with a lid.

You can serve homemade meat hodgepodge 10-15 minutes after cooking. In each plate, put olives, lemon, sour cream, chopped fresh herbs.

Homemade hodgepodge with capers

You can cook a combined meat hodgepodge with potatoes, as described in previous recipes, or this vegetable. We suggest considering just such a recipe. Cook the soup with capers and add the pickle.

Structure:

  • 300 g of beef (preferably taken on the bone, so the broth will turn out to be more saturated);
  • half a kilo of any sausages (cooked and smoked sausage);
  • 200 g pickles;
  • three tablespoons of capers;
  • bulb;
  • carrot;
  • tomato paste;
  • lemon;
  • olives;
  • salt and greens;
  • sour cream or mayonnaise for serving.

How to cook a mixed meat hodgepodge? Stick to the following plan:

  1. Boil the beef for several hours to keep the meat soft.
  2. Fry chopped onions and carrots until soft, then add diced pickles. It is necessary to fry until the liquid boils away.
  3. Cut the sausages, as you like, send to fry the vegetables. Next, add the tomato paste, wait until it turns red.
  4. Cut the beef, put in a pan with broth (if cooked with a bone, then do not forget to strain), drain the brine from olives in the same place.
  5. Bring the base of the soup to a boil, put in the pan the contents of the pan (vegetables with sausage and tomato), capers. Bring to a boil, then cook for 10 minutes.

Cooking option in Ukrainian

This recipe in preparation is no more complicated than the previous ones. The soup is tasty, rich, but not suitable for everyone. For example, if you do not eat lard, then most likely you will not appreciate it. Everyone who likes fatter, we recommend preparing such a hodgepodge.

Ingredients:

  • a pound of pork;
  • 50 g of lard;
  • 300-400 g of any sausage;
  • a few pickles;
  • carrot;
  • onion;
  • 2 small potatoes;
  • tomato paste;
  • 2-3 cloves of garlic;
  • lemon;
  • canned olives;
  • salt and seasoning;
  • mayonnaise (sour cream).

Cooking method:

  1. Boil pork until tender, cool and chop.
  2. Cut the fat into small pieces, put in a pan, turn on a small fire, melt. Remove the greaves, put in a pan with broth and pork.
  3. In melted lard, you need to fry carrots with onions, chopped garlic, pickles. Next, add chopped sausage. As soon as the crust appears, put the tomato paste, fry until ginger.
  4. In a saucepan with broth and meat, put the fried vegetables and sausage, pour in the liquid from the olives, salt and season.
  5. Bring the soup to a boil, cook another 10 minutes.

Serve with lemon, olives, sour cream or mayonnaise.

Cooking with garlic donuts

With donuts, not only Ukrainian borsch is cooked. A very tasty hodgepodge is also obtained with them. A rich soup, fragrant donuts, flavored with garlic and butter, are just perfect for a family dinner. The male half will definitely appreciate.

Ingredients for Soup:

  • a pound of beef on the bone;
  • 200 g half-smoked sausage;
  • 100 g of cooked sausage or sausages;
  • 2-3 potatoes;
  • carrot;
  • onion;
  • olives;
  • a pair of medium tomatoes;
  • tomato paste;
  • sour cream or mayonnaise;
  • salt and seasoning.

For donuts:

  • 2 cups of wheat flour;
  • 1/2 whole grain flour;
  • 2 teaspoons of fast yeast;
  • some salt;
  • glass of water;
  • half a glass of sunflower oil;
  • 5-6 cloves of garlic;
  • dill.

Cooking hodgepodge soup:

  1. Boil the beef, strain the broth through a sieve, chop the meat.
  2. In a deep pan, first fry the onions and carrots, then add the sausage to them. When the frying begins to appear on the sausage, spread the chopped tomatoes, fry until the liquid is half as much, then add the tomato paste.
  3. Peel the potato, cut into cubes, send to a boiling broth, salt and season. Put the ingredients out of the pan there, drain the liquid from the olives.

During the preparation of soup, you need to do dumplings:

  1. Dissolve the salt in water.
  2. Mix the flour with yeast, add it in small portions to the water, stirring so that there are no lumps.
  3. Knead the dough, grease it with sunflower oil, cover, clean in a warm place to rise.
  4. Squeeze the garlic through a press, finely chop the dill, mix it all with sunflower oil - this is an impregnation for donuts.
  5. Roll some balls - dumplings from the dough, grease with impregnation, set for another 15-20 minutes to rise directly on the baking sheet.
  6. Next, preheat the oven to 180 degrees, grease the dumplings again with impregnation, set to bake. Cooking time is 30 minutes. Note that you need to grease the pampushki with garlic oil as they bake another 4-5 times.

Serve the hodgepodge with sour cream, olives and lemon. You need to eat with donuts instead of bread!

With smoked wings, brisket and ham

Another simple and popular recipe for home cooking is meat solyanka with cabbage. Here we propose using smoked chicken wings and brisket instead of fresh meat. Such a soup is cooked in literally 30 minutes.

The following components will be required:

  • a kilogram of smoked chicken wings;
  • 150 g smoked brisket;
  • 150 g of ham;
  • 200 g of white cabbage;
  • 3-4 medium potatoes;
  • carrot;
  • onion;
  • 4-5 pickles;
  • tomato paste;
  • olives;
  • lemon;
  • salt and seasoning;
  • mayonnaise / sour cream, fresh herbs (optional).

How to cook:

  1. Chop the cabbage like on ordinary cabbage soup, peel the potatoes and cut them into cubes.
  2. Put a pot of water on the fire, after boiling, put cabbage and potatoes in it, meat from wings, separated from bones, and brisket. Salt, add seasoning. Introduce the diced ham a little later.
  3. Fry the carrots and onions until soft, then add the chopped pickles. As soon as the excess liquid boils, put the tomato paste - a tablespoon will be enough.Fry until cooked with an orange roast.
  4. After boiling the ingredients in the pan, lay out the components of the soup from the pan, pour the marinade from the olives. Cook for 10-15 minutes (cabbage should be soft, but not boil).

Serve with lemon, olives, fresh herbs and sour cream (mayonnaise).

Meat solyanka with mushrooms

In this recipe, you can use both pickled and fresh mushrooms. But anyway cucumbers are not put, as they will kill the mushroom taste of soup.

Of the products required:

  • 300 g of beef on bone or pork (at your own discretion);
  • 200-300 g of different types of sausages or smoked chicken;
  • 300 g of fresh mushrooms or 150-200 pickled;
  • bulb;
  • carrot;
  • tomato paste;
  • olives;
  • lemon;
  • salt and seasoning;
  • sour cream / mayonnaise.

Cooking method:

  1. Put the beef to simmer for 3-4 hours over low heat. If necessary, remove the foam (this must be done when using any of the prescribed recipes). When ready, strain the broth through a sieve, chop the meat.
  2. If you use wild mushrooms, first boil (honey mushrooms 30 minutes, threshing mushrooms and mushrooms 10-15 minutes, butter - 10 minutes).
  3. Fry onions and carrots in a pan, add fresh mushrooms / boiled forest mushrooms / pickled mushrooms to them. Fry until tender, then put the tomato paste. Stir fry until cooked.
  4. Send mushrooms with vegetables to be cooked in a pan with meat together with chopped sausage or smoked chicken (you can use both at once).
  5. Let the soup simmer for another 10 minutes.

Serve as described in previous recipes.

Original recipe with kidneys in a multicooker

A slow cooker is a real helper in the kitchen. It saves time and energy spent on cooking. This miracle casserole will also help us in preparing a delicious hodgepodge with the addition of beef or pork kidneys.

Will be required for cooking:

  • 200 g of kidneys
  • 200 g pork tenderloin;
  • 200 g of any smoked or semi-smoked sausage;
  • 3-4 potatoes;
  • bulb;
  • large carrots;
  • tomato paste;
  • 1 large tomato;
  • 3 pickles (you can completely do without them if you add more lemon when serving);
  • olives;
  • salt and spices;
  • to serve sour cream or mayonnaise.

The process of cooking in a multicooker:

  1. Put the pork in the bowl of the multicooker, fill it with water, put it in the “Meat” mode. If you have a multicooker, pressure cooker, then the time will take no more than 30 minutes, and the meat will simply exfoliate and melt in your mouth.
  2. The kidneys need to be prepared in advance: soak in cold water for at least 3 hours, with clean water to be added every hour. Next, cut them into small pieces, fry in a greased pan.
  3. In another pan, fry the carrots with onions, then add the chopped sausage (you can not fry it, but the taste of smoked in the soup will be more pronounced), then add the tomato. After boiling the juice, put a spoonful of tomato paste, bring to readiness.
  4. Cut the potatoes into small cubes.
  5. Cool and grind the cooked meat. In the broth in the multicooker bowl, put all the other ingredients, set the “Soup” mode for 10 minutes.

It would seem that a simple soup is a hodgepodge, but it is worth starting to look for recipes, as there are many variations of this dish. Somewhere you need to add a pickle, in other recipes it is not there, there is a soup with cabbage, others say that cabbage soup will turn out like this!
