Do you like spicy Caucasian food? Then we will tell you how to cook lobio - a thick, slightly porridge-like bean stew. This is a well-known traditional Caucasian dish widespread in Georgian territory and in Abkhazia. Spicy, aromatic, incorporating a bouquet of herbs and original spices - this is a real celebration for connoisseurs of Caucasian cuisine. It is served with mamalyga (cornmeal porridge), meat or bread.

Classical Georgian Lobio

It is quite simple in composition, but satisfying, it is eaten as a snack and used as a side dish, it is ideal for fasting and vegetarians, as it gives the body vegetable protein.

Beans are used of the same type, mixing different varieties in one dish is not accepted. It is important to digest completely, sometimes it is even kneaded into porridge.

To make a real lobio according to the classic recipe of Georgian cooks, you will need:

  • dry red beans - 0.3 kg;
  • oil (olive is often common in recipes today, but authentic recipes provided for ordinary sunflower);
  • turnip onion - 2 pcs.;
  • a lot of greens, most often Georgian dishes are cooked with pleasant cilantro weed;
  • spices - salt, black pepper and ground coriander.

It takes 12 hours to place the beans in cold water. Then rinse it, remove debris, if any, dry it. In hot oil, lightly fry chili pepper and onions, sprinkle with coriander. We put everything in a saucepan, pour water and simmer for at least an hour, boiling the beans.

Lobio garnish with chopped cilantro and you can eat. As you can see, the classic recipe is simple, it does not have the usual garlic and nuts.

Tasty lobio with walnuts

This Georgian dish is known to most of us with chopped nuts.It is not difficult to do it, boiled beans are used, which is mixed with other ingredients.

 

Take a couple of onions in a glass of beans, a third of a glass of nuts, a little garlic, two tablespoons of vinegar (you can mix wine and balsamic in half, this will enhance the taste). Still need to fry the onion in oil.

Boil soaked beans until tender. Drain the broth, but do not pour it out, but set it aside.

While it is boiling, fry the onions, add to it a paste, grated from nuts, coriander, garlic, salt. Stir, simmer for 5-7 minutes over low heat. Transfer the boiled beans to a pan, mix, pour a little broth and vinegar. If necessary, slightly crush the beans. Sprinkle with cilantro.

With tomato paste

To cook lobio from beans with tomato, you need to take the following products:

  • 300 g of onions;
  • a glass of dry beans;
  • sunflower oil for frying;
  • greenery;
  • walnuts - half a cup or a little more, if desired;
  • a little chopped garlic;
  • tomato - pasta - one big spoon;
  • spices - hops-suneli, pepper and salt.

Soak beans, boil over low heat until soft. All water should not be drained, leave about two-thirds of the glass, so that the beans are slightly mashed and diluted to a mushy state.

Fry chopped onions in a pan, add finely chopped garlic or squeezed through the garlic, add to it, mix and put the beans. Warm up, add tomato paste or, if you cook in the summer, fresh tomatoes. Pour nuts and greens at the end. Served both hot and cold.

Usually red beans are used. But if desired, you can cook from a mixture of different varieties.

From red beans in a slow cooker

Any multicooker has a quenching mode - this is what you need to cook lobio in a multicooker. And so that the beans do not turn out to be ordinary bean porridge, do not skimp on spices!

Ingredients:

  • 250-300 g of beans;
  • 2 garlic cloves and a pair of onions;
  • spices - a little hops, you can add the finished Georgian adjika;
  • a small spoon of tomato paste;
  • some vegetable and butter;
  • a third of a glass of chopped nuts;
  • wine vinegar - a small spoon;
  • salt.

To save time, this dish can be prepared from canned red beans. Garlic, onion is added to it, everything is stewed and seasoned with spices. If it is prepared from dry beans, it is pre-soaked. Putting the crock-pot in the bowl, the beans are poured 2-3 cm higher with water, put out the stewing regime and hold for about an hour. In almost boiled beans, put onions, garlic, spices, oil, vinegar and nuts, tomato paste, or cooked adjika with tomato paste. Still stewed until half an hour ready.

When everything is ready, you can crush a little to a mushy state and sprinkle with finely chopped greens.

How to cook a Georgian dish with chicken

This method is interesting in that a little chicken meat is added to the dish, it turns out tasty, but the main role is assigned here, which is understandable, of dry red beans.

So, we take it to a glass:

  • 0.3 kg of chicken;
  • turnip onions;
  • half a liter of water;
  • a handful of chopped nuts;
  • three juicy ripe tomatoes;
  • spices, herbs (thyme, coriander, cloves);
  • some butter.

Beans are soaked and boiled separately. The chicken is also boiled and cut into small pieces. Tomatoes also cut into cubes. Fry the onion in oil, add chopped tomatoes at the end, stew. Put spices and herbs in this sauce, add nuts, then add boiled beans and stew a little. Serve with herbs.

White bean lobio in a pot

This dish is very tasty if you bake it in the oven in pots. And if there is not immediately, but after cooling, then the aroma of spices soaks into the beans and makes the dish even more organic.

You will need such products:

  • 1.5 tbsp. white beans;
  • 1 carrot and onion;
  • 2 tomatoes or a couple of tbsp. tablespoons of tomato paste;
  • a small spoonful of sugar, salt to taste;
  • 2 tbsp. tablespoons of vegetable oil;
  • a little garlic, sunli hops, greens.

Cooking like this.

  1. Put washed and soaked beans in a clean pot.
  2. Pour a little oil, half a glass of water, put in the oven for half an hour to make the beans soft. The pot needs to be covered with a lid or foil.
  3. Grind onions and carrots and fry in oil, add Art. a spoonful of flour.
  4. In half a liter of water we will dissolve the tomato paste and salt, add spices and sugar, combine with frying and simmer a little.
  5. Add everything to the pot and leave it for another half hour in the oven.
  6. While the lobio is still in the warm oven, chop the garlic, herbs and add them to the finished lobio.

From string beans

Georgians love and know how to cook green beans. An unusual and tasty lobio comes out of it.

We will prepare:

  • a kilogram of beans;
  • a couple of large onions;
  • a couple of good tomatoes;
  • 100 g finely chopped or crushed nuts;
  • a few cloves of fresh garlic;
  • some oil for frying onions, salt, spices.

The addition of fresh herbs is very important here, several types are usually used. To traditional Caucasian grass, for example, basil and cilantro, it is certainly advised to add a little mint.

Cooking like this.

  1. Wash the beans, cut off the ends and remove the hard vein. Cut into 3-4 parts. Boil in salted water.
  2. Chop the onion finely.
  3. Grind greens.
  4. Grind walnuts on a blender.
  5. Blanch the tomatoes, remove the juice and seeds with a spoon, cut into cubes.
  6. Fry onions, then tomatoes, stew everything for about 7 minutes, sprinkle with spices with garlic, put herbs. Fry everything for another five minutes, pour boiled beans. Stir, do not put out for long.
