Hummus - what is this dish

Many chefs ask themselves: what is hummus? This is an unusual oriental dish in the form of a thick paste.

Usually, various legumes become its basis. Oils, various spices, vegetables, nuts are added to them.

Ready pasta can be served as a “spread” on bread, flat cake, pita. It is tasty to use it as a sauce and even as a side dish for meat and fish.

How to make real hummus from chickpeas

Product Composition:

  • dry chickpeas - 300 - 320 g;
  • zira - 1 large pinch;
  • olive oil - 2 dessert spoons;
  • sesame seeds - 30 - 70 g (to taste);
  • lime / lemon juice - 5 - 6 dessert spoons;
  • garlic - 3 cloves;
  • salt.

Cooking:

  1. To make hummus out of chickpeas, you first need to fill in the beans with plenty of water and leave it for 15 hours.
  2. Drain the liquid. Further, if desired, remove or not peel the husk from chickpeas. In the first case, the dish will turn out to be especially tender with a smooth uniform consistency.
  3. Cook chickpeas for 2.5 hours. Do not salt! Drain the broth and save it.
  4. Heat the zira in a cast-iron skillet until light. Grind in a coffee grinder.
  5. Do the same with light sesame seeds. Its amount depends on the taste of the cook.
  6. Mix sesame powder with garlic, salt and olive oil in a blender bowl. Grind.
  7. Gradually begin to add chickpeas and decoction from it to the mass, interrupting each portion to the state of mashed potatoes. In the process, add salt to taste and pour in freshly squeezed citrus juice.
  8. Add zira and mix everything.

Put the treat in a beautiful bowl. In the center of mass, make a recess and fill it with olive oil. You can take aromatic, infused with herbs and / or garlic.

Homemade Pea Option

Product Composition:

  • peas (any) - 300 - 320 g;
  • sesame seeds - ½ st .;
  • lemon - 1 pc.;
  • olive oil - 5 - 7 dessert spoons;
  • water - 1 full glass;
  • salt, chopped chili, coriander and turmeric.

Cooking:

  1. The first step in making hummus according to this recipe is to soak the washed beans for 10 hours, and then cook until soft without salt.
  2. Fry sesame to a light beautiful creamy tint.
  3. To interrupt it with the help of any kitchen "assistant" with a small amount of lemon juice, oil and ice water.
  4. Mash boiled peas separately.
  5. Mix with the mass from the third step, spices and salt.
  6. Beat everything with a blender again.

If the consistency of the dish is not tender enough, this can be corrected with the help of a decoction remaining from peas.

Cooking Beans

Product Composition:

  • white beans - 280 - 300 g;
  • sesame seeds - 70 g;
  • olive oil - 2 dessert spoons;
  • soda - on the tip of a spoon;
  • Lavrushka - a couple of leaves;
  • salt, turmeric, dried chopped garlic.

Cooking:

  1. Legumes leave in water for 14 hours.
  2. Rinse, pour hot water with soda and cook until soft (about half an hour).
  3. Rinse the beans again. Boil another half hour already without soda, but in salt water with a lavrushka. Leave half a cup of broth for hummus.
  4. Puree soft beans. Remove the lavrushka first.
  5. Grind sesame seeds in a convenient way, mix with oil
  6. Add to it bean mass and all remaining prescription ingredients.
  7. Beat everything again, adding a decoction.

Arrange the treats in bowls.

Avocado Hummus

Product Composition:

  • cooked chickpeas - 180 - 200 g;
  • avocado - 1 pc.;
  • garlic - 1 clove;
  • olive oil - 4 dessert spoons;
  • lemon - half;
  • salt and chili powder.

Cooking:

  1. Beat boiled beans with garlic, butter, salt and chili.
  2. In an already homogeneous mass, start gradually adding slices of avocado pulp. Continue whipping the ingredients.
  3. Pour citrus juice to taste.
  4. Mix again.

Serve the resulting treat with tortillas and crisps of fresh vegetables.

Eggplant Recipe

Product Composition:

  • chickpeas - 1 full glass;
  • onion - half;
  • garlic - 5 cloves;
  • lemon - half;
  • olive oil - 4 dessert spoons;
  • eggplant (large) - half;
  • salt, paprika, curry.

Cooking:

  1. Cook the beans until cooked. Salt at the very end of the process.
  2. Chop the onion and garlic and fry in a small amount of olive oil until golden brown. In the process of browning, sprinkle vegetables with all the spices.
  3. Cut eggplant without skin into cubes and fry them with vegetables until soft.
  4. Kill the beans and beans with a blender. Add the remaining oil and citrus juice, strained from the seeds, add salt to it.
  5. Beat the ingredients until a smooth consistency is obtained. If necessary, add a decoction of chickpeas to them.

Serve aromatic thick mashed potatoes with freshly baked homemade cakes.

From lentils

Product Composition:

  • lentils - a full glass;
  • flour (sesame) - 3 tbsp. spoons;
  • olive oil - 4 tbsp. spoons;
  • lime juice - 2 tbsp. spoons;
  • garlic, salt, spices.

Cooking:

  1. Cook lentils until cooked. Part of the broth to leave.
  2. Crush the garlic with salt, mix with sesame flour and all remaining prescription ingredients.
  3. Grind the mixture with a submersible blender.
  4. Gradually add lentils and broth to it, continuing the process of whipping.

Garnish with mashed chili and whole sesame seeds.

Cooking in a slow cooker

Product Composition:

  • chickpeas - a glass;
  • sesame paste - 2 dessert spoons;
  • olive oil - 1 dessert spoon;
  • decoction of chickpeas - as necessary;
  • salt.

Cooking:

  1. Beans soak for 7 hours.
  2. Pour with new water and send to cook for 3 to 3.5 hours in the braising program. At the very end, salt.
  3. Mix chickpeas with sesame paste and butter. Beat with a blender in a separate bowl. In the process, add a decoction from the multicooker to obtain the desired consistency of hummus. It should turn out soft, gentle, smooth.

Serve with meat and vegetables.

Now it’s hard to say which of the recipes the same, real hummus allows to cook. But any of its variations turns out to be tasty and tender. Serving refreshments can even be a useful side dish for meat / fish / seafood.
