Kiev cake, homemade marshmallows, shortbread cookies on yolks, lemon kurd, meringues, custard protein, nougat - all these goodies are united by the fact that they do not include whole eggs, but only yolks or squirrels. There are several ways to separate the protein from the yolk, knowing them, it will be possible to cook not only the listed desserts, but also many other goodies.

How to quickly separate protein from yolk in the traditional way

It will not be difficult for a modern housewife to purchase one of the modern devices, which will help to easily separate the eggs into protein and yolk.

However, the reluctance to wash an additional device for separating 3-5 proteins has led to the fact that traditional methods used by our mothers and grandmothers still remain popular:

  1. Shell separation. This method requires confidence in their movements. The back of the knife makes a sharp blow to the center of the egg so that the shell breaks, but the yolk is not damaged. Then the egg is carefully poured from one half of the shell to the other above the container, into which the protein will flow during the manipulations, and the yolk will remain in the shell.If, according to the culinary recipe, not a drop of yolk is allowed in the protein, then the eggs should be separated one at a time, pouring the separated components into separate containers.
  2. Separation in the palm of your hand. If the egg is broken not in a bowl, but in the hand, and then gently squeeze the fingers, then the protein will leak through them, leaving a yolk in the palm of your hand.
  3. By freezing.If you need a lot of proteins, for example, to cook meringues for kendibar, then the eggs can be frozen by placing them in the freezer for several hours, then peel them and leave to thaw. After a while, the proteins will melt, but the yolks will not. Use the former as intended, and pack the latter into a bag and store in a freezer.

Using a plastic bottle

For this method, you only need a clean and dry plastic bottle and two containers (for proteins and yolks).

You need to proceed as follows:

  1. Drive an egg into a bowl or other container.
  2. Squeeze the sides of the plastic bottle, bring it as close to the yolk as possible and stop the pressure on the plastic.

After such simple actions, the yolk will draw the bottle inside, and it will only remain to be poured into another container.

Kitchen device - silicone pear

Instead of a regular plastic bottle, you can use a special device that works on the same principle - a silicone pear separator. The package bundle of this device is simple. It consists of a soft silicone bulb and a plastic nozzle (nose). The nose of the pear has a size exactly matching the diameter of the yolk.

It separates the yolks from the proteins in the same way as a bottle, but you need to act carefully, without sudden movements, so as not to damage the yolk. The main difference between this separator and a plastic bottle is that the bottle can be discarded after use and the pear must be washed.

To make proteins easier to separate from the yolks, the eggs must be fresh and chilled.

How to separate protein from yolk with a plastic cup

In order to separate the proteins using this method, in addition to a plastic cup and containers for proteins and yolks, you will also need an ordinary kitchen knife.

The algorithm of actions will be as follows:

  1. Gently heat the knife over the flame of the stove. Then melt them in the bottom of the cup a narrow (not more than 5 mm) crescent-shaped hole.
  2. In an disposable dish prepared in this way, beat an egg, and, holding it above the protein container, wait until all the transparent substance drains.
  3. Pour the yolk from the cup into another container.

Special device in the form of a strainer

It is easy to separate the yolk from the protein on a special strainer. This device may be in the form of a cup, plate or spoon with one or more slots, a crescent-shaped opening, or a strainer. As the material for the manufacture of the strainer, food plastic, metal or ceramic can be used.

The principle of operation of such devices is to allow the protein to drain freely through openings into another container. The hostess only needs to drive the egg into the separator and to speed up the process, tilt the strainer slightly from side to side.

But even in the absence of a plastic cup and a special strainer-separator, you can separate the yolks and squirrels, only having the usual plastic funnel in the kitchen without nicks and sharp edges, you can also easily separate the yolk from the protein. Just an egg is driven into a watering can and wait for the protein to pour through it.

How to carry out the procedure with quail eggs

The smaller the egg, the thinner and weaker the film that holds the yolk, so there is a high risk of damage to the yolk. This applies not only to chicken eggs, but also to quail. In this regard, the separation of quail eggs should be carried out very carefully.

To separate the protein of a quail egg from the yolk, a raw egg can be poured onto a special olive spoon with a hole in the middle or onto a fine-mesh tea strainer.

You can apply the “blowing” method by making a small hole in the shell and waiting for the protein to flow out and the yolk will remain inside. You can also drive the eggs into a bowl and extract the yolks from it with a small spoon.

Unused egg yolks or proteins can be stored in the refrigerator for several days, and frozen for longer storage.
